Recipe for buns with ham. Puffs with ham and cheese

  1. Dough: In a medium saucepan over low heat, heat the milk and 0.5 tbsp. water to a temperature of 37 ° C (but not higher than 43 ° C). Remove the pot from the stove and add yeast to the liquid. Top with a pinch of granulated sugar and set aside, without stirring, for about 5 minutes. Then stir in the butter and egg yolk.
  2. Whisk together the flour, remaining granulated sugar and salt in a large bowl. Make a depression in the center and pour in the yeast mixture, stirring in with a wooden spoon, until you knead a thick, slightly sticky dough. Place dough on a floured work surface and knead until soft and firm, about 6 minutes. Form the dough into a ball.

  3. Brush the inside of the bowl with butter. Place a ball of dough in a bowl, twisting it to coat with butter. Cover the bowl with plastic wrap, draw a circle the size of a ball of dough on the plastic wrap, and time it. Let the dough rise in a warm place for about 1.5 hours so that it doubles in volume.
  4. Remove the dough from the bowl and knead a little to release excess air; shape the dough into a ball again and place it in the bowl. Brush lightly with butter big piece plastic wrap and place it on the dough. Wrap the entire bowl tightly in another piece of plastic wrap and refrigerate for 4 hours or overnight to rise.
  5. Prepare the filling: Melt the butter in a medium skillet over medium heat. Add the leeks and cook, stirring frequently, until soft and lightly caramelized, about 5 minutes. Sprinkle the flour on the onion and cook, stirring constantly, for about 1 minute, until lightly browned and browned. Then stir in the wine and 1/4 tbsp. water, and let the mixture thicken, stirring constantly, for about 1 minute. Remove the skillet from the stove and stir in the cheese, 0.5 tsp. salt and a little pepper. Transfer the filling to a medium bowl and let cool completely. (The filling will harden a little, but if it is too warm, it will be difficult for you to form buns.)

  6. Shape the burgers: Lubricate with 2 tbsp. l. softened butter a 22 x 32 cm baking dish. Place the dough on a floured work surface and press down on top. Roll a 25 x 45 cm rectangle out of it so that it lies with its long side towards you. Spread the cooled filling evenly over the dough, stepping back about 2.5 cm from the edge opposite to you. Sprinkle the ham over the filling. Starting on the side closest to you, roll the dough into a tight roll. Lightly brush the empty edge of the dough with water and continue rolling to seal the roll. Bend the ends slightly, and if the roll looks thicker in some places, flatten it with your hands.
  7. Use a serrated knife to cut the roll into 4 cm buns for a total of 12 pieces. Place the buns, cut side down (except for the outermost pieces) in the prepared mold, 2.5 cm apart. Cover the buns with plastic wrap. Place in a warm place so that they double in size, and there are no gaps between them, for about 1.5-2 hours.
  8. Place the wire rack in the center of the oven and preheat the oven to 175 ° C. Bake the buns until golden brown so that they spring back when pressed lightly, 25-30 minutes. Cool in mold for 10 minutes.

🍴 Cooking process:

1. Cut the ham into small, or better, small cubes, and also cut the onion into small cubes. We wash the greens well in running water and finely chop them. Warm up a small amount sunflower oil in a skillet and fry a mixture of ham, onions and herbs in it.

2. Rub the cheese on a coarse grater. Remove the frying pan with ham from the stove and cool a little, then add the grated cheese and mix everything well.

3. Take a cutting board and sprinkle with a little flour or spread cling film on the table. We spread the dough sheet and roll it out, after which we cut it into several square pieces. We cut each square in the corners towards the center, but not completely. Put the ham and cheese filling in the center of the square, and connect the corners of the cut dough crosswise in the middle.

4. Take a baking tray and cover it with parchment for baking, and spread the buns on the parchment. We break the egg into a bowl and beat well, after which we grease the buns with a brush.

5. Preheat the oven to 200 degrees, and then put a baking sheet in it on which buns with ham and cheese are baked. Baking will take place in the region of 30 - 40 minutes. If desired, 5 minutes before the end of baking, you can take out a baking sheet, lightly grease the buns with a beaten egg and sprinkle with sesame seeds, and then bake for another 5 minutes.

The rolls are ready to serve. Don't forget to also do delicious tea or cook natural.

Soft savory buns with ham and cheese - a complete replacement for the most delicious sandwiches! They can be served with breakfast, taken to school and work for lunch, or added to a bread plate for dinner. Buns are also suitable for a buffet table.

The recipe that we offer today is a simplified version of the preparation of the famous English buns, which are sold in England at every turn and without which no feast is complete - neither everyday nor festive. We call a recipe simplified mainly because we will use instant yeast(like "Saf-Levyur"). This will make making buns really easy and pretty quick. We will need 15 minutes to prepare the dough, 20 minutes to "rest" in the refrigerator and 15 minutes to bake.

Ingredients (for 12 rolls)

Flour - 220 g

Butter - 50 g

Salt - 5 g

Milk - 150 g

Ham - 100 g (cut into cubes)

Hard cheese - 40 g (grate)

Sugar - 1/2 tsp

Instant yeast - 10 g

For shaving: 1 tbsp. spoon of milk + 1 egg

Preparation

Pour instant yeast into milk (yeast will dissolve faster in milk at room temperature or slightly warmed up).

Mix flour with salt, grated cheese, sugar in a bowl. Make a well and pour in the milk with yeast (1). Add butter, softened with room temperature(2). Knead the dough with your hands (but you can also use a mixer) (3).

Roll out the dough, sprinkle the ham on it, mix gently (4), wrap with foil or foil and refrigerate for 20 minutes.

Roll out the rested dough with a rolling pin on a lightly floured surface into a layer 1-1.5 cm high (5).

Cut buns with a cookie cutter or glass (6).

Place them on a baking sheet lined with baking paper (7).

In a bowl, lightly beat the egg and milk and brush over the buns (8).

Bake for about 15 minutes at 200 degrees - the buns should rise and brown beautifully (9). When the buns have cooled slightly, you can remove them from the baking sheet.

Serve the rolls warm or cold as a base for cheese sandwiches, as a separate dish (for tea, beer), or instead of bread.

Advice:

Ham in buns can be replaced with any, including smoked, sausages, boiled chicken, veal, pork.

For a change, try sprinkling grated cheese on top of the buns. If you don't like fried cheese, sprinkle the buns with cheese 5 minutes before cooking. Then the cheese will only have time to melt.

Adjust the salt in the buns as desired. If buns are served instead of bread or are being prepared for school breakfast, add a little salt. If the buns are going to be a beer party snack, it makes sense to make them saltier and even peppery.

Bon Appetit!
