The recipe for this dish is from Spanish cuisine.

The recipe came with the name "Poor Man's Potatoes." Perhaps because there is no meat, but considering our prices, the dish is not even poor. The potatoes turn out very tasty, quite self-sufficient, but can also be served as a side dish. Try it! I recommend! I want to immediately make a reservation that this dish does not and cannot have an exact recipe. You can take everything according to your taste and availability.

Ingredients

  • potatoes – 5 medium tubers
  • 2 medium onions
  • 1 large bell pepper
  • 1-2 cloves of garlic
  • sweet ground paprika - about 2 tbsp. spoons
  • olive oil – 3 tbsp. spoons

How to cook potatoes with bell peppers

  1. Coarsely chop the potatoes and peppers. Cut the onion into large half rings. Finely chop the garlic. Next, heat the olive oil in a frying pan, add the onion and fry over high heat and stirring constantly for 1-2 minutes.
  2. Add the pepper and fry (also over high heat and stirring) for another 2-3 minutes.
  3. Add the potatoes and fry everything together for another 2-3 minutes.
  4. Salt and add paprika. Mix everything thoroughly again, reduce the heat, cover the pan with a lid and cook under the lid for about 20 minutes until the potatoes are fully cooked.
  5. Don't stir the potatoes anymore! At the very end, add chopped garlic, mix gently and you are ready to serve!

Potatoes with bell pepper

Ingredients:

  • onion – 2 pcs.;
  • olive oil – 3 tbsp. spoons;
  • potatoes – 5 pcs.;
  • bell pepper – 2 pcs.;
  • garlic – 2 cloves;
  • paprika – 2 tbsp. spoons;
  • spices.

Preparation

Peel the potatoes, wash them and cut them into medium-sized cubes. We process the bell pepper, wash it and chop it into squares. Chop the onion and garlic.

Now take a frying pan, pour olive oil into it, heat it and sauté the onion over high heat for about 1-2 minutes. Next, add the pepper and fry, stirring, for about 2-3 minutes. After this, lay out the potatoes, add salt to taste, mix, sprinkle the vegetables with ground paprika, cover the pan with a lid and cook for about 20 minutes, until tender. At the end of cooking, add the garlic, mix gently and serve with pepper.

Oven potatoes with pepper

Ingredients:

  • potatoes – 1 kg;
  • bell pepper – 1 pc.;
  • onion – 1 pc.;
  • dry white wine – 100 ml;
  • garlic – 3 cloves;
  • olive oil – 100 ml;
  • bay leaf – 2 pcs.;
  • ground paprika – 1 teaspoon;
  • spices.

Preparation

We peel and cut the vegetables: potatoes into thin slices, bell peppers into strips, onions into half rings, and squeeze the garlic through a press.

Pour a little butter into the baking dish and place it in layers, first of the potato mugs, then of the pepper and onion. Season each layer with salt, pepper and sprinkle with ground paprika and garlic. Add bay leaves and pour the remaining oil over everything. Next, carefully pour in the wine, a little water and bake the dish in the oven for about 1 hour at 200 degrees.

Potatoes with tomatoes and peppers

Peel the potatoes, cut into cubes and fry in a heated frying pan in vegetable oil. Then add the shredded cabbage and cook until it becomes soft. We clean the onions and carrots, chop them into half rings, process the peppers and chop them into cubes. Now add all the prepared vegetables to the potatoes and cabbage and simmer for about 10-15 minutes until soft. Then lay out the diced tomatoes, add salt to taste, pepper, garnish with basil, stir and add pepper until tender.

Sweet peppers are one of the healthiest vegetables, especially in winter, but not everyone likes them raw. It is much more pleasant to eat potatoes with bell peppers, other vegetables and even fried, stewed or baked meat. We will consider the three best cooking recipes, tested in practice, next. Every gourmet will find his favorite combination.

Fried potatoes with bell peppers and tomatoes

A fragrant, tasty, quick-to-prepare dish. When people talk about potatoes with bell peppers, they usually mean frying, so this recipe can be considered a classic. Everything will take about 25-30 minutes.

Ingredients:

  • potatoes – 5-6 pieces;
  • tomatoes – 2 pieces;
  • bell pepper – 2 pieces;
  • onions – 1 piece;
  • garlic – 2 cloves;
  • vegetable oil – 3 tablespoons;
  • butter – 2 tablespoons;
  • meat (sausage) – 100-200 grams (optional).
  • chopped greens - to taste;
  • salt, pepper - to taste.

Instead of tomatoes, you can use adjika or tomato paste to taste (add at the 5th stage of cooking). To make the potatoes more filling, add finely chopped sausage, ham or bacon along with sweet peppers.

1. Wash the potatoes, peel them, cut them into circles, strips or slices. Fill with cold water.

2. Peel the pepper from the core and seeds, cut the pulp into thin strips. Chop the onion into half rings. Pour boiling water over the tomatoes, remove the peel, and cut the tomato pulp into small pieces.

3. Heat a frying pan, add vegetable and butter. After 1 minute, add the potatoes (discard the water first). Fry over medium heat for 6-7 minutes, stirring occasionally.

4. Add onion to the pan. Cook (stirring) for a couple more minutes until the onion is soft.

5. Place meat or sausage (optional), bell pepper and tomatoes. Squeeze the garlic. Add salt, pepper and other spices. Fry until done.


6. Divide the finished fried potatoes with bell peppers into portions; you can sprinkle chopped herbs on top, for example, dill or parsley. Serve the dish hot. Pairs well with sour cream or mayonnaise sauces.

Stewed potatoes with bell pepper

Initially a vegetarian recipe, but can be a side dish for meat or chicken. Stewed potatoes look more beautiful with red peppers. Total cooking time is 25 minutes.

Ingredients for 4 servings:

  • bell pepper – 1 piece;
  • potatoes – 5-6 pieces;
  • onion – 1 piece;
  • garlic – 4 cloves;
  • butter – 50 grams;
  • water – the amount depends on the volume of the extinguishing container;
  • salt - to taste.

1. Peel potatoes and sweet peppers. Cut the potatoes into slices, bell pepper into thin strips. Divide the garlic into several pieces. Chop the onion into half rings.

2. Heat a frying pan with butter. Fry the onion and garlic until tender (until the onion turns golden). Transfer to a stewing container, such as a saucepan or other frying pan.

3. Fry potatoes with bell pepper in a frying pan until cooked. Add along with the oil to the onion and garlic.

4. Pour in water (it should completely cover the vegetables by 1-2 cm), add salt.

5. Cover with a lid and simmer over low heat for 10-15 minutes.


6. Add spices to taste to the finished stewed potatoes with bell peppers. Serve hot.

Baked potatoes with bell peppers and pork

The dish is suitable for a hearty dinner or for a holiday; it turns out very tender and aromatic. Baking time – 35-40 minutes.

Ingredients:

  • potatoes – 800 grams;
  • bell pepper – 500 grams;
  • pork – 300 grams;
  • onions – 2 pieces;
  • carrots – 2 pieces;
  • mayonnaise – 3 tablespoons;
  • sunflower oil or margarine - for greasing the mold;
  • salt, pepper, spices and seasonings - to taste.

1. Grease a heat-resistant glass mold (bottom and walls) with vegetable oil or margarine.

Attention! After laying each layer you need to add a little salt and pepper.

2. Cut the potatoes into circles, place half of the circles on the bottom of the mold, leave the other half for now.

3. Grind the meat into thin strips and place it in a second layer on top of the potatoes.

4. The third layer is onion, cut into cubes.

5. Remove the core and seeds from the sweet pepper. Cut the pulp into rings, then lay out half of the rings in a new layer.

6. Add carrots, cut into rings, on top of the pepper.

7. Then again bell peppers and potatoes (should be the first and last layer). If the workpiece turns out to be “hilly”, it’s okay; when baking, the dish will settle slightly.

8. Lubricate the workpiece with mayonnaise on top. For beauty, you can sprinkle with chopped sweet pepper (small cubes). Close the form with a lid.

9. Preheat the oven to 200°C, bake the potatoes with bell pepper for 35-40 minutes until cooked (the potato flesh will be easily pierced with a fork or knife).

Everyone knows that bell peppers contain a lot of vitamins. It is very useful in its raw form, but, alas, not everyone likes it that way, and most often children refuse raw bell pepper. You can find a way out of the situation, because there is a very tasty dish - baked potatoes with bell peppers. Its preparation time is approximately 35-40 minutes. During baking, both potatoes and peppers retain more beneficial properties than when fried or stewed. We will consider a hearty version of this dish - with meat, although you can make it completely vegetarian, simply by eliminating the excess.

Products:

Preparation. I use all the ingredients by eye, but the base of the dish should consist of peppers and potatoes. That's why we take more of them. To prepare, we need a heat-resistant glass mold. Lubricate it with vegetable oil or margarine.

We wash all vegetables under running water and peel them. Cut the potatoes into circles and place them on the bottom of the mold. Let's salt it and pepper it.

Cut the meat into strips and place the second layer on the potatoes.

Don’t forget to pepper and salt each layer. Next, add the finely diced onion.

Be sure to remove the core and seeds from the peppers and cut them into rings. Lay it in the next layer. Don't be greedy: the more pepper there is in the casserole, the tastier it will be. Cut the carrots into rings and place them on top of the peppers.

Don’t worry if everything turns out “sloppily”. The peppers will settle a little during the baking process.

Cover the top with potatoes and grease with a little mayonnaise. For beauty, you can sprinkle finely chopped pepper on top.

Close the pan with a lid and bake in the oven for about 35-40 minutes at 200 degrees.

We check readiness after 35 minutes based on the condition of the potatoes. It tastes very tender in this dish.

This dish can be prepared both for a holiday and for a weekday dinner.

When preparing this dish you will need fresh bell peppers. Color does not matter. But it is desirable that it be a fleshy fruit with thick pulp. Frozen peppers are acceptable for use, but they will not provide the full taste, aroma and density.

Instead of ghee, you can use any other butter.

In potatoes with pepper, aromatic spices can reveal their charm in all their glory. Be sure to use your favorite set. Ground black pepper, curry, ground paprika, and a little asafoetida are perfect.

Bell peppers and potatoes must be thoroughly washed. Potatoes need to be peeled and cut into small cubes. Remove the seeds from the pepper and cut the pulp into small squares.

Heat melted butter in a frying pan, add spices and warm them slightly. Add chopped potatoes. Fry it lightly.

Add sweet pepper to potatoes.

Stirring frequently, fry the vegetables until lightly browned. Then reduce the heat, add salt, stir again and cover the pan with a lid. Simmer until the potatoes are fully cooked and the bell pepper is soft.

The ideal option is to serve the potatoes with peppers immediately after cooking, adding some fresh herbs to taste.
