PREPARATION

  1. We prepare carrots and onions for frying. We rinse under running water, clean and cut. There is not much difference in how to cut.

  3. Now you need to add the zucchini to the bulk of the vegetables. Fry the zucchini cubes until golden brown. Cut the potatoes and add them to the courgettes, onions and carrots. Pour water to cover all vegetables, cover and simmer for 30 minutes.
  4. After this time, add chopped tomatoes, season and leave over medium heat for 5 minutes until tender.

INGREDIENTS

  • Ground beef - 200 g.
  • Zucchini - 2 pcs.
  • Onions - 2 pcs.
  • Tomato - 1 pc.

  • Salt - 1/3 tsp
  • Freshly ground black pepper
  • Basil to taste
  • Vegetable oil

PREPARATION

  1. Heat a saucepan with vegetable oil over high heat. After the pan is hot, reduce the heat and spread out the finely chopped beef. Add water to completely cover the meat. Simmer over medium heat for 30 minutes. In the course of extinguishing, remove the foam several times.
  2. Chop the onion, put it in a saucepan for the beef.
  3. We chop the tomatoes and cut them coarsely. We add them to the pan.
  4. We peel the potatoes, cut them into cubes (size at your discretion). Add to the pan (add water if necessary). We cover the lid. Cook over medium heat.
  5. Peel the zucchini and cut into small cubes. Add together with tomato paste, salt and pepper to a saucepan.
  6. We wash and chop the basil. A few minutes after cooking the stewed zucchini with potatoes and meat, sprinkle it on top of the dish.

Stewed zucchini with potatoes and cabbage

INGREDIENTS

  • White cabbage - 200 g.
  • Carrots - 1 pc.
  • Onions - 1 pc.
  • Potatoes - 4 pcs.
  • Tomatoes - 3 pcs.
  • Garlic - 2 cloves.
  • Zucchini - 1 pc.
  • Tomato paste - 1 tablespoon
  • Bulgarian pepper - 1 pc.

PREPARATION

  1. We wash and peel onions, carrots, zucchini, white cabbage and bell pepper. Finely chop the cabbage, chop the onion into half rings, chop the zucchini into cubes, carrots into half circles, pepper into strips.
  2. We peel the potatoes, rinse them in cold water... Cut into slices.
  3. Carefully peel the tomatoes and cut into cubes.
  4. Add to the pan sunflower oil, heat up over medium heat. First put onions and carrots in it, fry for a couple of minutes.
  5. Then add straws to the frying bell pepper and diced courgettes. Fry / simmer, stirring occasionally, for 5-6 minutes.
  6. We also add chopped cabbage to the vegetables. We mix the whole dish.
  7. Potatoes and tomatoes are next. Add to a saucepan, stir and simmer over medium heat.
  8. We breed 1 tablespoon tomato paste in a glass of water, pour into a saucepan with vegetables.
  9. Salt and pepper to taste. Simmer over low heat.
  10. We are guided by the end of cooking for potatoes.

We put the prepared ingredients in a cast-iron duck or other convenient dish: zucchini, potatoes, carrots, onions.

Add tomatoes and peppers.

We send the duck to the fire, covering it with a lid. After a while, the zucchini will give juice and the stewing process will begin. To be sure, you can add 50 milliliters of water. Simmer for 30 minutes.

Salt, season with spices, pour in vegetable oil. Simmer for another 20 minutes, covered over medium heat.

Add chopped garlic, stir, cover and turn off the heat.

Ingredients:

  • 1 kg of potatoes;
  • 400 g of pulp of any meat;
  • 1 medium zucchini;
  • 1 medium onion;
  • 1 large or 2 small carrots;
  • 4 tablespoons vegetable oil without smell;
  • a few peas of black pepper;
  • 1-2 small bay leaves;
  • 500-700 ml of water;
  • salt and spices to taste.

Stew with meat and zucchini recipe

1. Wash the pork pulp or any other meat and cut into medium cubes. It is good if the meat is with a small amount of fat - this way the dish will come out more juicy, satisfying and tasty.

2. Grease the frying pan with vegetable oil, heat it well and only then put the meat cubes on it. Fry lightly over high heat to set the meat golden brown but remained juicy inside.

Attention! At this stage, do not salt or pepper the meat, so that it does not release juice ahead of time and does not become dry. As soon as the meat is browned, put it on a plate and set it aside.

3. Peel and chop the carrots and onions as shown in step by step photo.

4. Fry vegetables until golden brown in the fat that remains from the meat. If there is little fat, add a little more vegetable oil.

5. Peel the potatoes, wash them and cut them into cubes or slices. If you want the potatoes to be whole, cut them into larger ones. And if you want it to soften and look like mashed potatoes, cut it into smaller pieces.
We send it to a saucepan, fill it with cold water and set it to simmer over low heat.

6. Zucchini is best used young, with a delicate greenish skin. They don't need to be peeled, just rinsed, trimmed and diced. If you use overripe fruits, it is advisable to clean them not only of the skin, but also of large hard seeds.

7. Add the fried meat, fried onions with carrots and chopped zucchini to the pot to the potatoes. Salt, add black peppercorns and spices to taste. In principle, you can get by with ground black pepper. But to give an everyday dish a new flavor, you can use basil, thyme, rosemary, mint, cumin, coriander, paprika ... Or you can use ready-made sets of spices: curry is ideal for chicken, for lamb - an Uzbek set of spices with cumin for pilaf, for pork and beef - Provencal herbs, Italian spices, suneli hops, etc.
Add some more water if necessary. But keep in mind that the zucchini will still let juice.

8. Simmer over medium heat, covering the pan with a lid, until the meat and potatoes are tender.

9. Remove from heat and leave for 15 minutes to steep. If you like garlic, you can squeeze out a couple of cloves for flavor and stir while the dish is hot. After 15 minutes, lay out on plates and serve hot, garnished with fresh herbs.
