And also, I feel a very light, pleasant sourness + something that is difficult for me to describe (this is, apparently, the taste that rose petals give). Both the taste and the aftertaste are pleasant (I do not feel a sharp sugaryness, although at first the syrup seems very sweet). In general, the sweetness, though bright, but so ... delicate, or something.

I usually add syrup to ice cream. It does not add too bright aromatic or gustatory accent to the dessert, however, it is felt very well, and with it the taste is more interesting and unusual.

You should collect raw materials for jam in the early morning, before the dew has yet melted. Then the petals retain their taste better after processing. If the petals are colored, then it is better to choose the darkest ones, they have the most intense smell.

To extract the aroma from whole petals, you need to rinse them in cold water and soak them in freshly squeezed lemon juice for 2 days. For a more delicate structure of the jam, you can turn the washed petals through a meat grinder, then soaking is not required.

Delicate petals boil quickly, so it is important not to overexpose the jam on the stove. 40-50 minutes is enough. boiling over low heat in a little water (1 glass for 250-300 g of petals).

So that the flower petal jam does not lose its aroma and does not become sugared at home, you need to put it in a glass jar and pour 1 tbsp. l. cognac.

Cooking from rose petals, recipes

Thick rose petal jam
To make the jam as fragrant as possible, you need to take rose petals with the brightest color.
Rose petals - 400 g, granulated sugar - 1 kg, water - 1 glass, lemon -1/2 pcs.

Collect the rose petals, remove the debris, cut the white part at the base of the petal with scissors. Wash in cold water and spread in a thin layer on a paper towel, pat dry.
Put the petals in a saucepan, mix with 0.5 kg of sugar. Cover with paper and leave for 6 hours, so that the petals give juice.
Pour water into a saucepan, add the remaining sugar and stir. Turn on medium heat and cook, stirring constantly.
When it boils, keep on the stove for another 5 minutes. Cool to room temperature.

Repeat the procedure one more time. Then put the cooled jam on the fire again and add freshly squeezed juice of 1/2 lemon to it (you can replace it with 1 teaspoon of citric acid dissolved in 2 tablespoons of warm water). At this point, the color of the petals should be the brightest. Bring the jam to a boil and simmer for 25 minutes. over low heat. Arrange the finished thick jam in sterile jars and roll up.

For me, this syrup is the most fragrant aromatic. And what delicious biscuit cakes are obtained if they are soaked with this delicacy. Creams and butter dough are extremely tasty. And lemonade based on it has an interesting color and taste. But they can still be treated to treat diseases of the oral cavity : stomatitis, gingivitis, thrush in children, tonsillitis. Cooking method I:

1) First you need to stock up on pink rose petals. If a sufficient number of rose petals cannot be collected immediately, then you can collect them in parts. In order for the petals not to lose their aroma, you need to put them in plastic bags, tie them up and put them in the refrigerator.

2) When a sufficient number of rosebuds for jam is collected, we begin to pick off the petals from the buds. Then a bunch of ready-made petals need to be "propelled", separating them from unnecessary debris and put them in a basin.
