Then place the beans in the blender bowl. Fry peeled and finely chopped onions in a pan until light brown. Put the onions from the pan with the beans. Add squeezed chives of garlic, ground pepper and a little salt to them.

We form pies

Grind all ingredients of the filling until smooth with a blender. Now, according to the recipe for pies with beans, you need to return to the dough. The dough that has come up must be kneaded again and divided into ten identical parts. Form balls out of them and cover with foil again. Set them aside for another fifteen minutes. Cooking according to the recipe

The first thing to do is to make a soft and elastic dough for the bean patties. In a dish in which it will be convenient to knead the dough, pour in kefir and add soda. Stir and add sugar, vegetable oil, salt and eggs in turn. Beat with a blender, and then add the sifted flour in small portions and knead into a soft dough. Cover with a clean kitchen towel and let the cooked dough rest.

The next step is to prepare the filling for the bean sills. Open the cans of canned beans and put them in a colander. Peel and wash the purple onions and carrots. Then chop them, chop the onion, and grate the carrots. Pour some oil into a saucepan and place on the stove. After heating the oil, transfer the onions and carrots to a saucepan for frying.

Fry vegetables, stirring occasionally for about ten minutes. Add tomato paste to them. Stir and place canned beans on top. Sprinkle immediately with red pepper, salt and stir. Simmer for another five to seven minutes under the lid. If you wish, you can also add other spices to the filling at your discretion. Turn off the heat, transfer and grind the contents of the saucepan in a blender bowl. The filling for the pies is ready. But it must definitely cool down.

Next, you need to form pies from the prepared kefir dough and the bean filling. Cut a small piece from the dough, mold balls from it and roll it into a round cake with a rolling pin. Put the bean filling in the middle of the rolled circle. Connect the edges well, giving the pie a round shape. Put the finished pie on a cutting board and press lightly with your hand. Similarly, mold all the other pies. Put a frying pan with a thick bottom on the fire, pour oil into it and, after heating, fry all the cooked pies on both sides until a beautiful golden color. Place the fried bean pies on a large plate and serve with sour cream.

It was an attempt to make a lighter version of the Georgian Lobiani. Only in the Georgian version, the beans must be taken dry, and then boiled.
I strongly dislike boiled beans, so I decided to use canned beans.
The taste of freshly cooked beans with onions turned out to be amazing - exactly like fried mushrooms, you can't tell. Although later, in pies, the taste became different - more starchy.
But as a filling, this mixture showed itself from the bad side. Since it turned out to be quite liquid, the pies did not want to roll out into any, they burst from the slightest pressure. I only got used to the fifth pie to cope with this - I stopped rolling them with a rolling pin, and began to stretch them with my fingers - first along the edges, and then in the middle.
The pies taste pretty good. But next time I will still make ordinary plump pies with this filling - fried in oil or baked.
I absolutely did not like frying in a dry frying pan.

COMPOUND

50 ~ 70g butter for lubrication

OPARA

2 cups (500ml) water, 2 teaspoons of sugar, 50g flour, 7g dry yeast "Dr. Otker" or 5.5g dry yeast "SAF" or 25g live yeast

DOUGH

~ 450g flour, 50g vegetable oil, 1 ~ 1.5 tsp salt

FILLING

70 ~ 80g vegetable oil, 400g onion, 2 cans (400g each) beans, salt, pepper, if possible - utskho-suneli, ground coriander, thyme

Dough
Dissolve sugar, yeast and flour in warm water.




Leave until the mass increases by 2 ~ 3 times.




Dough
Pour flour and salt into a large bowl.
Pour in the dough and vegetable oil.
Knead a soft elastic dough, adding more flour if necessary.




Filling
Throw the beans in a colander, rinse with water and leave to drain while cooking the onions.




Chop the onion into large pieces.
Pour vegetable oil into a frying pan or cast iron, put onions, close with a tight lid and put the heat on slightly below medium.




Simmer the onions, stirring occasionally, until they turn translucent red, while remaining juicy and soft.
Slow quenching should take at least 30 minutes.




Drain the oil from the onion into a bowl.
Scroll the onions and beans into the same bowl through a meat grinder.




Add spices.
Stir until the mass becomes homogeneous.
Taste and add salt to taste.




Forming products
Divide the dough into 10 ~ 11 pieces of one weight.
Roll balls out of them.




Roll the balls into flat cakes.




Spread the filling on the cakes.




Gather the edges of the flatbread together to make a bag of dough with the filling inside.




Try to fix the seam as best as possible.




Frying products
Put the pan on medium heat. Do not add oil.
Flatten the round pie with your fingers a little.




Then roll it out with a rolling pin or stretch it with your hands.
The thinner and larger the pie, the better.




Place the pie in a skillet and fry until the underside is browned.
Turn over and fry the other side under the lid.
While one pie is being fried, prepare - stretch or roll out - the next one.
Put the finished pies in a pile on a dish, liberally smearing with butter.

If you skip this step, then the beans will cook for a very long time, and after eating them, there may be gas and other stomach problems. The fact is that during soaking in beans, chemical reactions occur, during which harmful compounds (antinutrients) are destroyed.

Are the beans infused? Great, drain the old water, pour fresh water, put it on the stove and bring it to a boil. The cooking time is 40-60 minutes, although it can be longer. Just take 1-3 beans from time to time for a sample. If they are soft, then the beans are ready, you can remove.

We add salt only at the very end, 10 minutes before the end of cooking. If added at the beginning, then, as practice shows, the cooking period is greatly increased. Someone adds soda, believing that it will help cook faster, but I personally did not notice anything like that. Maybe he added a little.

That's it, drain the water and let the beans cool. Now it can be stewed, crumpled and added anywhere.

Let's start cooking

  2. In the meantime, you need to mash the boiled beans with a crush until puree. You can use a blender for this. Add pepper and a couple of tablespoons of vegetable oil.
  3. Now put the fried vegetables in the beans (along with the butter) and mix well. The filling is ready.

1. For the filling, soak the beans in cold water for 6-8 hours, or overnight.

3. Drain the broth, if present, add oil and crush the beans into the puree. Then add sugar, honey and stir until smooth. Set the filling to cool at room temperature.

4. For the test, dissolve the yeast in lukewarm milk with the addition of 2 tbsp. tablespoons of sugar and let the mixture stand for 15 minutes, so that the yeast is completely dissolved.

5. Melt the butter in a water bath, adding a teaspoon of salt. If it's hot, refrigerate until warm.

6. Beat eggs at room temperature with the rest of the sugar until they become white foam.

7. Combine the yeast, butter and egg mixture and mix well.

8. Add the sifted flour in small portions and knead the dough. It is better to not sprinkle flour enough than sprinkle it. The dough should be soft, elastic and not sticky to your hands.

9. Put a lump of dough in a saucepan or deep bowl, cover with a towel and leave in a warm place to come up. The dough should double in size.
