Yes, I agree, many of you will think that a snack is not cheap, but you can pamper yourself with your loved ones at least once a year!)) Since I myself just found out what volovan is, I will immediately explain that, according to Wikipedia, volovan is small puff pastry with filling inside. Spicy appetizer of French origin. Therefore, I offer you a step-by-step recipe for making volovans, and you can make the filling to your taste))

Ingredients for volovanovs with red caviar

  • Puff pastry (not yeast) - 500 g
  • Red caviar - 80 g jar
  • Cream cheese - 150 g (or butter)
  • 1 egg yolk
  • Flour - 1 tbsp. l (for rolling out the dough)

How to cook

Pre-defrost the puff pastry at room temperature(in no case in the microwave!) 20 minutes. Or, if time permits, transfer the dough from the freezer to the refrigerator for a couple of hours. Then we open the bag, sprinkle the table with a little flour, take out the dough and very lightly roll it in one direction ( ! ) so as not to break the test structure. We make the thickness of the layer approximately 5 mm.

Then, with a round notch, about 5 cm in diameter, we cut out circles from the dough. I had a baby bottle cap for this case))) Then take a recess with a smaller diameter (about 3 cm). Alcohol caps are great for this)). We cut out the middle of half of the circles, carefully take them out, as a result, we get a rim.

The middle parts for our recipe are no longer needed, so you can simply bake them, or sprinkle with grated cheese - you will get another interesting appetizer.

Lay out the rims on top of the mugs, press lightly and also gently grease with yolk. It is advisable that when smearing the surface, the yolk does not fall on the edges, as this will interfere with the rise of the dough.

Preheat the oven to 200 degrees. We put a baking sheet with volonovans in a preheated oven. I want to note that puff pastry loves moisture very much, because it helps him to rise better. Therefore, when we put the baking sheet, we spray it a couple of times into the oven with water from a spray bottle for watering the flowers so that steam is formed. Close the oven quickly and bake the volovany for 20 minutes.

They should rise and brown. We take out the finished oxen from the oven and cool.

  6. When the volos are completely cool, crush the middle and put a small spoon in it. cream cheese, and then a spoonful of caviar.

The dish is ready to eat. You can garnish the snack with a sprig of dill or parsley.

Volovany with caviar, quail eggs and salmon mousse

This dish is distinguished by its originality and sophistication. It is perfect for impressing your guests. Eggs will add a satiety to the snack, and the salmon mousse will enhance the fishy flavor.

For volovans you will need:

  • puff pastry;
  • Red caviar;
  • quail eggs;
  • boiled salmon or other red fish;

Ingredients:

  • ready-made oxen;
  • avocado;
  • lime (you can use lemon) - 1 slice;
  • cottage cheese(you can use creamy) - 4 tablespoons;
  • Red caviar.

Cooking process:

  1. Remove the avocado pulp into a bowl, mash well. Add the lime juice and continue kneading until the mixture is soft and smooth.
  2. Add curd cheese and spices to taste. Stir.
  3. Place the resulting mass in the oxen and add caviar on top.

  6. 6 Remove items from oven and cool. Flatten the middle a little and fill the volubles with cream cheese. Top with caviar and garnish with herbs if desired.

Stay close to the oven and keep an eye on the pastries - they can burn very quickly.

7. Take out the ready-made oxen from the oven and cool.

We put a small piece of butter in the middle of each volovan. Put caviar on top. Decorate with herbs and serve immediately.

Alternatively, you can fill the volovany with curd cheese with or without finely chopped herbs.
