It is very simple and delicious. homemade baking, with the preparation of which anyone can handle. The recipe for the cake is proven, so you can safely cook and pamper your loved ones!

For the dough, use any kind of wheat flour, butter - at least 72% fat (forget about spreads and margarines forever!). The fat content of the cottage cheese does not play a special role - I took 5%. Fresh strawberries are ideal for pie, preferably in the same size. With frozen berries, baking will also work, just do not forget to put the strawberries on a sieve after defrosting to remove the juice.

Add cold (I would say ice cold) butter (130 grams), which we cut into smaller pieces or rub on a coarse grater. You can put the oil in the freezer in advance for a couple of hours.


Finally, pour 120 grams of granulated sugar into the bowl. In general, I should note that the order in which the products are laid is not of fundamental importance.


We mix everything quickly and quickly to get small crumbs - everything happens in a combine in a matter of seconds. In texture, such a crumb resembles wet sand. If you use your hands to make loose dough, rub everything between your palms. For now, put the dough in the refrigerator and turn on the oven to warm up (180 degrees).


For the filling, you need to combine 200 grams of cottage cheese, 50 grams of granulated sugar, 1 egg and a tablespoon vanilla sugar... The last ingredient serves as a flavoring, so it can be replaced with 1 tablespoon of granulated sugar mixed with a pinch of vanillin.


We punch everything in a blender until a homogeneous flowing mass is formed. By consistency curd filling resembles low-fat sour cream.


We take a baking dish (I have a square, 20x20 cm). Pour half of the flour crumbs into it, level it.



We sort out my berries in advance. To do this, we collect cold water in a large container, put strawberries in it and let it swim for a minute - this way the sand will sink to the bottom. Gently mix the berries with your hands, then take them out and transfer them to a colander or sieve, removing the stalks. Strawberry weight (300 grams) is indicated already prepared. Be sure to dry the berries thoroughly (preferably with napkins or paper towels), as excess moisture in the filling is not needed. Put the berries in the next layer, slightly sinking them into the curd filling.

Let's start by making the dough. To do this, place soft butter in a bowl and add sugar and salt, beat with a whisk.

Put soft cottage cheese, plain and vanilla sugar, starch and sour cream in a blender bowl.

Purée the strawberries with the hand blender.

Add starch to the strawberry puree and stir thoroughly so that there are no lumps.

Put the mass on fire and cook until thickened. The mass must remain pouring.

Remove the dough from the refrigerator, roll it to the size of the mold (mine is 24 cm), make sides 4 cm high. Pour the curd filling onto the dough. Then gently pour the strawberry mousse over the top.

Preheat the oven to 180 degrees and bake the pie for 50-55 minutes. The cake must be completely cooled in the form, then put in the refrigerator for several hours or overnight.

Strawberry mousse curd cake is delicious! Cut it into portions with a sharp knife and serve.

Add cottage cheese (it is better to wipe it first through a sieve) and beat on until smooth.
Now pour in the eggs and stir well with a mixer.
Add the sifted flour and baking powder. Mix everything well until smooth.
Pour the dough into a mold.

Filling:
Rinse the berries, transfer to a sieve, let the water drain. Place 400 g of berries on the surface of the dough. During the baking process, the dough will rise and the berries will be in the middle of the cake.

Bakery products:
In the first step, bake at 170 degrees for 20-30 minutes until golden crust... Readiness can be checked with a toothpick - it must remain dry.
While the cake is baking, prepare the remaining berries for the second step. Cut them into thin slices along the berries.
Remove the cake from the oven and let cool slightly. Switch the oven to the "grill" (or top heating) mode.
Arrange strawberry slices, sprinkle with icing sugar. Send the pie under the "grill" for a few minutes, so that the berries are slightly baked.
Remove the cake from the oven and let it cool down.

Serve lukewarm or completely chilled. Have a nice tea J

Fragrant the most delicate pie with cottage cheese and strawberries today is no longer an exclusively summer dish. Finding frozen berries in the supermarket even in winter will not be a problem. For some baking options, even jelly or strawberry jam will work.

There is a minimum of flour in this recipe. Therefore, it turns out to be especially tender and soft. Ingredients: 370 g of cottage cheese, 120 g of berries, 20 g of butter, lemon, 3 table eggs, 95 g of high-grade flour, 80 g of honey.

  1. Each egg is divided into main parts. Proteins are processed by a mixer separately until peaks (stable).
  2. The yolks are simply mixed with citrus zest, cottage cheese and liquid honey. If it is sugar-coated, the product can be melted in a water bath. Flour is sifted to the same components.
  3. After combining the mass from the first and second steps, pieces of strawberry are poured into the dough.
  4. The treat is baked in a greased form, 45 minutes.

It is also allowed to use a multicooker with a baking mode.

Puff pastry

In order not to mess with flour and eggs, it is worth using ready dough... Take a pound of puff product. The rest of the ingredients: 190 g of sugar sand, 360 g of fresh strawberries, a large spoonful of powdered sugar, 2 tablespoons eggs, 210 g of soft cottage cheese.

  1. Thinly rolled dough (2/3 parts) is laid out on oiled parchment. The filling of cottage cheese whipped with a blender with 1 egg and sugar is evenly distributed on top. On top of it, halves of berries are laid out.
  2. The remains of the dough are cut into thin strips. They are used to decorate the future cake. The strips are also sprinkled with sugar and smeared with the remaining egg (beaten).
  3. The treat is baked for 35 minutes at medium temperature.

The resulting delicacy is generously sprinkled with powdered sugar.

Shortcake with strawberries and cottage cheese

The dough turns out to be the simplest, but at the same time crispy and tasty. Ingredients: 160 g of sugar sand, 180 g of high-grade flour, an egg, a small spoonful of baking powder, a large spoonful of starch, 220 g of hard elastic strawberries, 230 g of soft cottage cheese, vanilla sugar.

  1. For sand crumbs, all bulk ingredients, except for starch, and melted butter are combined. Only 90 g is taken from sugar. The mass is kneaded by hand, after which half of it is poured into a baking dish covered with parchment.
  2. For the filling, the remaining sand, homogeneous curd, egg, and starch are combined. The mass is whipped with an immersion blender.
  3. The curd filling is laid out on the base. Halves of berries are scattered in a chaotic manner.
  4. The remaining mass is distributed from above.
  5. Prepare a shortcrust cake in a hot oven for 45 minutes.

Jellied delicacy on kefir

Both fresh and frozen berries are suitable for the filling. They need to take about 200 g. The remaining ingredients: 170 ml of fatty kefir, 260 g of cottage cheese, 160 g of sugar sand, ½ a spoonful of salt, 3 tablespoons of eggs, juice of half a lemon, a bag of baking powder, half a kilo of high-grade flour.

  1. All components are connected in the order indicated in the recipe. Beat them with a mixer at a slow speed until smooth.
  2. The washed berries are laid out on an oiled baking sheet.
  3. All the dough is poured from above.
  4. The delicacy will be baked at 180 degrees for about an hour.

If you choose a multicooker for cooking, then the baking mode is set for 55 minutes.

With strawberry jelly no bake

If there is no way to tinker with the oven, you should choose the option of treating without baking. Ingredients: 230 g shortbread cookies, half a packet of good butter, 380 g low-fat cottage cheese, 1 tbsp. granulated sugar, 620 g strawberries, 35 g gelatin, 420 g low-fat sour cream.

  1. For the base, the cookie crumb is combined with liquid butter. The combined components are laid out in a suitable container covered with parchment.
  2. 20 g of gelatin soaked in 90 ml cold water. The liquid must be taken boiled.
  3. Half a glass of sugar, all the strawberries and cottage cheese are whipped with a blender.
  4. Next, the gelatin is heated and poured into the berries. The mass is whipped.
  5. A curd-berry mixture is poured onto the cake.
  6. Filling is prepared from sour cream, the remaining gelatin and sugar. The products are whipped and poured onto the already frozen top layer of the treat.

Such a cake with cottage cheese is served to the table after all layers have cooled and solidified. Together if desired fresh berries you can take strawberries from jam.

With cottage cheese and frozen strawberries

The frozen berry is first thawed when room temperature... All the juice is drained from it. Strawberries need 400 g. The remaining ingredients: a large spoonful of starch, a pack of high-quality butter, a pound of cottage cheese, 90 g of sugar, 2 small spoons of baking powder, 2 tablespoons of eggs, powdered sugar to taste, 380 g of premium flour.

  1. In a bowl, mix the sand, half the cottage cheese, all the eggs and melted butter. Flour with baking powder is sieved to the components. The kneaded dough shouldn't be tough.
  2. For the filling, the powder and the remaining cottage cheese are combined.
  3. First, the dough is laid out in an oiled mold (2/3). On it - a filling of cottage cheese. Above - berries. The latter are sprinkled with starch.
  4. The pie is closed with wide strips from the remaining dough.

The delicacy is baked for half an hour in the oven until golden.

In a multicooker

The easiest way to prepare the discussed treat in a slow cooker. Ingredients: a pound of strawberries, 220 g of sugar, 180 g of high-grade flour, half a packet of butter, 230 g of sour cream, 2 large tablespoons of corn starch, a small spoonful of baking powder, 3 tablespoons eggs, 380 g of cottage cheese.

  1. Soft (not melted) butter is ground with half granulated sugar. The ingredients are mixed with 1 egg.
  2. High-grade flour with baking powder is sifted into the mass. A ball is formed from the resulting dough and removed in the cold for 15 minutes.
  3. For the filling, cottage cheese with the remaining sugar is ground with a blender. Starch, the rest of the eggs and sour cream are added to them.
  4. Quarters of berries interfere with the curd mixture.
  5. The dough is removed from the refrigerator and distributed in the oiled bowl of the appliance. High sides are formed.
  6. The filling is laid out inside.
  7. In the baking program, the dessert is cooked for 45-50 minutes.

The dish is decorated with condensed milk.
