To prepare the sole in batter, we need

Ingredients:

  • Fish fillet (sole, pangasius or any other fillet) - 3 pcs. this is about 900 g,
  • Mayonnaise - 200 ml,
  • Eggs - 4 pcs.,
  • Flour 4-5 tbsp. l. with a slide,
  • Salt,
  • Ground black pepper,
  • Vegetable oil for frying fish.

Cooking process:

Such fish in batter is prepared very quickly, and is also quickly eaten. So let's get started.

If the fish is still in ice (ice glaze), then immediately put it to defrost. When the fillet has melted, we put it on the desktop, immediately cut it across into strips. Each piece should be about 2 cm thick.

Add a little salt on top and season well with freshly ground black pepper. We let the sole soak in salt and pepper, in the meantime we are preparing the batter for the fish. Beat eggs in a deep bowl, add mayonnaise and start adding flour. Knead the batter with a whisk until the consistency of thick sour cream. The batter on mayonnaise, when dipping fish pieces, should linger well on the fillet, not drain.

Heat in a large frying pan vegetable oil and we begin to fry the sole in batter. You will need two forks. We hold a piece of fish with one fork, dip it in batter. The second is helping to remove deep-fried fish in a frying pan. So we cook all the fish. This will make 2-3 pans.

Fry the sole until golden golden brown on both sides for about 2 minutes. This time is quite enough, the fish in batter is fried very quickly.

Please note that if the batter drains heavily from the fish fillet, then you need to add a little more flour to the batter. Knead it again and then cook the fish according to the above recipe.
