The other day in the store I saw corn flour, which is a rarity in our country, mostly only wheat flour is on sale, sometimes whole grain and rye is found. Therefore, I immediately bought and decided to cook the first of this flour exactly pancakes. You need a minimum of products.

First, I sift wheat, corn flour and baking powder into a bowl.

Ingredients:

Corn flour - 50 gr.

- baking powder (or soda slaked with lemon juice)
- salt - 1/2 tsp
- vanillin, other spices - to taste

Since we will cook without oil, we will definitely need a frying pan with non-stick coating.

There is nothing unusual in the list of ingredients, all the "salt" is in the process of making the dough itself, so be careful.

Preparation:

1. Separate the whites from the yolks. We place the proteins in a clean, dry glass dish (this is important - make sure that there is no water or fat on the walls, otherwise the proteins will not beat up to the splendor we need), add salt, sugar and beat at high speed until a strong increase in volume and the appearance of peaks (you shouldn't "interrupt" the squirrels). We set the proteins aside.

2. Lightly beat the yolks with yogurt, gradually adding baking powder, vanillin, spices, fiber and sifted flour.

3. Then, very carefully, we begin to introduce the protein mass into the dough (with a spoon or a silicone spatula with wide, sweeping, but at the same time light movements from bottom to top, as if intervening). The dough should turn out to be airy in consistency, light and not very liquid, but similar to the dough for pancakes. If the dough is thin, add a little flour.

4. Preheat the pan and spoon out the dough (usually 2-2.5 tbsp per 1 pancake) and slightly flatten, giving the shape of a circle. It is not necessary to make a large diameter, because pancakes we should get fluffy, plump. The dough self-evens a little in a hot frying pan, but if it starts to spread strongly, then the consistency is wrong, too liquid and you need to add flour. When the surface of the dough is evenly covered with holes, it's time to turn it over.

Serve with yogurt, honey, various syrups, fresh berries, condensed milk (my favorite summer option is condensed milk + strawberries or raspberries).

Ingredients:

If you don't have oatmeal and corn flour, you just make it yourself, grind ordinary oatmeal and corn grits in a blender.

  • cocoa powder - 1 tablespoon,
  • sweetener "Stevia" - to taste,
  • baking powder for flour - 1 tsp,
  • chicken egg - 2 pcs.,
  • low-fat milk - 14 tablespoons (120 ml.),
  • any honey - to taste,
  • fresh raspberries or any other berry,
  • bitter chocolate

Preparation:

- break eggs into a cup, pour milk and add sweetener to taste, having previously turned it into powder (if you have it in tablets). Mix ingredients and whisk lightly with a whisk or fork

- mix and sift oat and corn flour, baking powder and cocoa powder

- combine the resulting flour with the egg-milk mixture, simultaneously pouring in and stirring the mass with a whisk. You should get a homogeneous (no lumps) mixture, similar in consistency to the dough mixed for pancakes.
