Step 1: Prepare the cabbage.

Rinse the cabbage and tear off the withered leaves from it. Also, do not forget to be sure to remove the stump from the head of cabbage. Divide the remaining cabbage in half and, placing each of the parts in turn on a cutting board, finely chop it into strips.
Pour the chopped cabbage leaves into a salad bowl, add a little salt, literally on the tip of a knife, and mix with your hands, gently kneading and squeezing the juice.

Step 2: Prepare the oranges.

Rinse both oranges thoroughly with warm running water. Now take one of the fruits first and use a knife to cut the zest from it along with the whitish skin so that one bare pulp remains in front of you. Cut the peeled fruit into thin slices, picking bones out of them along the way. Then cut the resulting circles into even smaller slices.
Now go back to the remaining orange. Divide it into halves and squeeze the juice out of each using a special device. If you do not have a juicer, you can do it by hand, but then the orange needs to be cut into slices, and then each of the slices must be cut in two places, without cutting to the zest. After such simple steps, it will be easier to squeeze the juice from the orange by hand.

Step 3: Prepare the greens.

Rinse the greens with warm water to make the parsley more aromatic. Shake off excess moisture from the leaves and cut them into small pieces; it is not necessary to grind and shred the greens into porridge very much.

Step 4: Prepare the dressing.

Pour the juice of one orange into a large enough bowl, then add wine or apple cider vinegar and olive oil to it. Use a fork to mix all these ingredients together to make the liquid more homogeneous.

Step 5: Mix the coleslaw with the orange.

Put slices of orange pulp, parsley and basil in a salad bowl with cabbage crushed with salt. If necessary, add more salt, and sprinkle everything with black pepper. Last but not least, pour in the specially prepared dressing and stir the salad thoroughly, after which it will be completely ready to serve.

Step 6: Serve the coleslaw with orange.

Cabbage salad with orange is not only tasty and original in itself, but will also help you to favorably emphasize your main hot dish, especially if it is made from poultry or fish. Therefore, do not hesitate to serve it both for your everyday lunch or dinner, and spoil your guests with it.
Bon Appetit!

The closer to New Year's holidays, the more often the delicious smell of juicy oranges hovers in the air. And it goes without saying that bright exotic fruits also do not bypass modern cuisine. Gone are the days when orange balls were only in fruit bowls! Nowadays, the use of oranges in cooking is much more extensive! And then, one of the December days of last year, I suddenly wanted to conduct one experiment, adding a little exoticism to the food that is familiar to all of us. As a result, on the dining table there was a dish with incredibly aromatic and amazingly delicious cabbage stewed with oranges! Unusual? Yes! But this dish is worth trying!

To cook stewed cabbage with oranges, you will need:

white cabbage - 1 kg
minced chicken - 500 g
oranges - 400 g
onions - 200 g
garlic - 2 cloves
caraway seeds - 1 tsp
sunflower oil
ground black pepper
salt

How to cook stewed cabbage with oranges:

1. Chop the white cabbage into thin strips using a sharp knife, a special grater or a food processor.
2. Peel the onions and garlic and chop finely.
3. Wash oranges thoroughly under running water. Dry one fruit with a paper towel. With a special knife or using a fine grater, carefully, without touching the white subcrustal layer, remove the zest from the prepared orange. The remaining oranges are simply peeled. Divide the fruit into separate slices, remove the thin skin from each slice. Cut the orange pulp into small cubes.
4. Put chopped onions and garlic in a cauldron or large saucepan with preheated sunflower oil. Stirring occasionally, fry the vegetables until half cooked.
5. Add minced meat, caraway seeds, black pepper and salt to the fried vegetables. Stir all the ingredients and continue to fry for another 5 minutes.
6. Put the orange zest in the cauldron, mix everything again and cook for another 5 minutes.
7. Transfer cabbage and oranges to a cauldron, mix with minced meat. Cover the food with a lid and cook (simmer) over low heat for 35-40 minutes.
8. When the cabbage is soft enough, turn off the heat under the cauldron and let the dish brew under the lid for 5-10 minutes.
9. Arrange the stewed cabbage with oranges in portioned plates and serve.

For the preparation of stewed cabbage according to this recipe, you can use not only chicken, but also any other minced meat at your discretion. I have tried the addition of mixed (pork + beef), and even minced turkey. In addition, you can stew cabbage with coarsely chopped meat (just cut tender chicken or lean pork into small pieces and stew with vegetables). Before serving, the food can be seasoned with sour cream (or natural yogurt). To make the stewed cabbage with oranges look even brighter and more appetizing, garnish each portion with lettuce leaves, cherry tomatoes and a sprig of fresh dill.
