I cut off the tip of the cucumbers, and pierce the tomatoes with a fork at the stalk so that the skin does not burst.

I divide the tomatoes by ripeness: red in one jar, greenish in the other.

When pouring marinade on, pour all the water to the end into the jar, a large sediment remains from the salt - you do not need to pour this dirt into the jar.

The first time you pour boiling water over the jars, put them in a cup of very hot water so that the jar does not burst from sudden heating.

Ingredients:

Tomatoes

Water - 1.5 liters

Salt - 2 tablespoons

Sugar - 4 tablespoons

Vinegar 9% -20 milliliters

Dill umbrellas - 1-2 in each can

Horseradish leaves - one leaf in each jar

Peppercorns - 5-6 pieces each

Bay leaf - 2 pieces

Garlic - 3 cloves each

Recipe for assorted tomatoes and cucumbers for the winter:

First, we sterilize jars and lids for a couple. This can be done over a boiling kettle, over a saucepan. They also sterilize jars in the oven, or in microwave oven... In the latter case, the lids can simply be doused with boiling water.


We sort out cucumbers and tomatoes, remove crumpled, rotten or lethargic fruits, tomatoes and cucumbers should be all approximately the same size, dense and strong. Tomatoes may even be slightly unripe, and it is better to use a special pickling variety for cucumbers. We wash thoroughly under cold running water.


We are waiting for the sterilized jars to cool down a little, and put in them chives, horseradish and lavrushka leaves, dill umbrellas, peppercorns, peeled from the husk.


Put the tomatoes tightly on top of the spices, up to half a jar. How smaller tomatoes, the more space you can fill.


Put cucumbers tightly in the second half of the jar. There is no need to be afraid that the tops of the cucumbers will stand without brine; under the influence of boiling water, the tomatoes and cucumbers will "sit down" a little. So we ram the cucumbers and tomatoes for the winter, not sparing it, otherwise we end up with half-empty jars.


Pour 1.5 liters of water into a saucepan, wait for it to boil and pour boiling water over the jars of vegetables. So they stand for 10-15 minutes.



Fill our jars of assorted cucumbers and tomatoes with marinade, roll up (or tighten) the lids. We overturn and wrap up.


Assorted tomatoes and cucumbers will finally be ready for consumption in 1.5-2 months. But they will be stored wonderfully for a year or even two. Put a pot of water on the fire, bring to a boil. We put cucumbers with tomatoes, fill them with boiling water, top - lids. Let it brew for 15 minutes, and pour the water back into the pan.
We prepare the filling: in the water that was drained from the cans, add salt and sugar, vinegar, again bring our brine to a boil, pour into the jars.

Ingredients for 1 L can:

  • 200 g of cucumbers;
  • 200 g of tomatoes;
  • 2 bell peppers (about 250 g);
  • 2-3 sprigs of parsley;
  • 2 black peppercorns;
  • 1 dill umbrella;
  • 4 cloves of garlic;
  • a piece of horseradish leaf (6-8 cm);
  • 1 cm each of horseradish root and hot pepper.

Marinade:

  • 3 l of water:
  • 1 glass of 9% vinegar (in a glass - 200 ml);
  • 0.5 cups of salt;
  • 0.5 cups of sugar.

Cooking assorted cucumbers and tomatoes for the winter:

We select vegetables. We choose small cucumbers, regular shape, with intact skin. Wash the cucumbers thoroughly, cut off both ends and fill with cold water. We sustain this for a couple of hours. If the cucumbers are not very fresh, soak them in water for 3-4 hours, changing the water a couple of times. We select small tomatoes (ideally - plum-shaped), always dense, with intact skin. We wash the tomatoes in cold water... We select the fleshy peppers of the correct shape. Peppers can be of any color. Cut the peppers in half, remove the seeds.

Thoroughly wash parsley, horseradish leaves, dill. We clean the chives.

We clean the horseradish root and cut it into centimeter rings. At the bottom of the sterilized jars, put parsley, half horseradish leaves, a dill umbrella, hot pepper, horseradish root, peppercorns.

Then we put cucumbers, tomatoes and peppers, trying to fill as much of the jar as possible. You can put vegetables for platter in a jar for the winter in any order, no matter what comes first - cucumbers, tomatoes or peppers. Put the remaining horseradish leaves on top.

Preparing the marinade for the platter. Bring the water to a boil, add salt and sugar and, stirring, cook for 2-3 minutes, until the crystals are completely dissolved. Pour vinegar and turn off the heat. Gently fill the jars with vegetables with boiling marinade.

We cover the jars with boiled lids and send them to sterilize. Sterilize liter cans within 20 minutes.

Then carefully remove the cans and immediately seal them tightly. We turn the cans upside down and soak until they cool completely. You can store such a workpiece at room temperature.

We put cucumbers in a jar vertically or horizontally. I close them in liter jars, so I choose small cucumbers so that tomatoes can also fit on top.

Put garlic and dill on top.

We put water on the fire. When it boils, pour boiling water over a jar of cucumbers and tomatoes. Cover with clean sterilized lids. Let it stand for 10-15 minutes. During this time, the banks will become warm.

Drain water from 1 can into a saucepan. I pour assorted tomatoes and cucumbers 2 times, but only cucumbers 3 times. They don't explode for me anyway. Therefore, we put the pot of water on the fire and prepare the marinade. Add 1 tablespoon of salt and 1 tablespoon of sugar to a 1 liter jar. Bring to a boil.

Add black peppercorns to the jar.

Pour in 1 teaspoon of vinegar essence.

Fill the jars with the ready-made marinade. Cover and roll up. We turn the banks over and wrap them up. When they are cool, we put them in a cool place. In winter, nothing will be left of them quickly.
