Nori under a fur coat. Vegan "Herring under a fur coat" - an original solution

Many people believe that vegetarians and vegans, who generally eat only plant-based foods, cannot get a full festive feast. Let's dispel this myth, because there are so many recipes for delicious dishes prepared without meat and in general animal products that a vegan festive table will look no less beautiful, and the dishes will be tasty and satisfying.
For example, it is a very satisfying and healthy dish, because beans are an irreplaceable source of vegetable protein, and even those who are far from vegetarianism will like it because the combination of tastes is so interesting in it. If you are not vegan, then you will certainly be interested.
In the Vegan Herring with a Fur Coat recipe, all the ingredients are very simple, except perhaps the nori leaves. Nori is seaweed, dried and pressed into thin sheets like paper. Nori are indispensable in the preparation of sushi, they are widely used in the preparation of many dishes of Japanese, Korean and Chinese cuisine. Please note that the nori leaf should be slightly softened with water when placed in a salad. Today there are so many exotic products on sale that nori, I think, will not be difficult to buy. As a last resort, if you cannot get nori, try replacing them with regular seaweed, which is certainly available everywhere, just remember to cut it into smaller pieces.

How to cook vegan herring under a fur coat.

1. First of all, you need to boil vegetables. Rinse them thoroughly under running water (preferably with a brush). Usually, all vegetables are boiled together, taking them out of the water as soon as they are ready, but I suggest another option. Even if you cook all the vegetables in their skins, the beets will inevitably color them. To prevent this from happening, I boil the beets in a saucepan, and put an aluminum colander on the pan, and potatoes and carrots are steamed in it under a lid. This, by the way, turns out to be much more useful. You can easily check the readiness of vegetables with a knife or fork.
2. Rinse the boiled vegetables with cold water and let them cool down, then peel them and rub them separately on a fine or medium grater.
3. Put a layer of grated potatoes on a dish, level it with a fork and cover with a layer of mayonnaise.
4. Spread the nori sheet with the second layer, moisten it with 1 tbsp. spoon of water so that it softens, and spread the diced pickles in an even layer. Lubricate with mayonnaise.
5. Again, lay the nori sheet, grease it with a second spoonful of water, and on it - a uniform layer of carrots. And again, grease with mayonnaise.
6. The last is a layer of beets, smeared with mayonnaise. The salad must be kept in the refrigerator for at least 2 hours, and before serving, decorate to your liking.

I decorate the Herring under a fur coat with neatly chopped onion rings, and in the center of each I spread a leaf of parsley and what remains of other salads: canned beans or peas, or a small cube of carrots. And for the New Year, for example, you can lay out a herringbone from dill sprigs. In general, turn on your imagination!

What is the New Year without a "fur coat"? I really love this salad for its lightness! Vegetarian fur coat with seaweed leaves absolutely no feeling of heaviness. Such a dish is easy to prepare and quite affordable. The only negative - they cooked it in the morning - they ate it until the evening, well, as a last resort - the next day, tk. "Mayonnaise" on sour cream in my recipe. Or you can season with another mayonnaise, purchased or made with milk without eggs or from aquafaba (vegan option).

If you love flaky salads, then here are some more simple options:

  1. with pickled mushrooms

And for a "fur coat" you will need medium-sized boiled vegetables (approximate amount):

  • 1 carrot;
  • 2-3 potatoes;
  • 2-3 dark beets;
  • you will also need about 100 g of seaweed;
  • 250 g or any other lean.

Put the potatoes grated on the same grater on top, smooth and put another layer of "mayonnaise" on top.

Now it's the turn of the beets - grate it, lay it out, level it.

And the last layer is "mayonnaise".

Salad "Herring under a fur coat" is a traditional festive salad, which is an obligatory attribute of any festive table. The history of the appearance of this dish is very interesting and has political overtones. As legend has it, in 1918, lettuce was able to unite two warring parties, namely the proletariat and the peasantry.

Vegetarian "Herring under a fur coat"

In one of the popular taverns of that time, representatives of different classes and political convictions often gathered at dinner, which inevitably led to violent disputes and fights. Tables flew, dishes beat, and defeated opponents were no longer able to pay the bill for lunch.

Aristarkh Prokoptsev, the cook of this inn, came up with an original solution to the problem. In one dish, he managed to combine the preferences of two warring parties: the herring, which the proletariat loves so much, and the carrots and potatoes that the land gives us - as an analogy with the peasantry. The mixture of these products was well seasoned with French mayonnaise sauce and served as a snack. Visitors to the inn approved the new dish and did not refuse to eat a plate or two of the new salad. Since the dish turned out to be very satisfying, the visitors were no longer drunk as before, which means they fought and argued less.

This story took place on New Year's Eve, so 1919 was greeted with a "salad of nations" in completely different political circles. It is not known how true this story is, but the idea of unification, just kindly fabulous, is what you need for the New Year.
