Every day there are more fresh herbs on our table - here are two more recipes that will allow you to enjoy true spring tastes and master new national dishes, this time Vietnamese. These are spring rolls. In general, all Vietnamese pancakes - and there are many different types of them - are divided into two large groups: fried and fresh. We offer to prepare both fresh - rice paper rolls with herbs, pork and shrimps, and fried - with green onion filling.

The Chinese, who invented gunpowder, paper and many other useful things, are sure that they had a hand in the birth of pizza. In this story, of course, Marco Polo appears, who, during his stay in China, allegedly became so addicted to Chinese pancakes with green onions that, upon returning home, he tried to recreate his favorite dish with the help of an Italian chef.

The Italian failed to repeat the Chinese pancakes, but pizza was born. There is no point in seriously discussing this legend, since even the very fact of Marco Polo's stay in China by a number of historians is questioned, not to mention the fact that the word pizza is found in Italian chronicles two and a half centuries before his birth.

But it makes sense to try to make Chinese pancakes. A completely unexpected combination of sesame oil and chives, built into the ruddy dough, as well as an unusual flaky texture, which is slightly springy, make a meeting with these pancakes unforgettable. They are especially tasty if you eat them, dipping them alternately in soy, then in hot Thai sauce.

For 4-6 servings:

  • Sesame oil - 1 tbsp l.
  • Vegetable oil - 2 tbsp. l.

For the test:

  • Wheat flour - 2½ cups (360 g)
  • Water - 450 ml
  • Salt - 1 pinch

For filling:

  • Green chives - 1 bunch
  • Salt - 1 tsp
  1. For the dough, combine the flour and salt in a bowl and make a depression in the center. In a small saucepan, bring water to a boil, remove from heat and, when bubbles disappear, pour water into flour, stirring quickly with a wooden spatula. Let the mixture cool slightly, put on the table and knead the elastic dough with your hands. Cover it and let stand for 30 minutes.
  2. For the filling, combine the finely chopped onion and salt in a small bowl.
  3. Sprinkle flour on the table surface. Roll out the dough into a thick rope and cut into 12 pieces. To make a pancake, take a piece of dough and flatten it with your hands or a rolling pin into a thin rectangle. Brush the surface with sesame oil and sprinkle with a little salted onion.
  4. Roll a rectangle along the long side into a tight tube, slightly flatten it and roll it into a snail, tucking the edge of the tube and gluing it to the roll. Press on the snail with your palm and roll it with your fingers or a rolling pin to the desired thickness. Prepare all other pancakes in the same way.
  5. Heat a heavy-bottomed skillet over medium-high heat. Add vegetable oil, heat it and fry the pancakes on both sides until golden brown. Serve hot.

Vietnamese cuisine, unlike many other Asian cuisines, does not try to stun you with shock doses of exotic flavors. The secret of success is fresh ingredients (most of which are, oddly enough, available in Russia), moderate use of spices, and some sleight of hand. The latter, naturally, is achieved by exercise.

My favorite fresh pancakes, goi cuon, I learned to bake at Madame V's Cooking Class in Hoi An, Central Vietnam. Meeting this amazing woman gave me a lot in understanding Vietnamese cuisine.

Her full name is Trin Diem Wee. She started her career in the restaurant business as a girl, helping her mother in a restaurant on the market. Today, with four of the most famous restaurants in Hoi An, Madame V still considers going to the market the most important thing for Vietnamese cuisine.

Together with the chef of Madame V's Morning Glory restaurant, I learned to choose the herb of the same name on the market, which gave the name to the institution, and mastered many other tricks that you cannot read in the book. Like the one that the tastiest papaya is the ugliest in appearance.

When I asked Madame V what would be on the Morning Glory menu tomorrow, she replied without hesitation: "First you have to go to the market." The freshest seasonal fruits, vegetables, herbs; fish and seafood delivered by local fishermen at dawn is what defines the exact menu.

For 8 rolls:

  • Fresh herbs (basil, cilantro, lettuce, mint, soy sprouts) - 3 cups
  • Rice noodles - 200 g
  • Grilled pork - 16 slices or ham - 16 thin slices
  • Large boiled peeled shrimps - 12 pcs.
  • Green onion - 12 thin feathers 6 cm each
  • Rice paper - 8 sheets

For sweet and sour sauce:

  • Lime juice - 1 tbsp l.
  • Small white sugar - 1 tbsp. l.
  • Fish sauce us pla - 1.5 tsp.
  • Water - 3 tsp.
  • Garlic
  • Hot chili
  1. Cook the rice noodles and pour over with cold water.
  2. To make a pancake, place a sheet of rice paper on a flat surface and dampen it with a damp cloth.
  3. Place a handful of herbs on top of a leaf, some noodles on top, then 2 pieces of meat (or 2 slices of ham) and 3 halves of shrimp, pink side down.
  4. Roll the leaf like a pancake, towards the shrimp, adding a few green onion feathers at the last moment.
  5. For sweet and sour sauce, dissolve sugar in lime juice, add fish sauce, water and 1 tsp. chopped garlic and chili. Stir. Add a few rings of pepper and a few slices of garlic to the finished sauce.
  6. Serve the crêpes with sweet and sour sauce.

Everyone loves the fruits of culture, but not everyone can take good care of them. It's not just about planting seeds in the ground. Many agrotechnical activities are carried out. These include feeding and processing plants.

The hallmark of its use is that it does not remain in vegetables. The use is safe for the human body.

  • 1 g of boric acid;
  • 1 g of potassium permanganate;
  • 3 g of copper sulfate;
  • 100 g of urea;

Since this solution does not bring harm, it is processed every 1.5-2 weeks. It is much weaker than chemicals, but after processing with it, vegetables are eaten for 2-3 days.

The Chinese mixture for spraying cucumbers is used as a foliar dressing.

How to make a Chinese mixture?

Proper preparation is the key to a positive result. All points must be fulfilled:

  1. First of all, urea is diluted. To do this, you can take a little water, or half a bucket at once. Mix thoroughly with each other.
  2. Boric acid is diluted in a glass of water, the temperature of which is 75-85 ⁰С. After dilution, it is added to the urea with water.
  3. Potassium permanganate is added to the mixture. Mix until smooth.
  4. Pour copper sulfate into a 10-liter bucket, pour water, dilute. Add the mixture and mix thoroughly. As a result, add up to 10 liters.
  5. Poured into a sprayer, start processing, the resulting composition is not stored.

All cucumber stalks are sprayed without exception. Not missing a single one.

What is it used for?

Treatment of the plant against downy mildew, powdery mildew and late blight also helps to fight the mite, and reanimate plants that begin to turn yellow.

Top dressing for cucumbers

Each summer resident has his own well-established fertilizer application system. Only a novice vegetable grower finds it difficult to understand all the intricacies of the process. Sometimes, feeding on time helps to avoid serious consequences leading to the death of plants.

The very first feeding is carried out when the plant has produced 4-5 true leaves. Use mullein, 1 liter per 10 liters of water.

The dosage cannot be increased, since the plant will begin to form a powerful green mass, and will not bear fruit.

Feed the second time in 14-21 days. Diluted chicken droppings are used, 700 ml per 10 liters of water. In order not to burn the sensitive roots of plants, water around the bushes.

During the flowering period, one more top dressing is carried out. Take 200-300 g of wood ash and dilute with 10 liters of water. The mixture is poured under the root.

The season ends with top dressing during the fruiting period. 500 ml of chicken manure per 10 liters of water. In addition, complex fertilizers are used, which are mixed independently.

Fertilizer combination

The main condition is not to harm. To do this, you should know exactly what to mix with what, and what is categorically incompatible.

Lime, dolomite, chalk are not combined:

  • With urea.
  • Ammonium sulfate.
  • Ammonium nitrate.
  • Manure.
  • Bird droppings.
  • All types of superphosphate.
  • Potassium chloride, potassium salt.
  • Potassium sulfate.

Manure and poultry manure are not mixed with:

  • Ammonium sulfate.
  • Ammonium nitrate.

Other ways of feeding and processing the crop

Summer residents are advised to use a decoction of onion peel. This will require boiling water and 1 kg of husk. Insist 24-48 hours. After it is diluted in a ratio of 1: 5-8 parts. Using a boric acid solution, you can significantly increase the yield of any crop. To do this, take 2-3 g of the substance and dilute it with 10 liters of water. All plants are treated with the finished mixture during flowering.

Experienced vegetable growers advise using fish heads as top dressing. For this, a special infusion is prepared. 2-3 heads pour 10 liters of water, insist until foam forms on top. After that, 200 g of wood ash is added and allowed to stand for another 5 hours. Water the plants that have begun to dry out, have ceased to bloom and give ovaries with the resulting mixture. It is necessary to carefully remove all leaves without touching the points of growth and the top. The lashes are folded and pressed to the ground. After a while, sprouts will appear. After observing a little, they remove the weak, leaving 1 strongest. He will give new life to the old plant.

In order for plants to be less attacked by insects or diseases, proper care and agricultural technology are required. First of all, the plants on the plot or greenhouses are not placed too close. The optimal distance between bushes and rows should be calculated.

No need to overmoisten the soil. It is better to water more abundantly and less frequently. To preserve moisture, control pests, the soil is hilled or loosened after each watering. It is recommended to mulch the beds with plantings, this will save from the appearance of weeds, in the roots of which insects live that can destroy plants.

Better than any treatment, competent prevention works, taking the necessary measures will save you from crop loss.

Cucumbers should be regularly examined; when the first symptoms of any disease appear, fruits, leaves, stems, and even the entire plant are destroyed. By sacrificing one, the rest will be saved. All infected plant debris is buried deep in the ground or carried far beyond the site.

It is better to use folk remedies for the prevention and control of diseases, since they do not harm the human body.
