Step by step recipe

  1. Pour 500 ml of water into a bowl.
  2. Add 0.5 tsp. salt and 3/4 tsp. vinegar. Stir.

  3. Now add 4 cups of sifted flour and knead the dough.

  4. Pour 0.5 cups of flour onto a work surface and place the dough on top of it. Knead the dough until it stops sticking to your hands. The dough should absorb these 0.5 cups of flour and be soft enough.

  5. Cover the dough with a bowl and set aside for a while.


    Knead it occasionally to make it more elastic.
  6. Knead a bun out of dough, press it down a little and cut in four places. It looks like a clover leaf in shape.

  7. Pull back the edges and roll them out with a rolling pin. Then roll out the middle as well. You will get an "envelope" for butter.
  8. Put 500 g of butter in the center of the envelope. Spread it evenly throughout the middle of the dough.
  9. Gently fold the edges of the dough to form a square. The butter should be completely hidden by the dough. Otherwise, some of the oil will be squeezed out during rolling.
  10. Knead the dough with your hands to form a rectangle. Now roll it out with a rolling pin.
  11. Fold the dough four times and refrigerate for 30 minutes.
  12. After half an hour, take out the dough and gently roll it out to its original size.
  13. Fold the dough again by folding it 4 times. Put it in the refrigerator for 20 minutes.
  14. Roll out again, fold 4 times and refrigerate for 10 minutes.
  15. Roll out the dough quite thinly, about 2-3 mm thick. Now you can cook from it.
  16. Cut the rolled dough into small triangles.
  17. Place a spoonful of jam on the wide side of the triangle.


    Wrap it in a roll, starting at the widest part.

  18. Dip the bagel in sugar and place on a baking sheet.

    1 dough:
    sour cream - 200g
    flour - 200g
    baking powder - 0.5 tsp.
    2 dough:
    butter - 200g (room temperature)

    5. When the oven warms up (not earlier!), Put the stuffed products in it for 30 minutes. Whisk the eggs and milk in a small bowl while they are baking. After the specified time has elapsed, grease the bagels with this mixture and again send them to the oven for another 15-20 minutes, but at a temperature of 200 degrees.

    It is recommended to cool the finished bagels to room temperature before serving. Professionals advise to supplement the baked goods with decor made of chocolate threads: for this, it is necessary to warm the broken chocolate with butter in a water bath, then pour hot baked goods from a coffee spoon and let it freeze.     Delicate pastries with apples and marmalade

    For less liquid fillings, experts recommend using a non-yeast version of the dough. In the absence of time and / or desire to knead it yourself, you can purchase ready-made layers. For the specified amount of ingredients, 3 standard layers are required, which is equal to 500-500 g.     Composition:

    • Wheat flour - 400 g
    • Butter - 300 g
    • Water - 170 ml

Cover with the free edges of the dough, roll out a rectangle with a rolling pin. Fold to center 2 times, roll again. And fold and roll one last time to the original (1.5 cm) thickness.
    • Chill the layer in the refrigerator for 4-5 hours, during which you need to make the filling. Peel and chop apples, put in a pan, warm. Add brown sugar, simmer over low heat, covered for 30-40 minutes, turning into a uniform mass. At the end, add the jam and another 2-3 minutes. darken.
    • Place the chilled dough on a board, cut into triangles (do not roll out so as not to become too thin). Put the filling in the center of each, closer to the base, and then twist the triangle in a semicircle.

    Bake in a hot (180 degrees) oven for 45-50 minutes, monitoring the surface condition: as soon as it becomes dark, turn off the oven and leave the baking in it for another 5-10 minutes.
