Cooking a pie with nettles, eggs and cheese


1. Remove the package of dough from the freezer so that it has time to thaw when room temperature during the preparation of the filling.

2. Wash young shoots of nettles thoroughly, wearing household rubber gloves, put them in a bowl and cover with boiling water for 1-2 minutes to get rid of the stinginess. Drain, squeeze nettles and chop finely.

3. Boil hard-boiled eggs, cool in cold water, peel and grate on a coarse grater. Hard cheese also grate on a coarse grater.

4. Fold the nettles into a deep, spacious bowl, add eggs and cheese, break a raw egg, lightly salt to taste, depending on the degree of salinity of the cheese. Mix the finished filling thoroughly.

5. After defrosting, roll the dough a little with a rolling pin, and cut each layer into 4 strips. Place the filling on each strip and gently pinch the edges, forming a kind of "sausages".

6. Grease a mold with a diameter of 22 cm with a piece butter(if the mold is silicone, there is no need for lubrication). Put the "sausages" of the dough with the filling in a spiral shape, seam down, connecting them together by pinching.

7. Brush the top with a lightly beaten egg, sprinkle with black sesame seeds (you can use white if you want). Place the pie pan in an oven heated to 180-200 degrees and bake for 20-25 minutes, until golden brown.

8. Unusual and delicious spring pie with nettles, eggs and cheese is ready. You can enjoy it both warm and cold.

eggs 2 pcs.
salt, pepper to taste
basil, oregano, or thyme, dill

Preparation of the filling:
1. Rinse spicy herbs and nettles, spread on a towel and let the water drain. Tear off the leaves from the stalks of the nettle and chop it all.

2. Nettle should be a lot, it should be slightly warmed up with oil so that it evaporates and decreases in volume. Season with salt and pepper, add diced hard-boiled eggs, herbs and spices.
3. Prepare the dough.

Wash a bunch of nettles and throw them into boiling water for 3-5 minutes. We take out with a slotted spoon in a colander, and when the nettle cools down, separate the nettle leaves from the stalks. Grind nettle leaves in a food processor in mashed potatoes.

Heat the butter to melt it, add nettle puree and flour, raw eggs, salt, sour cream and baking powder. Knead the dough thoroughly.

4. Lubricate the mold with vegetable oil, heat it and pour a little more than half of the resulting dough into it.

5. Put the nettle stuffing with eggs, pour the remaining dough on top. We bake at a temperature of 180 degrees for 40-50 minutes.

Cooking nettle and sorrel pie

1. Remove the puff pastry package from the freezer and set to thaw at room temperature.

2. Sort the greens, remove the coarse sepals and chop finely.

3 For baking, you will need a tall baking dish (about 8 cm high) 22 cm in diameter. Cover the dish with baking paper, moisten it with water, and then brush with butter.

4. Line the thawed and thinly rolled dough into a mold. Line in such a way that it hangs from the sides of the form (this will be necessary in order to cover the filling of the pie with the edges of the dough).

5 Brush the dough with melted butter (40g) and add half the chopped greens. Spread diced feta (or suluguni) on greens, rub with dried rosemary, salt and pepper.

Vegetable oil 60 ml (3 tablespoons)
Seeds ground coriander 1/2 teaspoon
1/2 teaspoon ground cumin seeds
Salt 5 gr (1 teaspoon)
Ground black pepper 3 gr (1/2 teaspoon)

Cooking time:

Preparation time 20 minutes
Baking time 30 minutes


Step 1 Making the dough

In a deep bowl, combine flour, salt, baking soda and vegetable oil. Mix well and add water (not all at once). Knead the dough. You should have a soft, slightly sticky dough. Cover the dough with a cup or wrap in plastic and can be refrigerated for 10 minutes



Step 2 Preparing the filling

Rinse the potatoes well. Peel and cut into slices about 0.5 cm thick. Rinse the nettles, dry and cut at random. If you do not have a young nettle, then first separate the branches and use only the leaves.


In a deep bowl, combine chopped nettle, salt, ground black pepper, ground coriander and cumin seeds, and vegetable oil. Mix well and squeeze with your hand so that the filling gives juice.


Step 3 Preparing the cake

Sprinkle flour on a flat surface. Divide the dough into 2 pieces. Roll out a circle about 0.5-0.7 cm thick.


Transfer the dough to a baking tray. Arrange the potatoes in one layer.


Place nettles on top.


Cover with a second rolled piece of dough and pinch the edges. Make a few holes in the dough with a knife or stick and send to the oven preheated to 175 degrees for 30 minutes.

Ingredients:

  • 100 g green onions;
  • 80 g nettle;
  • four eggs;
  • a piece of butter;
  • sour cream - three tbsp. spoons.

Cooking steps:

  1. Cut the boiled eggs into small cubes, chop the onion and nettle.
  2. Combine the ingredients in a bowl, add sour cream with spices. Remember the filling with a pestle a little so that the greens are saturated with sour cream.
  3. Roll out one sheet of dough, place on a baking sheet and spread the filling evenly.
  4. Roll out a second sheet of dough and cover the pie.

  5. Lay out the filling and bake for half an hour.

Total in the pie is 2128 kcal. It takes two and a half hours to cook.

  • 300 g of sorrel and nettle;
  • 300 g feta cheese;
  • ½ teaspoon of pepper and salt;

  • Cooking in stages:

    1. Chop the herbs, scald the nettles, roll out a little dough and place on a baking sheet so that the sides hang out of the mold. Grease the dough with butter.
    2. Sprinkle half of the herbs and top with the diced cheese, sprinkle with rosemary and spices.
