To prepare them you will need the following ingredients according to the recipe:

  • 1 packet of baking powder;
  • 400 grams of premium flour;
  • half a teaspoon of regular salt;
  • 1-2 tablespoons sugar;
  • 120 grams of soft butter;
  • one large egg;
  • 200 milliliters of yogurt without fillers.

We will grease the surface of the baked goods with a mixture that includes one yolk and 25 milliliters of cow's milk.

Making these homemade buns is very simple:

  1. Sift the flour thoroughly, gradually add baking powder, sugar and salt, mix everything.
  2. Pre-freeze the butter, quickly grate it directly into the flour on the coarsest grater, mash with a fork or your hands, turning the mixture into coarse crumbs. Do this very quickly, otherwise the butter will melt from the heat of your hands. In addition, the temperature in the kitchen should not exceed 22 degrees.
  3. Place the crumbs on the table, make a high mound (cone). Make a small depression in the top center of the slide. Pour a portion of yogurt into the resulting hole, which must first be thoroughly mixed with a whisk until smooth with one egg.
  4. Now you need to combine the flour crumbs and yogurt together, first optimally combining them with your hands, after which you can knead with a spatula.
  5. Once again, sprinkle the table or board with flour, lay out the dough and shape it into a rectangle. Now fold the edges towards the center, forming an envelope. Roll out and repeat folding the edges of the rectangle again. The rolling pin and table should be dusted with flour.

  1. When the dough layer becomes sufficiently elastic and homogeneous, prepare small round molds with a diameter of up to 6 centimeters (you can use ordinary glasses or shot glasses). Using these molds, cut buns about 1-2 centimeters high from a layer of dough.
  2. The edges of the mold can be rolled in flour to help the dough cut out better. During the cutting process, try to keep the shape strictly perpendicular to the surface and not rotate it along its axis, otherwise the edges of the bun will stick together and the product will not rise in the oven.

  4. Line a baking sheet with parchment; you can additionally grease it with melted butter. Carefully arrange the buns, leaving about 2cm gaps between them.
  5. Now beat the egg yolk and milk, the mixture should be quite thick and homogeneous. Gently dip a silicone or regular brush into this mixture, brush the surface of each bun so that the liquid does not drip onto the baking sheet. Repeat the procedure with all your products.
  6. The oven needs to be preheated quite stylishly, the optimal temperature is 215 degrees. The buns are baked for no more than 15 minutes, so that they do not burn; you can place a baking sheet or other fireproof container with plain water on the bottom of the oven.

Baking with apples and sugar can be considered a classic of the genre - such products are often baked with cinnamon, vanilla or lemon zest, and are fragrant, juicy and very attractive in appearance. Today we offer a simple recipe with which you can make homemade curlicue buns with apples in the form of spirals.

The components you will need for this recipe are:

  • two eggs;
  • two and a half glasses of flour;
  • 1 glass of kefir or yogurt without toppings;
  • two tablespoons of refined oil;
  • 125 grams of sugar;
  • 50 grams of pressed yeast;
  • two bags of vanilla.

We will make these buns with filling - apples, sugar, cinnamon and raisins. Accordingly, take the following set of components:

  • half a glass of sugar;
  • three medium-sized apples without peel;
  • 1 tablespoon potato starch;
  • 50 grams of light raisins;
  • one level teaspoon of ground cinnamon;
  • 50 milliliters of water;
  • You will also need 1 beaten egg yolk to lubricate the surface of the products.

These cinnamon and apple buns are quite dense due to the large amount of filling, but very aromatic and juicy if you cook strictly according to the recipe:

  1. So let's start with the filling. For this we need to peel and core the apples and cut the pulp into small cubes. Heat a large frying pan with a thick bottom and place the apple slices in it. Stirring, heat well. As soon as the mixture with apples releases juice, you need to add a portion of sugar and stir well. After about 2 minutes, add starch through a strainer and quickly stir the apples. Warm the mixture for another minute and turn off the heat.
  2. You can steam the raisins in boiling water in advance, or you can pour them into hot apples so that they swell a little there. Add a handful of raisins to the hot apple mixture, mix vigorously and cover with a lid. Mix one teaspoon of sugar with cinnamon, add this mixture to the apples, mix and let it brew under the lid for another 15 minutes.
  3. While the filling with apples, sugar and cinnamon is infusing, make the dough. First, sift the flour into a deep bowl, combine with sugar, vanilla or vanilla sugar. Mash a batch of yeast with one tablespoon of sugar. If you use dry yeast, it must be added directly to the flour. When the yeast starts to foam, add the egg, kefir, and sunflower oil and mix.

The following ingredients will be required:

  • 15 grams of dry yeast from a bag;
  • whole grain flour – 300 grams;
  • 220 grams of premium flour;
  • two tablespoons of refined sunflower oil;
  • 300 milliliters of kefir of any fat content;
  • 80 grams of sesame seeds;
  • 1 teaspoon salt;
  • 1.5 teaspoons sugar;
  • 5 milliliters of vinegar;
  • 80 grams of flax seeds.

Preparation is quite simple, despite the rich component composition:

  1. Immediately mix both flours - white wheat and whole grain, sift through a sieve.
  2. Heat kefir to a temperature of 35 degrees, dissolve dry yeast in it. Add 50 grams of flour here, mix vigorously, cover with a towel and leave for 20 minutes for the dough to rise.
  3. Meanwhile, mix flax and sesame seeds and divide in half.
  4. Sift the remaining portion of flour, add to the dough, pour in vinegar, sunflower oil, sprinkle salt and half the seed mixture. Stir the mixture with a spoon, then let it rest for about 7 minutes.
  5. Now form neat oval buns. To do this, sprinkle the table with flour, or better yet, grease it with a small amount of sunflower oil.
  6. Cover a baking sheet with parchment; you can also grease it with sunflower oil and lightly dust it with flour.
  7. Now pour plain warm water into a deep bowl, pour a mixture of sesame and flax seeds into the plate.
  8. Take each bun in your hands, quickly dip it in water, then roll it several times in the seed mixture.
  9. Place the buns on a baking sheet, cover with a napkin and leave for half an hour to proof.
  10. Immediately turn on the oven at 200 degrees, carefully transfer the baking sheet there after 30 minutes, bake these whole grain buns for 10 minutes. It is advisable to turn on the convection function or place a container of water on the bottom of the oven to create steam.
