I tried making ice cream at home several times, but the experiments were unsuccessful. I was almost desperate, so when I received an invitation to take part in the test drive of the book "Homemade Ice Cream" from the "Culinary Experiments" series of the Eksmo Publishing House, I gladly started to study the book and with excitement got down to business with renewed vigor and faith in success. And how can you not believe it: more than 30 recipes, clear instructions and advice, available ingredients and verified proportions will help you prepare a cool treat for a sultry day. The undisputed adornment of the book is a photo of ready-made ice cream, which suggests not only how to cook, but also how to serve the dessert profitably.

As for my first recipe for this book, I can say that I would rate my work at 4. It seems to me that the taste of the resulting delicacy is very balanced and harmonious, it is less high in calories compared to ice cream prepared on the basis of heavy cream, but the structure of the ice cream itself is still not very uniform, with pieces of ice.

The ice cream industry has come a long way over hundreds of years. From simple frozen juice to modern varieties. Pistachio ice cream, strawberry ice cream, coffee ice cream and dozens of other popular varieties are presented to the consumer to choose from.

Ice cream is prepared in huge factories and small cafes. But it's not a problem to prepare a popular delicacy at home. Of course, it is easier to do this with a special ice cream maker, but you can do without it.

Coffee ice cream

Making delicious coffee ice cream at home will require not only a good and simple recipe, but also some culinary skills.

But a set of products will require the most common, which is easy to buy in any store if they are not available at home.


Coffee ice cream can be made with the following ingredients:

  • cream 0.5 liters;
  • sugar 100 g, preferably brown;
  • milk 150 ml;
  • yolks 5 pcs.;
  • ground coffee 20 g, if not available, can be replaced with instant coffee.

Recipe


  1. After the mixture has cooled to room temperature transfer it to a container and send it to the freezer.
  2. After 20 minutes, remove it and beat the contents with a mixer for a minute. Return contents to freezer. Do this 3 more times.
  3. Then leave the coffee ice cream until it hardens completely for 2-3 hours.

The principle of making ice cream at home

The process of making ice cream at home is quite laborious, it involves the use of special equipment - ice cream makers.

The old-fashioned principle.

We need a cylindrical tub and a bowl (shape) with a tight lid with a diameter and height less than the inner diameter and height of the tub.

Crushed ice mixed with salt is poured onto the bottom of the tub, a bowl is set up, and the space between them is filled with pieces of salted ice. The form should be filled with mass, covered with a lid and rotated in different directions alternately.

Periodically, the mixture must be stirred with a spoon in order to remove the frozen layer of mass from the walls. Repeat several times. The readiness of the mass is determined by appearance- the absence of lumps, the consistency should be thick, like sour cream. After that, the bowl is closed with a lid, covered with a thick cloth on top and kept for 2-3 hours until the mass finally solidifies.

Today, the industry offers household electrical appliances, ice cream makers, for making this dessert at home. The device and mechanism of action are simple.

The base is a double-walled bowl, the interior of which is filled with refrigerant. A stirring paddle is included with the bowl. Rotation and stirring are produced by an electric motor. Cooling is carried out by the built-in compressor in case the ice cream maker is automatic. As for the semi-automatic devices, in this case the process will be quite lengthy, because the bowl with the future ice cream is cooled in the freezer.

As it freezes, at regular intervals, the bowl is removed from the freezer, kneaded and placed back in the freezer. And so on until ready, i.e. obtaining a homogeneous and thick mass.
Those who do not have anything special at hand, but really want to make ice cream at home, should not despair. There is an exit. And it's very simple. Do everything by hand using a freezer, plastic container, spoon and whisk.

The recipe for making ice cream may differ, but the principle of cooling is the same. The mass in the container is placed in the freezer. After 2 hours, beat and leave for another 2 hours. Repeat whipping, removing the frozen layer from the walls of the mold. And again put in the freezer for 2-3 hours until tender.

Classic recipe

Prepare coffee ice cream using a traditional classic recipe.

Products and dosage:

  • Sugar - 250 g
  • Egg yolks - 4 pieces
  • Coffee - 3-4 tbsp. spoons
  • Milk - 750 g.

Cooking process:

  1. Boil milk and dissolve coffee. Suck to room temperature.
  2. Grind egg yolks with sugar "white" and add coffee with milk to them.
  3. Put the mass on low heat. Bring to a boil, stirring constantly.
  4. Remove from heat and, without ceasing stirring, cool to room temperature.

Coffee ice cream with cream

Home-made ice cream with rich coffee and caramel flavors is a delicacy with an amazing taste and is always a success. The recipe is somewhat different from the classic one.

Products and dosage:

  • Powdered sugar - 150 g
  • Egg yolks - 3 pieces
  • Coffee - 1-2 tbsp. spoons
  • Milk - 250 g
  • Cream with 20-30% fat content - 100 mm.

Cooking process:

  1. Boil milk in a saucepan and dissolve coffee.
  2. Dilute 100 g icing sugar in 4 st. l. water. Boil over high heat and, stirring occasionally, bring until thick golden brown.
  3. Remove from heat and, stirring constantly, carefully pour in the cream.
  4. Add the cream and caramel to the hot milk, then gradually add the yolks, whisking all the time.
  5. Put the mass on low heat and keep on it, stirring constantly with a wooden spoon, until the mass begins to stick to the spoon. Don't let it boil!
  6. Remove from heat and cool quickly.
  7. Pour the mixture into an ice cream maker and chill according to the prince of making ice cream.

Frozen marble cake

The original recipe for ice cream cake with coffee and chocolate flavor will allow you to prepare holiday dish at home, in your own kitchen. Replace classic cake or pie on cold dessert, surprise your guests!

Products and dosage:

  • Coffee flavored biscuits - 22 pcs.
  • Butter - 3 tbsp. spoons
  • Cream cheese - 220 g
  • Condensed milk with sugar - 400 g
  • Vanillin - 1 sachet
  • Coffee - 2 tbsp. spoons
  • Chocolate - 100 g
  • Cream 20-30% fat - 200 mm
  • Hot water - 1 tbsp. spoon.

Cooking process:

  1. Crumble cookies, melt butter and mix. Arrange tightly in a suitable foil-lined cake pan.
  2. Whip the cream.
  3. Soften the cream cheese and beat into a fluffy mass, pour in milk and vanillin, carefully stir in the whipped cream. Divide in half.
  4. Dissolve coffee in hot water and melt chocolate. Pour coffee and chocolate into one part of the cheese mass and mix thoroughly.
  5. Place both curd parts alternately on the biscuit base. Stir the layers slightly with a thin knife to obtain marble streaks.
  6. Cover the cake pan and place in the freezer for 6-8 hours.

This recipe will amaze experienced chefs. Prepared ice cream at home can be fried.

You will need:

  • Ice cream - 1 kg
  • Cream with 20-30% fat content - 100 g
  • Coconut flakes - 1 cup

Cooking process:

  1. Divide the ice cream into 8 parts. Dip each ball in cream and coconut flakes, put on a board and freeze for 2-3 hours.
  2. Heat vegetable oil to 190 degrees.
  3. Remove the ice cream balls from the freezer and immerse them in hot oil for 30 seconds. Place on paper towels to drain off excess grease.

Serve immediately.

Culinary secrets

Making coffee ice cream at home will not be difficult for any housewife. The main thing in this business is the desire to pamper your loved ones.

It is important for any dish, how and in what it is served. Serve ice cream in bowls or pretty cups, garnish with whipped cream, and use seasonal berries and fruits that don't overpower the taste and aroma of the coffee.
Each recipe contains coffee. You can use both instant and ground. The difference is that the amount of ground must be 2 times more than the soluble one, and it must be brewed in boiling water.

If you want something unusual and tasty, then we advise you to pay attention to coffee ice cream. Such a dessert will not leave indifferent even coffee lovers! However, you should not get too carried away with such a dessert, since coffee is not a particularly healthy product.

A simple recipe for homemade coffee ice cream

  • instant granular coffee - 4 tablespoons,
  • yolk from 4 chicken eggs,
  • sugar - 1 glass
  • milk - 750 ml.

Cooking process:

  1. Heat the milk, remove from the stove and add coffee to it. Mix well until the granules are completely dissolved. Allow the solution to cool to room temperature.
  2. Carefully separate the egg yolks from the whites. We don't need proteins, so they can be used in another dish. Mix the yolks with sugar until smooth.
  3. Add to the cooled milk with coffee sweet egg mixture, mix well and put the resulting mixture on low heat. Bring to a boil, stirring constantly, then remove from the stove and cool.
  4. The resulting semi-finished coffee ice cream is poured into molds or placed in a container with a tight-fitting lid and sent to the freezer for hardening.

The following ingredients are required:

  • heavy cream (from 33%) - 400 g,
  • condensed milk - 1 can,
  • ground instant coffee- 1 heaped tablespoon,
  • prunes - 100 g
  • chocolate chips, nuts - to taste.

Cooking process:

  1. Pour ground coffee with hot water in a 1: 1 ratio (1 tablespoon of coffee + 1 tablespoon of water), stir.
  2. Beat the cream with a blender until stable peaks appear.
  3. Add condensed milk and dissolved coffee to the whipped cream, beat well again.
  4. The resulting mixture must be sent to the freezer for about 2-3 hours so that it “grabs”.
  5. In the meantime, let's deal with prunes. It needs to be rinsed well and filled with hot water for 5-7 minutes to soften and swell.
  6. Drain the steamed prunes and crush them a little in a blender, literally for 15-20 seconds. No need to turn prunes into porridge!
  7. After the time has elapsed, remove the milk-coffee mixture from the freezer; it should be slightly frozen. Mix well and add the crushed prunes. We send the coffee ice cream back to the freezer until it hardens completely (about 2 hours).
