Moreover, this unpretentious pastry always turns out to be very tasty. Which by the way stimulates them to further culinary experiments. I have a guy friend who began his acquaintance with baking pastry with these cupcakes, and now he is baking delicious complex cakes.

Indeed, if you have never baked before, and you want to start somewhere, then this delicious pastry is just what you need. With just a few simple rules and little free time, you can have delicious homemade cakes every day. Though sweet, though not sweet!

Yes Yes! These delicious little products can be cooked just for breakfast, serving them instead of bread, or you can bake them for tea! And what is important, you can cook them so often, and not repeat at all - after all, with whatever filling they are not prepared. I will not even list them, because it will probably be easier to name the fillings with which they are not cooked!

I will tell you about all the basic rules and various fillings when I share the recipes with you. But what needs to be said at the beginning is that these small cupcake-like confectionery are English and American.

And just what we are used to preparing under this name is American samples. And unlike their English counterparts, which are baked from yeast dough, consists in the fact that they are prepared from flour with the addition of baking powder or soda, or both together.

But do not confuse them with muffins, which have a different form of the finished product and a different cooking technology. In addition, the muffins are fatter, although more "light - airy", and since they are fatty, it means they are more high in calories, and their close American relatives - have fewer calories.

And if you replace part of the oil in the recipe with low-fat kefir or yogurt, and part of the flour for cereals, and can even be practically dietary. But more on that later.

Now let's move on to the recipes. There are many of them today, as they say, for every taste.

A classic American muffin can be cooked with bran, and as a rule, without any filling at all, or with candied fruits, nuts, dried fruits.

However, the recipe is basic. Knowing it, you can add various additional ingredients, change the taste and cook many different options. It will no longer be called classic, but its essence will not change from this.

We need:

  • flour - 200 gr
  • sugar - 100 gr
  • butter- 100 gr
  • milk - 100 ml
  • egg - 1 pc
  • baking powder - 1 tsp
  • vanillin - a pinch
  • salt - a pinch

Preparation:

1. Take the butter out of the refrigerator and cut into small pieces.

2. Using a whisk, beat the egg. Continuing to beat, add butter and vanillin.


3. Pour in lukewarm milk and mix well again until smooth.

4. Sift flour and baking powder into a separate bowl. Flour is best used top grade... As you know, these muffins get stale pretty quickly. Flour of the highest grade will slow down this process somewhat. Add sugar and a pinch of salt. Stir everything.

There is one simple rule: you need to add a pinch of salt to sweet baked goods, and a pinch of sugar to non-sweet ones. This makes the baked goods even tastier.

5. Add the liquid component to the dry mixture and mix with a spoon. In this case, the dough is no longer mixed with the mixer.

It is believed that for the preparation of classic muffins, it is necessary to separately mix the dry and liquid components, and then pour the liquid component into the flour and mix thoroughly with a spoon.

However, this rule does not always apply. And you may come across recipes where the sequence of placing the ingredients may be slightly different! But not in the classic version, that's what its name is, to do everything strictly according to the rules!

6. Divide the resulting mixture into silicone molds, filling them in 2/3 parts. They must first be greased with vegetable oil. Often, special paper inserts are also put into the forms, and the dough is already laid out in them.

When serving baked goods in paper tins, it looks much more aesthetically pleasing, besides, it is much easier to take them in a paper cup than just by hand.

7. Preheat the oven to 180 degrees.

8. Bake 25 minutes until tender. Readiness is determined in a well-known way. If you pierce the baked goods with a toothpick, and there will be no batter, then the baked goods are completely ready.

9. Let them cool slightly and place on a dish. You can decorate with icing, grated chocolate, or simply sprinkle with icing sugar.


To give fresh taste you can add the zest of half a lemon to the dough. And it should be remembered that you need to rub only the yellow part of the lemon, since the white part is bitter. It will give the baked goods a bitter taste.

The following recipes by which muffins are prepared most often are recipes with chocolate. They are prepared both with pieces of chocolate and simply with the addition of cocoa. Let's take a look at both recipes.

Chocolate and cocoa recipe

We need:

  • flour - 250 gr
  • sugar - 150 gr
  • butter - 150 gr
  • milk - 100 ml
  • egg - 2 pieces
  • cocoa powder - 5 tbsp. spoons
  • baking powder - 2 tsp
  • salt - a pinch

Preparation:

1. Melt the butter over very low heat. Add cocoa to it, mix. Then gradually pour in the milk, continuing to stir so that the mixture does not stick to the bottom.

2. Add sugar and stir until it is completely dissolved. Bring to a boil, then turn off the mixture and let stand to cool completely.

3. Drive eggs into the cooled mixture one by one and mix until the mixture is soft, elastic and homogeneous.

4. Sift flour with baking powder, add salt and add everything to the resulting chocolate mixture. Stir with a spoon; it is not recommended to use a mixer. The dough should not be very thick.

5. Grease the tins and put them in chocolate dough filling out the form in 2/3 parts. The dough rises well during baking and the baking will turn out beautiful and fluffy!

6. Preheat the oven to 180 degrees and bake for 25 minutes until fully cooked.

7. Remove the finished baked goods from the oven, allow to cool and place on a dish. You can eat it as it is, or you can decorate it with icing, cream, or simply sprinkle with powdered sugar.


If desired, you can add any nuts or raisins to the dough. Or both. Chocolate products with such an additive will only benefit. Remember which chocolate tastes better, regular or with nuts and raisins? However, someone likes it more regular chocolate without any additives. Therefore, it is up to you to decide here!

With pieces of chocolate

This is essentially the same recipe as the previous one, except that it is not prepared with cocoa powder, but with chocolate. I love to make these baked goods with dark bitter chocolate. In this case, sweetish products are obtained with a slight bitterness. But this recipe is likely to appeal to dark chocolate lovers. And sweets will like such pastries with milk chocolate.

We need:

  • flour - 250 gr
  • sugar - 150 gr
  • butter - 125 gr
  • chocolate - 100 gr
  • milk - 150 ml
  • egg - 2 pieces
  • baking powder - 2 tsp
  • salt - a pinch

Preparation:

1. Melt the butter over low heat. Add about 1/3 of the chocolate to it. Break the remaining chocolate or cut it into small pieces with a knife.

2. Stir constantly. pour in milk and add sugar. Bring to a boil and turn off heat. Allow to cool.

3. Mix eggs into the cooled mixture one by one.

4. Sift flour with baking powder, add salt. Combine both mixtures and mix until smooth. The dough should be of such a consistency that the prepared pieces of chocolate can be placed in it.

5. Grease the molds with oil. If there are special paper inserts, insert them into the forms. Fill 2/3 of them with dough and stick in the chocolate pieces.

6. Preheat the oven to 200 degrees. Bake for 20-25 minutes until cooked through.

7. Remove from the oven, allow to cool, then remove from the molds.


In this recipe, you can also add any nuts and raisins as additional ingredients. If you add nuts, carefully sort them out and peel them off, otherwise there may be trouble in the form of a broken tooth!

With classic chocolate pieces

According to this recipe, we also cook pastries with pieces of chocolate, but we do it according to classic version... And it is fundamentally different from the two already proposed chocolate recipes... Let's take note of him too.

We need:

  • flour - 200 gr
  • sugar - 100 gr
  • vanilla sugar - 10 gr (sachet)
  • butter - 100 gr
  • milk - 150 ml
  • dark chocolate - 80 gr
  • eggs - 2 pcs (large)
  • cocoa powder - 3 tsp
  • baking powder - 2 tsp
  • salt - a pinch

Preparation:

Since our recipe is classic, we remember that according to it, all dry and all liquid components are mixed separately. And only then they connect.

1. Sift flour and baking powder into a bowl, add sugar, vanilla sugar, salt and cocoa.

2. In a separate bowl, beat the eggs with a whisk. Continuing to beat, gradually add milk, melted butter. Beat everything well until smooth.

3. Pour liquid into the dry mixture and mix with a spoon. We do not use a mixer so that the dough does not fall off during baking. Mix quickly but thoroughly. The dough should not be very thick and may even be slightly lumpy.

4. Cut the chocolate into small pieces with a knife and add to the dough. You can leave some of the chocolate to stick it into the dough later.


5. We grease the baking dishes with oil, if there are paper inserts we use them.

6. We spread the dough, filling the form in 2/3 parts. If you left chocolate, then press it over the dough.

7. Preheat the oven to 175 degrees and put a baking sheet with pastries in it.

8. After 20-25 minutes the pastry should be checked with a toothpick. If they are ready, then the oven must be turned off, and the baked goods must be kept in it for another 5 minutes. Then take it out, cool it a little and remove it from the molds.

With cottage cheese according to the classic recipe

We need:

  • flour - 160 gr (1 glass)
  • cottage cheese - 200 gr
  • sour cream - 50 gr

  • sugar - 200 gr
  • butter - 70 gr
  • baking powder - 1 tsp
  • soda - 0.5 tsp

1. Beat the eggs into a foam using a whisk, add sugar and beat the mixture until the sugar is completely dissolved.

2. Not very fatty cottage cheese, you can take 9%, grind through a sieve and add to the resulting mixture along with vanilla sugar. Mix.


3. Add sour cream and melted butter, mix everything.

4. Sift flour and baking powder through a sieve, put a pinch of salt and soda in the mixture.


5. Pour the liquid component into the flour mixture and knead the dough without lumps of uniform consistency.


6. Grease the molds with butter and put the dough in them, filling them in 2-3 parts.

7. Bake at 180 degrees a little longer than usual for 30-35 minutes. The dough with cottage cheese is denser and therefore more time is needed for baking.

As you know, raisins go very well with cottage cheese. Therefore, if you wish, you can add it to the dough and bake baked goods with an even richer flavor!

If you add raisins, then they must be thoroughly washed and then dried. And only after that add to the dough, otherwise the water will not let the dough rise well in the molds.

Orange muffins

I cook this recipe with oranges, but you can cook according to it by adding any fruits or berries. The same recipe can be prepared by adding lemons, tangerines, kiwi, apples, pears, or whatever you want. The recipe is just as simple. like everyone else, but the baking itself is simply delicious.

We need (for 12 pieces):

  • flour - 200-250 gr
  • sugar - 120 gr
  • vanilla sugar - 10 gr (sachet)
  • butter - 100 gr
  • egg - 3 pieces
  • baking powder - 1 hour a spoon with a slide
  • orange - 1 piece
  • walnuts - 12 halves
  • salt - a pinch

Preparation:

1. Take the oil out of the refrigerator in advance and let it stand for a while. Add sugar to it and beat with a whisk.


2. Add sugar and vanilla sugar, continue whisking. Then add eggs one at a time.


3. Wash and dry the orange with paper towels. Grate the zest on a fine grater using only the orange portion. We do not touch the white part, it is bitter and will give the baked goods a bitter taste.


4. When the whole zest has been rubbed, squeeze the juice out of the orange. You can squeeze directly with your hands, it is not difficult to do it. The juice will turn out to be about 100 ml, this will be quite enough.


5. Sift flour and baking powder through a sieve, stir in salt.

6. Add the liquid component to the flour mixture together with the juice, and stir thoroughly with a spoon. The dough should not be very thick. The recipe says that we need 200-250 grams of flour, it depends on how much orange juice you get.


7. Grease the molds with oil, if any, then place paper forms in them. Then fill them with 2/3 parts of the dough. Put half a nut on top. It will be delicious and beautiful.


8. Preheat the oven to 180 degrees. Bake for 30-35 minutes until cooked through.

9. Eat with pleasure!

It is also the favorite type of baked goods for millions of people. And they cook them both with bananas alone and with additional additives. Since the banana is practically not felt in the baked product, I like to add nuts and chocolate pieces to the dough, or just one thing.

Therefore, if you want to make baked goods with only bananas, then do not add any chocolate or nuts. All other ingredients are put in the same proportions as in the recipe. And I, perhaps, will cook them with additives.

We need (for 20 pieces):

  • flour - 350 gr
  • milk - 300 ml
  • butter - 115 gr
  • sugar - 100 - 150 gr
  • egg - 2 pieces
  • baking powder - 2.5 tsp
  • baking soda - a pinch
  • vanillin - 10 gr (sachet)
  • salt - a pinch
  • banana - 2 pieces
  • dark chocolate - 80 gr

Preparation:

1. Mix all dry ingredients, namely sifted flour and baking powder, soda, sugar and salt. Add sugar to your taste, either 100 or 150 grams, depending on what kind of sweets you are.

2. Now let's prepare the liquid component. To do this, knock slightly melted butter together with the eggs until smooth. homogeneous mass... We use a whisk for this.

3. Continuing to whisk, gradually pour in the milk.

4. Peel and crush bananas with a fork and puree. It's okay if small pieces remain. It is always pleasant when tangible pieces of fruit come across in baked goods. Although in this case, all the banana will completely dissolve in the dough.


5. Chop the nuts or roll them out with a rolling pin on a cutting board or towel. First sort the nuts, remove the partitions and shells. It is not necessary to roll the nuts hard, the pieces should remain quite tangible.

6. Chop the chocolate into approximately 0.5 cm pieces.


7. Combine the liquid component with flour, add banana puree, nuts and chocolate. Leave some of the chocolate to press it into the products directly in the mold. Mix the contents only with a spoon.



8. Grease the molds with oil, line them with paper blanks, if any, and fill 2/3 with the prepared dough.


9. Preheat the oven to 200 degrees, and bake for 25 minutes until tender. We determine the readiness with a toothpick.

10. We take out the finished products and let them cool down a little. Then we take them out of the molds and serve with hot tea or coffee. And someone loves to taste such hot baked goods with cold milk!


11. Eat with pleasure!

The products turned out to be not at all sweet, only slightly sweetened, which was very much to the taste of my homemade ones. The pieces of dark bitter chocolate really hit my taste, as this is the kind of chocolate I love the most.

And of course the taste of the finished products was completely different than if we cooked them with only bananas. It turned out to be richer and richer.

Banana with carrots

If you do not use chocolate and nuts in the previous version, then you can cook pastries with the addition of carrots. And believe me, they turn out to be no less tasty and are eaten just in one breath. Here is the prescription.

Pumpkin with carrots

I began to cook such pastries quite recently, as they say, chance helped! I was cooking not so long ago, and I still have pumpkin puree. It, of course, was very tasty in itself, and you could just enjoy it.

But I had an unclaimed recipe that I had wanted to cook for a long time. So I put the puree in the refrigerator until the pie is finished. Finally, after a couple of days, I started making muffins.

We need (for 20 pieces):

  • flour - 2 cups
  • butter - 125 gr
  • granulated sugar - 200 gr
  • eggs - 2 pcs (large)
  • sour cream - 3 tbsp. heaped spoons
  • pumpkin puree - 1 glass
  • grated carrots - 1 cup (about 2 carrots)
  • vanilla sugar - 10 g (sachet), or vanilla extract - 1 tsp
  • soda - 1 tsp
  • baking powder - 1 tsp
  • ground cinnamon - 1/2 tsp
  • salt - a pinch
  • nuts - optional (handful)

Preparation:

1. Whisk butter slightly melted at room temperature with sugar. Beat in eggs one at a time and mix until smooth.



2. Add the grated pumpkin puree. Stir with a spoon. To make the pie, I baked the pumpkin in the oven, then pulled out the pulp with a spoon and mashed it.


I think you can use fresh pumpkin just by rubbing it on a fine grater. You can bake the pumpkin in the microwave or oven, and then make mashed potatoes, or you can stew in a little water with the addition of honey and only then grind in mashed potatoes.

In my opinion, all methods are good. Of course, this lengthens somewhat quick way making the muffins themselves, but you know, it's worth it. Their taste turns out to be simply amazing and unlike anything else!

3. In a separate bowl, sift flour and baking powder, add salt, soda and cinnamon, mix.


4. Mix both masses with a spoon and add finely grated carrots. The dough turns out to be a pleasant orange color, not very thick, well, not liquid, of such an average consistency.



5. Grease the molds with oil and line them with paper inserts, if you have them. If not, then only the molds will be enough. Fill the molds 2/3 full with dough.


6. Preheat the oven to 180 degrees and place a baking sheet with tins in the oven for 10 minutes. Then reduce the temperature to 170 degrees and bake for another 10-15 minutes until tender.

7. Take out the finished baked goods, let cool slightly and eat with pleasure.


I must tell you that the pastries are very tasty, I would even say the most delicious. In addition, she turned out to be of a beautiful sunny color, and this is very uplifting!

Now let's move on to another category of this pastry, which is baked with berries. For example, they are traditionally baked with blueberries in America in the state of Minnesota.

American style blueberry

Such pastries can be prepared with any berry, but I want to show them to you using the example of the most popular in America (Minnesota), that is, with blueberries, although it can be easily replaced with blueberries.

We need:

  • flour - 380 gr
  • butter - 120-125 gr
  • milk - 250 ml
  • Brown sugar- 160-170 gr
  • eggs - 2 pcs (large)
  • baking powder - 1 tsp
  • salt - a pinch
  • blueberries - 175 - 185 gr

1. Slightly melted butter room temperature knock down with eggs with a whisk. Continuing to knock down gradually introduce milk.

3. Combine both mixtures, mix with a spoon. Add washed and dried blueberries. Stir so that it is evenly distributed in the dough.

Or you don't have to mix the berry with the dough, but put it just in the middle, already in the mold itself.

4. Grease the molds with oil, insert paper inserts, if any, and fill them 2/3 full with dough. Try to evenly distribute the berries in them.

5. Heat the oven to 200 degrees and bake the products for 25 minutes, until fully cooked.

6. Get it out, let it cool down a bit and eat with pleasure!


Exactly the same recipe can be used to bake baked goods with blueberries, or with blueberries and blackberries together. They turn out to be very tasty with strawberries, and in season, of course, it is better to cook with this tasty and aromatic berry. You can cook with raspberries and currants, both with red and black. The principle is the same!

And you don't have to dwell on berries. Cook with any fruit, and each time your baked goods will be different and will certainly be delicious!


You can cook muffins not only with milk, but also with sour cream and kefir. I already had a recipe with sour cream, let's now look at how to cook this delicious pastries on kefir.

Delicious recipe for kefir

Sometimes a little kefir remains in the refrigerator and no one can finish it. Goodness should not be lost! You can safely bake delicious pastries from it. With a good hostess, everything goes into business!

We need:

  • flour - 250 gr
  • kefir - 250 ml
  • butter - 125 gr
  • eggs - 3 pcs
  • sugar - 150 gr
  • baking powder - 2 tsp

  • icing sugar - for sprinkling

Preparation:

1. Warm the oil in a water bath. In the meantime, it is warming up, knock down the eggs with sugar, use a whisk for this. Slowly pour the butter into the egg and sugar mixture. Continuing to beat, mix everything until smooth.

2. Gradually pour in kefir.

3. Sift flour and baking powder, add salt and soda to them.


4. Pour the dry mixture into the liquid mixture and mix everything. We use a spoon. The dough should turn out like thick sour cream.


5. Grease the molds with butter and put the dough in them.

6. Preheat the oven to 180 degrees. Bake for 30-35 minutes until tender.

7. Remove the finished baked goods, allow to cool and sprinkle with powdered sugar. Eat with pleasure!

And for a change, you can put dried or frozen cherries, or pieces of chocolate into the dough. And you can do both together.


It turns out that I have so many muffin recipes. To be honest, I didn’t even know that I had so many of them. However, this is not all.

After all, there is still english recipes and they cannot be ignored. After all, it is believed that it was in England that they began to be prepared first. But I want to remind you that they are prepared from yeast dough, and in finished form look like small fluffy cakes, which are cut lengthwise into two halves and smeared with some kind of jam or butter.

We need:

  • flour - 500 gr
  • butter - 200 gr
  • milk - 200 ml

  • dry yeast - 0.5 - 1 sachet

Preparation:

Read the instructions for dry yeast carefully. It should say how many grams are in the bag and how much flour it is designed for. Follow the instructions.

1. Sift flour into a bowl, add yeast and mix. Then add sugar and salt.

2. Warm milk slightly in a water bath, add butter, cut into pieces. So it will disperse faster. Stir until the butter is completely dispersed, while it is important that the milk does not get too hot. The optimum temperature for dissolving the oil is 30-35 degrees.

3. Take out and let the milk cool slightly.

4. Beat the eggs into a foam using a whisk. And gently mix them into milk and butter.

5. Mix dry and liquid ingredients and place in a warm place for 10-15 minutes to revive the dough. At the same time, it will begin to bubble slightly. The dough should be slightly thicker than the pancakes.

6. Put the oven on preheat, we need a temperature of 180 degrees.

7. If using molds, place the dough in them. Or you can put the dough with a tablespoon on a baking sheet greased with vegetable oil and bake them in this form. In this case, they will turn out in the form of small cakes, which will be convenient to cut and grease with jam.

8. Bake for 15 minutes, give or take a little, it depends on the characteristics of the oven.
