Ingredients

  • 300 g boiled chicken fillet
  • 150 g canned peaches
  • 1 PC. red onion
  • 2 tbsp. l. mayonnaise
  • salt and pepper to taste

Preparation

1. Wash the chicken fillet, cut off the films and boil in salted water for about 25-30 minutes, then cool for 30-40 minutes in the cold. We will do all this in advance so that it is already cold by the time the dish is created. Cut the boiled fillet into plates, and then into cubes and pour into a salad bowl. Fillet can be replaced with any other meat part of the chicken.

2. Open a jar of canned peaches, pour the syrup into a cup, and discard the fruits themselves in a colander, draining the excess liquid. Then cut into cubes and place in a salad bowl.

3. Peel the red onion, rinse it in water and cut it into small cubes. Optionally, the slices can be poured with boiling water with the addition of 1 tbsp. l. 9% or apple cider vinegar, leave for 5-10 minutes for steaming. Then add the slices to the container along with the other ingredients. Instead of red onions, it is permissible to use green onions.

Ingredients:

I read on the Internet that to celebrate the Year of the Monkey, there must be fruit dishes on the table, and I decided to cook a light dessert salad.
In the middle of the Russian winter, not all fruits can be bought fresh, so I decided to use canned ones as well.

Peel one large banana and cut into small triangles.

Cut canned peaches (about half a can, this is about 3 halves of a peach) into small pieces.

Cut half a jar of canned pineapple rings into pieces (4 rings).

Peel one kiwi and cut into small triangles.

Add some grapes (not a whole bunch, but a small twig). I took the grapes for this salad quiche-mish, because it is sweeter and so as not to bother with the extraction of seeds.

I tried to choose not very large berries and put them whole in the salad so that the juice from the cut grapes would not flow out.
Mix everything gently so as not to crush the fruit.

I dress the salad with a small amount of the sour-milk product "Snowball" - I use no more than 2-3 tablespoons. I chose "Snowball" for dressing because it does not have its own pronounced fruit and berry taste (in fact, it is sweet kefir), so that it does not interrupt the taste of fruit in the salad. You can use plain yogurt without filler, but I don't really like it, not sweet enough for my taste.
From the specified amount of food, two large portions are obtained. I prepared such an amount of salad at a time that I could immediately eat it together with my husband, since it is hardly possible to keep such a salad in the refrigerator.
It turns out a very tender, juicy, light salad that will remind you of warm summer days on a winter night.

Cut the chicken fillet into small slices, put in the marinade and leave for 7 minutes. During this time, rinse and dry the basil, lettuce and chop the herbs with our hands into small pieces. Cut the peaches into small cubes, put them in a bowl with herbs and pour with olive oil. Cut the cherry tomatoes into 2 parts. Fry the marinated chicken fillet until tender in a pan, transfer the meat to a paper towel, and then add to the salad along with peaches and tomatoes. Before serving, decorate our salad with pine nuts.

Shrimp and Peach Salad

Ingredients:

  • peeled - 400 g;
  • peaches - 2 pcs.;
  • lettuce leaves - 1 bunch;
  • egg - 2 pcs.;
  • olive oil - 1 tbsp. spoons.

For refueling:

  • lemon - 1 pc.;
  • fresh basil - 0.5 bunch;
  • olive oil - 3 tbsp. spoons;
  • spices.

Preparation

Boil the eggs, cool completely and peel them. Wash basil and lettuce leaves, dry on towel and chop with a knife. Gently remove the zest from the lemon and rub a teaspoon on a fine grater. Squeeze the juice from the peeled fruit, mix it with olive oil, zest, chopped basil and spices. Put the peeled shrimp into a bowl, pour with part of the dressing, mix and set aside for 20 minutes. Rinse the peaches, dry them, cut them into halves and remove the seeds. Put the lettuce leaves on big plate, then lay the peach slices on top. Put the pickled shrimps into a pan with heated olive oil and, stirring occasionally, fry until golden brown. Cut the boiled eggs into quarters and put them together with seafood on a dish with salad. Sprinkle the food with the remaining dressing and serve.
