  • Wafer cakes - 70 g
  • Coconut flakes - 2 tablespoons

Step-by-step recipe for coconut balls "Rafaello" at home

Take a bar of quality white chocolate, break it into squares, put it in a saucepan and pour the cream into it. On a low heat, without bringing to a boil, constantly stirring the chocolate mixture with a spoon, bring it until the chocolate dissolves, no need to boil.

When the chocolate mass has cooled down to room temperature, add a slice to it butter, which should also be at room temperature, that is, you must put it out of the refrigerator in advance so that it warms up. Beat the cream with a mixer, it is necessary to get a homogeneous smooth mixture.

Take wafer cakes without filling, unsweetened. Crush them by hand or with a coffee grinder or blender. It is not necessary to grind to the state of flour, large pieces will come across - it's okay. 70 g is about six standard rectangular small cakes. I want to note that coconut balls can also be prepared with the addition of whole nut kernels, then you will need to wash the nuts and lightly fry in a pan, after which, if necessary, peel them or take ready-made roasted nuts.

Now pour out the crumbled wafer cakes into a container with cream, stir the mixture with a spoon and put it in the refrigerator for half an hour, this should be done so that the cream has time to harden a little, and the wafer chips swell, which will facilitate the process of forming sweets.

Chocolate balls are one of the types of baked goods, when the products are formed by rolling between the palms or spread on a baking sheet with a special spoon (such as used for putting ice cream in bowls). Focusing on basic recipes chocolate balls, you can show a fair amount of imagination: for example, roll them in fine coconut chips or crumbs from crushed waffles, put dried cherries or dried apricots inside, glaze or sprinkle with powdered sugar.

For glaze: 100 g butter, 100 g icing sugar, 1 chocolate bar, 2 tbsp. spoons of milk, 2 tbsp. tablespoons of potato flour, vanillin to taste.

Beat the whites into a stiff foam, add 40 g of sugar, stir with a spoon and add the yolks mixed with the rest of the sugar and flour. Place the dough in a pastry bag and use a large smooth tube to release the round cakes onto a greased sheet. Bake in a well-heated oven.

Cool the finished cakes, remove the entire crumb with a knife from the bottom side, leaving the top crusts whole, to make like boxes.

Prepare the cream. Grind butter with sugar, gradually adding eggs; when the sugar is pounded, add vanillin, cocoa and 2 tablespoons of brandy. Peel fresh or canned cherries or cherries removed from the liqueur, put in a saucepan a day before cooking, add 0.5 cups of sugar and pour the remaining cognac.

Lightly grease the prepared biscuits with cream, then fill with the removed biscuit crumb, mixed with two-thirds of the total amount of cream and 1 tablespoon of brandy. Put several cherries taken out of cognac in the middle of the biscuit mass. Cover with the remaining cream on top. Blind the two stuffed and greased with cream to make balls. Put in the refrigerator for several hours so that they are well strengthened, then coat with chocolate icing on top and let it dry.

To make the icing for the chocolate balls, heat the butter in a saucepan, mixing it with powdered sugar and vanilla. Not letting it boil over the fire until sugar dissolves, add chocolate, dilute with milk.

Boil, add potato flour, stir well over the fire, then remove the mixture from the heat and cover the balls with it.

Step 1: whisk the whites.

Pour the whites into a fairly deep bowl, add sugar and a pinch of salt. Beat everything with a mixer until the sugar dissolves and the proteins beat into a thick foam.
Advice: do not add all the sugar at once, but in small portions.
Once the protein mass is ready, add to it coconut flakes and mix well to get a homogeneous mass.

Step 2: bake the protein mass.

Line a baking sheet with parchment and spread the protein mass on it with a spoon, leaving some gap between the portions so that they do not stick together.
Preheat oven to 170 degrees, put the mode convection and send the baking sheet with the protein mass there. And bake everything for 20 minutes.
The mass should harden and cover with a slightly brown crust on top.

Step 3: make coconut balls.

Melt about 50 grams dark chocolate and use it to blind together two coconut candies with flat sides to each other to make a ball. Spread the pieces on parchment and wait for the chocolate to cool.
Then melt the remaining chocolate and cover the coke balls completely with it, then leave them to harden again.
When chocolate glaze hardens, coconut balls can be served and tasted.

Step 4: serve the coconut balls.

Coconut balls are delicious and original. Wrap them nicely and present them as a gift or present. Or you can just serve sweets for tea or coffee.
Bon Appetit!
