Banana cookies with nuts

This cookie recipe can be used as a base, it will make a lot of delicious and simple things. I took as a basis the recipe of Irina Chadeikina from her book "Pie Science for Beginners", she had just chopped cookies. Fantasizing, I added a banana and nuts - it turned out banana-nut cookies. Very fragrant and delicious!

If suddenly you buy a lot of bananas, and then you get bored with a couple in a fruit bowl, then this recipe is definitely for you. Because there is a delicious opportunity to recycle a lonely banana.

So, we peel the banana, do not forget to remove thin films along the entire length of the banana. We break the banana into several parts, put it in a bowl, sprinkle with about 1 tablespoon of sugar and knead it with a fork into a pulp. You should get a sweet banana puree.


To make the preparation of cookies as short as possible, use a food processor, then cook the dough in a matter of seconds.

So, in the bowl of the combine we put the remaining sugar, flour and butter. For this test, you do not need to first remove the butter from the refrigerator. Here, just the opposite - you need cold, fresh from the refrigerator, oil. I cut into small sticks to make it easier for the processor to distribute the oil throughout the mass.

Now we turn on the combine for literally two minutes. During this time, the mass will grind into an ordinary crumb. If you do not have a kitchen assistant, then you can easily turn flour and butter into crumbs with your hands: you just need to rub the dough between your fingers.


Now you need to add one chicken egg and banana puree to the crumbs. Here it is worth saying that if you decide to bake cookies without a banana, then along with the egg it is worth adding a little milk (1-2 tablespoons) to the dough. I did without milk, because I used banana juice as a liquid.

Knead the dough (I did it again in a food processor).


We take out the dough on the table, sprinkled with flour. All we need to do is roll the dough into a small sausage. My child took up this responsible business, so even in the photo you can see which sausage came out uneven. But believe me - this did not affect the resulting cookies.

I think you need to be careful with flour, it should not be very much, so long as the dough does not stick to the surface of the table.

The resulting sausage must be packed in cling film. Since the dough is more elastic and soft due to the content of banana puree, I wrapped it not only in cling film, but also in foil to keep its shape. Now send the dough to the cold. For this, a zero chamber in the refrigerator is suitable, just a shelf of the refrigerator, or the dough can even be taken outside if you are preparing cookies in the winter.

I know that some housewives send the dough to the freezer. I think it's a possibility, but I never do it myself. It seems to me that then the dough is cooled unevenly: the edges freeze much more than the middle. And this can then affect the shape of the future cookies. However, this may be just my speculation.

The dough should rest in the cold for about half an hour.


We take the dough out of the refrigerator, cut the sausage into slices about one centimeter thick. If you make sliced ​​​​biscuits without a banana, then the sausage from the dough will be easier to cut. If with a banana (or other fruits), then a little more difficult. In this case, just moisten a thin, sharp knife with water and cut - everything will work out.

A baking sheet can be greased with butter, sprinkled with flour and put cookies on it. I like to line the baking sheet with baking paper or even foil (this time there was no baking paper at hand, so aluminum foil was used). You can lay out the circles of dough and bake right away, but it seemed to me a bit boring, so I had to urgently come up with something. It turned out that there were hazelnuts in the kitchen cabinet, which had once been given to us as a gift. Therefore, we urgently take on them: we chop, we select the kernels of nuts. I arbitrarily crushed whole kernels by running a rolling pin over the nuts. I wanted the pieces to be different sizes.

The nuts can be pre-roasted. But it seems to me that pre-roasting is good when the nuts will be used as decoration or in the form of flour. Here I sprinkled raw nuts on the cookies and decided that everything would still be baked together. And so it happened.

We put the sheet in the oven, heated to 200 degrees. We will bake cookies for about 12-14 minutes (depending on the oven). During the baking process, my mugs lost their shape a little (again due to the banana), but they acquired the most banana flavor.

As soon as the cookies begin to blush, immediately take them out - they are ready!


A lot of cookies come out of such a small amount of products - I got a little more than 20 pieces.
