First, you can choose an excellent quality sausage yourself. Second, it's very easy to bake a hot dog bun at home with your own hands. And third, ketchup and mayonnaise can also be made at home. These homemade hot dogs can be taken with you outdoors or just for a walk.

The main ingredient in our buns is flour. The consistency of future baking depends on it.

There are five main types of flour. This is a chopper, krupchatka, as well as the second, first and highest grade. Unlike meat products, flour varieties from the highest to the lowest do not lose quality, they simply have different properties. The type of flour depends on the grinding and peeling. The lower the grade of the flour, the coarser it is grind and the greater the benefits. Top grade has the finest grind and is best cleaned.   1. We start making the dough. First, take the milk and heat it slightly. It should be warm enough, but not hot. Add a spoonful of sugar to it and stir.


    Did you know? Don't be afraid to add sugar to the dough. It is not needed for taste, but in order to activate the yeast. Such a small dose will not affect the taste of the buns.

  2. Add yeast to warm milk, stir. Leave until foam appears on the surface. Then add vegetable oil there.

  3. Sift flour and add salt to it.
  4. Start gradually pouring milk and other ingredients into a bowl of flour. You can stir it with a whisk or with a spoon. Stir until dough forms.
  5. Then continue kneading it with your hands. If the dough is too runny, add a little flour.

  6. Divide the dough into four portions. Roll out each ball. Then cover them with a tea towel and leave to rise for 40 minutes. Necessarily in a warm place. I advise you to prepare the rest of the hot dog ingredients at this time.

- 500 g of wheat flour;
- 70 ml of milk;
- 200 ml of water;
- 6 g dry yeast;
- 1 teaspoon of salt;
- ¾ teaspoon of sugar;
- 2-3 teaspoons of sesame seeds.

We measure required amount flour and sift it twice to saturate it with oxygen as much as possible - then the baked goods will turn out to be more magnificent.





We heat the milk to a warm state - up to 33-35 degrees. This can be done in a small saucepan on the stove or in microwave oven... Just do not overheat, otherwise the yeast may die in a hot environment (and if the milk is cool, the yeast will not start working right away - the process will take a long time). Pour milk into the bowl of a mixer or food processor (or into a bowl if you will knead everything by hand), add sugar.





Then put yeast to milk and sugar, mix.





The next ingredient is flour. But we do not add all of it, but only 1 tablespoon.







We mix well - this is what we have got a dough. Cover the bowl with a towel and put it in a warm place for 10-12 minutes.





During this time, the yeast will start working, the mass will be covered with a foamy "cap". The dough is ready, you can proceed to further work with the dough.





Now, to the same temperature as milk, we heat the water and add it to the dough.





We put the salt. We mix.







We start little by little, about half a glass, add flour, stirring thoroughly after each portion.

We keep the baking sheet with the blanks for 20-25 minutes. During this time, they will approximately double in volume.





Lubricate the hot dog buns with warm water and sprinkle with sesame seeds until they are dry.
You don't need to sprinkle sesame seeds - it's a matter of taste.





We put the buns in an oven preheated to 190 degrees and bake for 12 - 15 minutes. The finished buns will acquire a light golden color. If you doubt the readiness of baking (sometimes ovens, especially gas ovens, behave strangely), then it is better to check the dough as follows - pierce it with a wooden skewer. After that, the skewer should come out of the dough dry, without traces of dough.





We take out the finished buns from the oven and immediately, on a baking sheet, sprinkle with water. Cover immediately with a towel folded in 2-3 layers. This will give the buns a soft crust.




We keep the buns in this state for 10 minutes, and then remove the towel and cover with a light napkin. We soak the buns until they cool completely. The hot dog buns are then ready to serve.

  • whole grain wheat flour 160 grams (1 cup)
  • milk 250 ml
  • butter 25 grams
  • dry yeast 1 tsp
  • salt 1 tsp
  • sugar 1 tsp

Preparation

    It is very convenient to prepare bun dough using a bread maker, food processor or mixer with spiral attachments. In this recipe, the dough was kneaded in a Binatone BM-2068 bread machine.
    Pour milk into the oven bowl. Melt the butter and pour it over the milk.

    Now add the dry ingredients: both flour, salt, sugar and yeast.

    Select the "Bun Dough" kneading mode (or any other yeast dough kneading mode in your oven).
    If you knead the dough with a mixer or by hand, knead until smooth. The consistency of the dough will be pretty steep.

    After the first kneading, let the dough rest for 20 minutes, and then knead for another 5-6 minutes. Then send the dough to a warm place to rise, covering it to keep it dry. The bread maker itself will perform all these actions.
    The dough is ready if it has doubled in volume. This means that you can start shaping the buns.

    Divide the dough into 8 pieces.

    Roll each part into a flat cake 3-4 mm thick.

    Then roll the cake into a tight roll. This will be the bun. This molding allows the dough to hold its shape and maintain its rounded shape.

    Place the buns on a large dish covered with a towel and sprinkled with flour.
