The finished dough is divided into several parts, rolled out and placed in an oven preheated to 200 degrees. Each cake is baked until browning (it takes me no more than 10 minutes).

For cream, whip sour cream with sugar. The cakes are coated with cream. The cake can be left in the refrigerator overnight to soak. It is also delicious if you add lemon zest grated on a fine grater to the cream.

Recipe

The dough is prepared in a water bath. Boil water in a saucepan, put a bowl on top, in which you will make the dough. The water under the bowl should boil slowly all the time.

Put butter, sugar, lightly beaten eggs in a bowl and heat the whole mixture, stirring constantly with a whisk.

Add honey, then salt and soda (quicklime) and keep stirring constantly in a water bath until the sugar dissolves, about 5 minutes.

Pour in 2 cups of flour, stir, continuing to heat the dough for another 5 minutes (the dough should warm up well).

Remove the bowl from the water bath, add another cup of flour and knead the dough. Preheat oven to 190 ° C / 375 ° F.

Divide ready dough into 8 parts. Roll each piece into a 20-23 cm / 8-9 inch circle (while one is baking, roll the other).

Lightly grease a baking sheet with oil (soak a paper towel vegetable oil and grease a baking sheet, or sprinkle with oil from a can) or cover with parchment paper.

Bake the cakes for 6-7 minutes until browning. Cut hot cakes on a stencil and cool completely on a wire rack.

Dry the remaining scraps in the oven and use to sprinkle the cake.

For the cream: whip the cream until soft peaks, add sour cream in parts and beat until thickened (not at all for a long time, otherwise the cream will heat up and the mass will turn out to be liquid).

Cream and sour cream should be cold. You can also mix sour cream with cream and whip all at once.

Grease the cakes and edges of the cake with cream (between the cakes, you can add finely chopped toasted nuts or add nuts to the crumb and sprinkle the cake). Decorate as desired.

Place the cake in the refrigerator for soaking for 8-12 hours.

My comments: I make exactly half of the cream, add 1 tablespoon to it. honey for aroma. I like it the most with acacia honey.

I keep the cake dough in the refrigerator for 12-24 hours to develop a honey aroma.

I get 8-9 cakes, I usually leave half of one for sprinkling. And I eat the other half like that, because it's delicious!

Winnie the Pooh (cake) is made from dough and honey. Six tablespoons of honey are brought to a boil, then add two glasses of sugar and six tablespoons of water, soda, a pinch of salt and boil until the mass turns rich brown with an orange tint. After that, remove from heat, add butter and cool.

Then add six eggs and seven glasses of flour. The dough is covered and infused for about two hours.

The resulting dough must be divided into fifteen parts. Each piece should be rolled out between sheets of baking paper.

The cakes are baked in a heated oven for eight minutes, after which the baking paper is removed and the cakes made are stacked on top of each other.

Cake cream

Whisk 450 g of butter, add 3 cans of boiled condensed milk in parts to it and mix thoroughly. The cakes are smeared with prepared cream and soaked for eight hours.

Shortcrust pastry

This dough is needed to make a pot. To make it, margarine must be mixed with sugar, add 4 yolks, flour and baking powder without a slide. Divide the dough into 14 slices, each rolled out between 17 cm diameter baking sheets. Trim the edges in a circle.

The cakes are baked in a heated oven. They are white with slightly brown edges.

Now you need to make a cream for the pot. Melt 250 g of butter, add uncooked condensed milk, vanilla, a spoonful of honey and heat, but do not boil. Remove, add gelatin, refrigerate and beat.

After that, you need to whip 0.4 liters of cream and add to the resulting mass. The cream is ready, they are smeared with it shortbread cakes... This should be done carefully, as they are very fragile.

The already soaked honey cake is cut in the shape of a figure eight, thus creating a silhouette of the head and body. The trimmings are ground in a blender and molded into ears, arms and legs. The belly does not need to be made very round, since a pot will be attached to it.

Glaze

Add 40 g of butter to the milk and bring to a boil. Then you need to add powdered sugar and toffee. Cook until dissolved. The glaze is cooled and the bear is covered with it, after which it is placed in the refrigerator to solidify.

Mastic

The next product needed to coat the Winnie the Pooh cake is mastic. It is used for teddy bear. It is prepared like this: boil 50 ml of water, add a pinch of salt, 25 g of oil. After boiling, add another fifty grams of flour and cocoa. Remove, mix, add powdered sugar. The muzzle, ears, arms and legs are covered with mastic. For the whites of the eyes and tongue, marzipan is used.

Pot

The pot needs to be shaped. White chocolate pour over heated cream and boil until homogeneous mass... Cover the pot with it and put it in the refrigerator.

Then you need to chop the almonds, mix with icing sugar and protein. Divide the resulting marzipan into two parts, roll out, then transfer to the finished pot.

"Winnie the Pooh" (cake) is placed on a tray, a pot is moved to the bear.
