Strawberry pies are a real treat for lovers of sweet pastries, which you can feast on all year round... For their preparation, they use both fresh and frozen berries, and absolutely any dough. And adding a little cream cheese to the filling or, we get a real culinary masterpiece.

Pies with strawberries from yeast dough in the oven

Ingredients:

  • flour - 490 g;
  • dry yeast - 12 g;
  • granulated sugar - 75 g;
  • kefir - 250 ml;
  • refined vegetable oil - 125 ml;
  • salt - 7 g;

For filling:

  • strawberries - 550 g;
  • granulated sugar - 155 g;
  • potato starch - 45 g;

To lubricate the top:

  • egg yolk - 1 pc .;
  • vanillin - 1 g;
  • water - 7 ml.

Preparation

Combine kefir, vegetable oil, salt and granulated sugar in a bowl or saucepan, mix and heat until warm to a pleasant hand. Then add sifted flour mixed with dry yeast and knead soft dough... We define it in a warm place for thirty to forty minutes.

While the dough is coming up, rinse the strawberries and leave them in a colander for a while to drain the water. Then cut the berries into cubes or slices.

When the dough has approximately doubled, pinch off a little from it, roll up the balls and place them on a floured surface.

From each ball we form a cake with our hands or a rolling pin, pour a little granulated sugar into the center with a teaspoon, chopped strawberries sprinkled with starch on top and connect the opposite edges of the dough. Give the pie the desired shape and place on an oiled baking sheet.

We heat the oven to 190 degrees, coat the surface of the pies with yolk whipped with water and a pinch of vanillin, and send them to bake for fifteen to twenty minutes.

Puff pastry pies with strawberries and cream cheese

Ingredients:

  • - 480 g;
  • strawberries - 375 g;
  • cream cheese- 200 g;
  • granulated sugar - 175 g;
  • potato starch - 90 g;
  • vanilla sugar- taste;
  • powdered sugar.

Preparation

Defrost puff pastry, roll out and cut into squares. We coat each square with cream cheese, stepping back one centimeter from the edges, pour granulated sugar mixed with vanilla sugar in the center with a teaspoon and place the previously washed and chopped berries. To prevent the strawberry filling from flowing out of the pies, sprinkle the strawberry berries with a small amount of starch.

We connect the opposite edges of the dough and seal the pie with the tines of a fork. We make several cuts on top of the pies for steam to escape, put them on an oiled baking sheet at some distance from each other and send them to the oven for twenty to thirty minutes, preheating it to 220 degrees.

It is difficult to find a person who would not like fresh, aromatic pastries prepared at home. Among the many recipes for such dishes, pies with frozen strawberries stand out - sweet and ruddy beauties that will decorate any table, including a festive one. And the fact that the berries are not used in them fresh makes this delicacy also incredibly convenient for cooking at any time of the year.

How to cook frozen strawberry patties in the oven

  1. We take the berries out of the freezer and leave them to defrost at room temperature.
  2. Now we need to deal with our yeast dough, so we pour our water into a convenient container and heat it up a little. It is important to note here that you do not need to heat the liquid very much - the high temperature will ruin our yeast. The water should be slightly warmer room temperature.
  3. Pour yeast into water, stir and leave for a while.
  4. Pour warm milk into a sufficiently deep bowl, add 3 chicken eggs, and also add salt and both types of sugar. Mix everything well until the solid particles are completely dissolved.
  5. We put the butter in the microwave for a while, so that it becomes completely liquid, if desired, you can use a water bath. Pour the ghee into the milk mixture, pour in the already infused yeast here.
  6. Gently pour the sifted flour into our liquid and stir constantly. It is important to knead the dough thoroughly so that it is smooth and soft.
  7. When the dough is kneaded, put it back in a deep bowl and cover with a cloth. It should rise properly, so set it aside for a couple of hours. Just do not forget to check the dough from time to time, it can increase in volume too much, so at such moments it should be tamped a little.
  8. Around this time, our strawberries should have completely thawed, so we drain the released liquid from it and fill it with sugar. If after a few minutes you find more juice, then also drain it.
  9. On sprinkled wheat flour spread the dough on the work surface. We need to divide it into small pieces, from which we will subsequently make pies. Their size depends only on your wishes, so by rolling out one such ball of dough, you can roughly decide how large the pie will turn out.
  10. Put some strawberries in the center of each rolled pancake, then pinch the edges and put the blank on a baking sheet covered with parchment.
  11. As you remember, we have one more egg left, we need it for lubrication. So we break it into a small bowl, beat it with a fork and gently grease our pies with the resulting mass. If one egg is not enough, take two.
  12. We send our baking sheet to the oven for forty minutes, which should be heated to 190 degrees. The characteristic ruddy color of the dough will tell you about the readiness of the pies.
  13. After that we take out the pastries, let them cool down a bit and serve for tea.

By the way, if you don't want to mess around with making dough, you can replace it with a purchased puff pastry. You need to fold such pies in the form of envelopes, and they are in no way inferior in taste to those that we cooked in this recipe.

Frozen strawberry and rhubarb patties

  3. In the bowl in which we have chopped cottage cheese, add 4 chicken eggs, 2 tablespoons of sugar and sour cream. Mix everything until the mass becomes homogeneous. For convenience, you can use a mixer.
  4. Mix separately the sifted flour, salt and baking powder. Then carefully add the dry mixture to curd mass and knead the dough. Cover with foil and set aside.
  5. If our rhubarb was frozen unpeeled, then we clean it, and then chop it, we also cut the strawberries.
  6. Pour water into a saucepan, add 2 tablespoons of sugar and add rhubarb. We put on the stove for a few minutes until the rhubarb softens, after which we drain the liquid, and send the slices to the strawberries.
  7. Pour the remaining 2 tablespoons of sugar and starch into a bowl, mix our filling.
  8. Divide the dough into small balls, roll out flat cakes from them and put 1 tablespoon of our filling in the center of each, pinch. Put the formed pies on parchment, which is laid on top of the baking sheet.
  9. Beat the remaining egg with a fork and grease our pies with it. After that, we put in the oven for a third of an hour, setting 180 degrees.

Due to the fact that we have cottage cheese in the dough, it will turn out to be very soft, so little sweet lovers will definitely be delighted.

  • Fat cottage cheese - 0.3 kg;
  • Vanilla sugar - 1 pack;
  • Dry yeast - 4 tsp;
  • Milk - 150 ml;
  • Flower honey - 2 tsp;

  • Salt - 1 tsp
  • How to bake frozen strawberry patties

    1. By tradition, we put the strawberries to defrost, so that this happens faster, you can put them in a colander.
    2. We need to activate the yeast. To do this, heat half of our milk a little (just not much), add yeast and add honey and a little flour. We remove the place in a warm place for half an hour.
    3. When the specified time has passed, break 2 eggs into a container, add 100 grams of sugar, ghee, vanilla sugar, the remaining half of the milk and salt. Stir, and then add a little flour and knead the dough.
    4. We set aside the resulting mass to the side, covering with a cloth. It should rise properly.
    5. Finely chop the strawberries, add cottage cheese, 100 grams of sugar, 1 egg and starch. We knead everything well.
    6. Divide the dough into 16 identical balls, then roll them out, and put the filling in the center of each. After that, pinch the pies, put them on a baking sheet oiled or covered with parchment.
    7. Beat the last egg, grease our pastry. We put in the oven for a third of an hour at a temperature of 180 degrees.

    These pies with frozen strawberries and cottage cheese will become a real decoration of any table. The most interesting thing is that the kids sweep away this healthy food at the speed of light, although they do not really like cottage cheese in its pure form.

    500g strawberries
    100g sugar
    2 tbsp corn starch
    370g flour
    250ml mineral water
    3g salt
    100 butter at room temperature
    350g vegetable oil for frying

    1) Cut the washed and peeled strawberries into cubes.
    2) Cover the chopped strawberries with sugar and leave for 30 minutes to let the juice flow. After 30 minutes add 2 tablespoons of cornstarch and stir.
    3) Pour the strawberries into a saucepan and cook over low heat, stirring constantly until it boils. After boiling, boil for a few more minutes so that there is no starch aftertaste. Remove from heat and allow to cool completely.

    Making quick puff pastry

    1) Sift flour into a bowl, add a pinch of salt and mineral water.
    2) Knead a soft soft dough. It should be flexible and pliable. You may need a little more flour.
    3) Ready dough roll out into a layer 5 mm thick, grease the dough with softened butter. Cut the dough into strips 2-3 cm wide, lay the strips on top of each other in a column, turn all the layers into a roll, lay the roll flat and roll it out with a rolling pin to a thickness of 5 mm, sprinkling flour on the table so that the dough sticks.
    The more you roll and cut the dough, the more flaky and crunchy the pies will be. Repeat this process 5 times.
    4) Roll out the layered dough into a 40x30cm layer, cut the layer into 6 equal pieces of about 10x12cm.
    5) To prevent the envelopes from sliding apart during frying, grease the edges around the perimeter with a beaten egg.
    6) Strawberry filling put on one side of the dough, fold the pieces in half from one edge to the other, fasten the edges with a fork, pressing lightly so that the dough does not come loose when frying. Now grease each pie with an egg.
    7) Fry the pies on a preheated vegetable oil for 2-3 minutes on each side. As soon as the edges are browned, immediately turn it over.
    8) Ready pies place on a paper towel.
