Preparation

Minced chicken balls can be prepared in such a way that the cheese is inside, like a filling, or you can also grate it directly into the minced meat itself. This will make the dish more juicy and tasty, as well as add an unrivaled flavor to it.


  • It is advisable to choose fresh, not frozen chicken fillet, since in this case the minced meat will turn out to be more juicy. Rinse the breast and trim the film and fat, then mince the meat. Peel the onion, cut into large cubes and also pass through a meat grinder. It is worth doing the same with garlic, but if the cloves are very small, it is better to chop them with a garlic press.


  • Place the chopped ingredients in a common deep bowl, then add fresh chicken eggs, black pepper and salt to taste. Try not to oversalt the minced meat, remember that the filling will also be salty because of the cheese.


  • Mix thoroughly chopped meat, and then try to shape it into a ball. If it is too runny or does not hold its shape, add very little bread crumbs or bread crumb to it. Then you need to prepare three small deep bowls, in which you need to place flour, whipped egg and breadcrumbs respectively.


  • Start shaping the cheese-filled meatballs. To do this, scoop up a little minced meat with a spoon, knead it in your hand to make a tortilla, and put in a small piece of cheese. Pinch the edges, and then roll the minced meat into a ball.


  • Dip the meatball first in flour, then dip in egg mixture, and then - in a container with bread crumbs. Do this with all the chicken balls, placing them on a wooden board.

Preparation

  1. Soak chickpeas in water in advance, preferably overnight. I stood in water for almost a day - it swelled 3 times and quickly cooked. Then put to simmer over medium heat for 1 hour.
  2. Boil chicken fillet and cool, cut into small pieces. Grind with a blender until homogeneous mass... Fillet is difficult to chop, so you can add liquid to the blender (for example, strained broth left after cooking or boiled water).

Important note! The mass should be thick and stick well, so keep track of the amount of liquid added.

  2. Mix chicken and chickpea puree, add soft cheese, salt and mix thoroughly until smooth.

In well-heated oil (it should gurgle :) we send our balls. I have a special sieve for deep-frying - it is more convenient with it, but if it is not there, it's okay. It will just be a little less convenient to pull out - prepare a slotted spoon in advance.

After cooking, you can place the balls on paper towels and / or blot them to remove excess oil.

We cook our balls for 4-5 minutes.

  • Cream - 200 milliliters, that is, a glass (the fat content of the cream is at your discretion, it seems to us that 10-11% is quite enough)
  • Cheese (any hard varieties of your choice) - about 200 grams
  • Table salt - approximately 1.5 teaspoons
  • Ground black pepper - to taste (well, on the tip of a teaspoon, about a quarter of a spoon, but, you know, usually no one puts pepper with a spoon, it's more convenient to shake the pepper shaker several times, or even better to twist the mill)
  • Margarine or butter - 10-15 grams to grease a baking dish
  • Fresh greens (dill, parsley, cilantro and other your favorite) - if you wish, sprinkle the finished dish with finely chopped herbs on top, which will certainly improve both the look and taste

Preparation:

Peel the onions and chop finely. Add the chopped onion to the minced meat. Season with salt, pepper and mix until smooth.

Beat the eggs until they are lightly foamy (with a mixer or a whisk, as a last resort, just with a fork), add the eggs to the minced meat and mix everything thoroughly again. For the convenience of further work, it can be divided into parts (we usually get 9 balls from this amount of minced meat, let's not say that they are small).

A baking dish (you can have a deep baking sheet, but it will be too large for this amount of minced meat) grease with margarine or butter.

With hands dipped in cold water so that the minced meat does not stick, we form, sculpt balls and put them in a greased form at some distance from each other, not close ( watch our recipe video!).

Preheat the oven to 200-210 degrees (medium heating level or slightly higher), put the dish with balls on a baking sheet or on a wire rack at a medium height and bake for 15 minutes. ATTENTION! Again and again! If the form is glass, we put it in a cold oven, then turn on the heating and increase the residence time in the oven by 10-15 minutes (this is how much time the oven usually heats up).

While our chicken balls are baked in the oven, we rub the cheese on a not very coarse grater, or even on a fine one.

Crush the garlic in a special "crusher" or chop it very, very finely and add it to the grated cheese, mix. Pour cream into the cheese and garlic and mix everything again.

We take out of the oven a form with already slightly baked chicken balls and each ball (immediately, do not wait, do not let it cool) generously water cream cheese sauce... And immediately we send the form back to the oven and bake for another 15-20 minutes.
