  1. Wash the cauliflower and disassemble it into medium-sized inflorescences. It needs to be boiled a little. Therefore, we collect water in a saucepan: choose a deep one so that all the cabbage fits. Lightly add some salt to the boiling water and toss in the cauliflower. Bring it all to a boil again and cook for literally two to three minutes. Using a slotted spoon, we take it out into a colander so that the excess liquid is glass. The main thing is not to digest cabbage. We will then bake it in the oven, so if we digest it, it will look like mashed potatoes (porridge). Do not pour out the water in which we boiled the cabbage - it will be useful to us a little later.
  2. We transfer the finished boiled cabbage to a baking sheet or into that container in which we will bake our dish in the oven.
  3. Now let's get started preparing for the minced meat. Cut the onion into small cubes. Finely chop the garlic with a knife, also in small cubes.
  4. We clean the bell pepper from seeds and core. Cut it into strips first, then chop it into cubes. The approximate size of the cubes should be the same as the sliced ​​onions.
  5. We take a frying pan, put it on the stove, pour in sunflower oil: about 2-3 tablespoons. We send our chopped and prepared vegetables. Fry over medium heat for about 2-3 minutes. Stir occasionally with a spatula. We make sure that the vegetables do not burn and take on a beautiful soft state.
  6. We send the minced meat prepared earlier to the pan. I use beef. But it can be replaced with any other meat that you like or have: chicken, pork, and even a rabbit. Mix it with vegetables. Add salt and pepper at this stage: everything to your liking.
  7. Simmer, stirring occasionally, for about 5-10 minutes. Do not cover with a lid. During this time, the minced meat should completely change its color. He will let some of his juice, and everything is already starting to smell very appetizing. Especially tasty aroma of garlic and beef (personally, I already salivate when we fry all this yummy).
  8. After the specified time, add tomato paste... If you don't have it, replace it with ketchup or tomato sauce... You can even take a home tomato juice... Just take not one tablespoon as a paste, but two or even three: since they contain less tomatoes. Stir and simmer for about 5 minutes.
  9. Now the time has come when we return to the water in which the cabbage inflorescences were boiled. Add a glass of cabbage broth somewhere in the pan. If you took not 200, but 300 grams of minced meat, add 250-300 milliliters. It is necessary that the dressing is not so thick. The resulting appetizing mass of minced meat and vegetables must be spread over the cauliflower. If you don't want to use the broth, replace it with plain water or broth if you have one.
  10. Now the baking sheet or form needs to be covered with foil. Fold down the edges so that everything fits snugly. We do this so that the cabbage does not dry out: since it is half ready.
  11. In the oven preheated to 180 * C, we send the dish to cook for 20-30 minutes. Then remove the foil and turn on the grill mode for a couple of minutes: brown it a little.

80 gr. hard cheese"Kostroma";

600 gr. combined minced meat;

50 gr. smoked bacon;

One egg;

Medium bow head;

Sunflower oil;

Ground paprika to taste.

Cooking method:

1. Carefully rinse the cabbage disassembled into separate inflorescences and dip in boiling water. Boil over low heat for up to three minutes, then transfer to a colander and leave to cool.

2. Chop the garlic and onion lightly, cut the bacon into cubes.

3. Heat the vegetable oil, dip the bacon into it and fry the slices well over medium heat. The bacon should be well browned and not burnt, so stir frequently during frying.

4. Add the onion, add lightly salt to it, fry until light golden brown. When the onion pieces start to turn amber, add a little sugar, literally a pinch.

5. Add garlic, fry everything together for less than a minute and remove from heat, cool.

6. Mix the cooled roast with the minced meat. Season with ground pepper, add paprika, lightly salt. Break the egg into the minced meat and knead thoroughly.

7. Lubricate the bottom and sides of the ovenproof dish with a lump of butter.

8. Form the minced meat into a ball and place in the prepared form. Gently insert the blanched cabbage inflorescences into the meat ball, trying to symmetrically distribute them over the surface. The result should be a piece that looks like a whole head of cabbage.

9. Add a little salt to the sour cream, mix and grease the dish well, sprinkle with paprika.

10. Place the dish in a preheated oven and leave to bake for 50 minutes at 180 degrees. Five minutes before cooking, sprinkle the "head" with finely grated cheese.

11. Let the finished dish stand on the table for a quarter of an hour, then carefully drain all the liquid from the mold and cut the "head of cabbage" into portions.

Cauliflower with meat - cooking tricks and tips

It will be much easier to disassemble the head of cabbage by inflorescences if you boil it at a moderate temperature for about five minutes. After that, no additional blanching is required.

Small pests often live in inflorescences. To get rid of them, fill the head of cabbage with a weak saline solution, and the living creatures will go away on their own.
