Today I prepared a delicious Danube salad with green tomatoes for the winter. It turns out that it is always excellent in taste, and it helps very much if all the tomatoes in your country house do not have time to ripen.

Many people think that green tomatoes should not be eaten. Everything is correct. However, if they are served any heat treatment, then all the harmful substances that they contain, immediately "evaporate".

This unripe tomato salad is very easy to prepare. The main thing is to first cut all the vegetables, and then simmer them over the lowest heat. After that, you just need to put the salad in jars and seal them with lids. There is no need to sterilize jars of salad, it is perfectly stored all winter and most often not a single lid on the jar swells.

Ingredients:

  • green tomatoes - 4 pieces;
  • onions - 0.5 pieces;
  • carrots - 0.5 pieces;
  • salt - 3 grams;
  • sugar - 3 grams;
  • peppercorns - 2-3 pieces;
  • bay leaf - 1-2 pieces;
  • vegetable oil- 50-70 milliliters;
  • vinegar 9% (or acetic acid, just do not forget to dilute it with water in the right and correct proportions) - 1 tablespoon.

How to cook Danube salad from green tomatoes

Wash green tomatoes very thoroughly. Cut off any portions of the rind where they are dark or spoiled. Cut vegetables into chunks. Place the tomatoes in a stainless bowl or saucepan.


Peel leftover vegetables. Cut the onion into arbitrary pieces (I cut it into half rings), grate the carrots. Send these vegetables to the chopped green tomatoes.


Then add salt, sugar to vegetables, add black peppercorns, bay leaf. Pour in vegetable oil.


Place a bowl or saucepan over low heat and simmer vegetables for 15-25 minutes. It is advisable to cover the container in which you will stew vegetables with a lid.


Wash the jars, send them to the oven for a few minutes. Arrange the Danube salad in the prepared glass jars... Immediately seal the jars with lids, wrap them with a blanket. After a day, take the salad to the pantry for storage.

Rinse the green tomatoes and cut into slices or wedges. The main thing is only to cut the stalk.




Grind all the remaining vegetables: grate the carrots, cut the sweet red pepper into strips (we have it red and will perfectly decorate the salad with its bright color) and chop onion(quarter or half rings).




Stir in chopped and chopped vegetables (tomatoes, carrots, onions and peppers). Put them in a saucepan and add spices to them: sugar and salt. Stir and then add oil and vinegar. Stir again and let the salad brew and marinate for 1-2 hours. The salad will let in a sufficient amount of juice and it will be stewed in it.

Preparation

  1. First washed in cold water tomatoes and cut them into 6 - 8 pieces.
  2. The sweet peppers are washed, the stalks with the testes are removed and cut into strips 2 - 2.5 cm wide.
  3. Carrots are washed, peeled, trimmed, rinsed in running water and cut into cubes or noodles. The chopped carrots are blanched in boiling water for 10 - 12 minutes and then cooled in running water.
  4. Peel and cut onions into rings.
  5. Chopped vegetables, tomatoes, Bell pepper, carrots and onions, mix with salt and incubate for 15 - 20 minutes and allow the resulting liquid to drain.
  6. After, add sunflower oil, vinegar and stir.
  7. Then, ready salad packaged in prepared jars, on the bottom of which they are preliminarily placed: 2 allspice; 3 pieces of cloves; 1 bay leaf.
  8. Cover with lacquered lids, sterilize cans: 0.5 l - 30 min, 1 l - 35 min and rolled up.

For sterilization, a dense cloth must be placed on the bottom of the dishes, on which jars filled with fruit and pouring are placed. Then hot water is poured into the pan (2 cm below the neck of the cans), brought to a boil and then sterilized.
