The basic dressing rule for any salad, not just Greek, is a three-to-one combination of oil and acid. And then you can add something for that extra flavor.

For example, we take three parts of olive oil and one part of some kind of acid. The acid can be lemon juice, soy sauce, balsamic vinegar, wine.

In this case, let's prepare a classic dressing with lemon juice.

Products:

  • Olive oil - 100 g
  • Lemon juice - 33 g
  • Oregano - 1 tsp
  • Salt and black pepper to taste.

If you do not want to weigh, then you can measure the amount of ingredients by eye using a jar.

  1. Pour three parts olive oil into a jar (to make it easier to measure).

2. Squeeze out one part of the lemon juice.

3. Add a small pinch of black pepper. And a good pinch of salt. Taste it - it should feel slightly salty.

I advise you to make the dressings for vegetable salads a little salty, because soon you will add them to the salad, and the vegetables are 80% water, so that the salt will dissolve, spread over the salad, and it will turn out perfectly.

4. Close the jar with a lid and shake well. That's all - our base sauce is ready, from which you can make different variations. In the case of Greek salad, add a little oregano to this sauce.

Mustard greek salad dressing at home

If you add a little mustard to the base sauce, then the dressing will take on a French flavor (especially if you add balsamic vinegar instead of lemon juice).

Products:

  • Olive oil - 100 g
  • Lemon juice - 33 g
  • Heaped teaspoon of Dijon mustard,
  • Oregano - 1 tsp
  • Salt and pepper to taste.

If you want to make a mustard dressing, it's very simple, take the base olive oil and lemon juice dressing (which we did above) and add a nice heap of Dijon mustard to it. Stir well.

The dressing is ready - you can pour it over the salad.

Just do not add too much dressing to the salad, because in this case the salad will become greasy, and the acid will provoke an excessive release of juice from the vegetables, and they will become "tired".

That is, about a third of this amount is quite enough.

Yogurt sauce

Take a basic dressing (described above) and add a heaping teaspoon of neutral yogurt. Mix well. The sauce is ready! Of course, you can make a yogurt-based sauce in general, but it won't be quite a sauce for a Greek salad.

Greek salad dressing with wine or balsamic vinegar

As I wrote above, you can use wine or balsamic vinegar as an acid in the dressing, replacing it with lemon juice. Here we use wine, but the same can be done with balsamic.

Products:

  • olive oil - 0.5 tbsp.,
  • wine or balsamic vinegar - 4 tablespoons,
  • basil - 1 tablespoon,
  • oregano - 1 tablespoon,
  • salt, pepper to taste
  1. Take half a cup of olive oil.

2. Add 4 tablespoons. wine or balsamic vinegar.

3. One tablespoon of dry basil.

4. One tablespoon of dried oregano.

5. Add some black pepper and a teaspoon of sea salt. Stir.

The sauce is ready.

You can squeeze some garlic through a garlic press (or add dry garlic) and add a little crumbled feta cheese.

Dressing with soy sauce

Soy sauce can also be used as an acidic component - also, in the ratio of oil to sauce 3: 1.

Products:

  • Olive oil - 100 g
  • Soy sauce - 33g,
  • Oregano - 1 tsp
  • Salt and pepper to taste.

Combine all ingredients and mix well.

These are just the basics, knowing which you can create your own sauces and get creative. That is, take oil and any acidic component in a 3 to 1 ratio and add various additives. You can add the usual ones such as yogurt, mustard, finely chopped herbs, honey, garlic, seasonings. Or you can give free rein to your imagination and use feta cheese, blueberry jam, etc.
