It is assumed that you have a piece of boiled or baked pork in stock, in which case it will take very little time for you to cook the gyros. Vegetables for the filling can be seasonal or your favorite. I sometimes add French fries to the filling, this time I cooked gyros without it.

"Gyros" is the Greek version of shawarma served either in pita or in a thin tortilla. The ingredients for the filling and sauce are almost identical to those found around the world. The exception, perhaps, is that in Greece you can find gyros with lamb, chicken and pork, although the traditional version of the Greek gyros is with lamb.

So, let's prepare all the products according to the list.

First of all, let's prepare the gyros sauce. To do this, mix mayonnaise, garlic, passed through a press, curry powder, salt, ground black pepper and dill. The sauce is ready.

I will cook two servings, so I will divide all the ingredients indicated in the recipe by two gyros.

Put the tortilla on a cutting board. Red cabbage chop finely. Place the cabbage on one side of the tortilla.

Cut the pork into pieces for one bite and put the meat on top of the cabbage.

We spread half of the sauce, we do not regret the sauce, cover the meat with it completely.

Cut the tomato into half rings and also spread it in the next layer.

Cut the fresh cucumber into cubes, spread over the tomato.

Finish the filling with a layer of bell pepper cut into rings.

You can, if desired, add onions and french fries, and green onions, and lettuce leaves.

Roll up the tortilla with a roll or envelope. Do the same with the second tortilla. Put the rolled tortillas in a dry, well-heated frying pan and fry on all sides for 2 minutes.

Serve the homemade Greek pork gyros hot, cut in half.

This quick gyros is perfect for a snack, breakfast or a hot snack.

How shawarma is made in Greece

According to one of the widespread versions, the progenitor of gyros was turkish kebab, which appeared on the land of Hellas in the first decades of the 20th century, together with refugees from the Ottoman Empire. Gradually traditional recipe delicious and simple shawarma spread throughout Greece, but no one began to stick to it. On the contrary, the Greeks experimented with enthusiasm, replacing sauces with yogurt and pita bread with pita.

The name of the Greek shawarma - "gyros" - comes from γύρος, which means "twist", "turn". In this case, the sound "g" is not pronounced, and in the English transcription the word sounds like yeh-ro.

Today in Greece, any type of meat is used to prepare gyros, including their combination (there are even original recipes with fish). The meat is roasted on a vertical rotating skewer and then cut into thin slices. Also, tomatoes, cucumbers, peppers, onions, parsley, lettuce and other vegetables and herbs can be put in Greek shawarma.

Be sure to add French fries, yogurt or tzatziki sauce and a variety of spices. The filling is wrapped in a traditional round pita bread or served on a plate. The second option is typical for dining at home or in a restaurant, while the first is considered more common and convenient for.

The most important ingredient in gyros is dzatziki... This cold sauce is made from yogurt fresh cucumber and garlic, adding salt, fresh herbs. However, in Greece there are many different recipes dzatziki, which may also mention pepper, lemon juice or other ingredients - the taste of the sauce usually benefits from this.

The largest gyros in the world was prepared by the Greek restaurateur Sami Eid in Chicago. Shawarma weighed 8 866 pounds, or more than 4 thousand kilograms. To set the record, meat was cooked on 72 grills at the same time.

Despite the fact that gyros is a popular and inexpensive street food, everyone in Greece loves it, regardless of status and social status.
