You can pour soy sauce over the Greek salad. Dressing for Greek salad classic recipe

Delicate feta sheep cheese, finely chopped fresh vegetables and olives - this is the recipe for the traditional national Greek salad. And to give it a completely new taste will help the sauce, which can be both classic olive, and bold mustard or any other.

Classic dressing

The Greeks prefer to season their dishes with a sauce made with olive oil. At the same time, something is always added that gives a pleasant sour taste. And for the scent, fragrant herbs are crushed - parsley or oregano.

There is no particular difficulty in cooking:

After that, the mass should acquire a thick consistency. This means that it is ready for use.

With olive oil

There are also more sophisticated versions of olive oil based sauce. Fans of a spicier and sweeter Greek salad will appreciate the cane sugar and garlic dressing.

Ingredients:

  • olive oil- 100 ml;
  • Apple vinegar- 50 ml;
  • cane sugar - 2 tsp;
  • garlic - 2 cloves;
  • salt and ground pepper to taste.

Cooking method:

Such a dressing will give Greek salad sharpness. But it is important to correctly mix the garlic into it. Many traditional Greek food lovers believe that garlic does not go well with this salad. However, if you grind it well, then it will give its taste to the oil, but it will not be too bitter and interrupt the delicate taste of goat cheese.

Greek salad dressing with soy sauce

Soy dressing is good because it completely eliminates the presence of salt in the salad, plus enriches it with protein and microelements. The Greek salad turns out to be very satisfying.

Have to take:

  • olive oil - 4 tablespoons l;
  • lemon juice- 2 tbsp. l;
  • soy sauce - 2 tbsp l;
  • liquid honey - 1 tbsp. l.

Cooking steps:

The finished dressing has a special sweet and salty taste. You can make it even more piquant by adding a little black pepper.

Yoghurt dressing

A sauce based on yogurt or sour cream is called tzatziki. This element of traditional Turkish-Greek cuisine goes well with light vegetable and curd salads.

You need to take:

  • sheep milk yogurt or sour cream 10-15% - 1-1.5 cups;
  • fresh cucumber - 1-2 pcs;
  • garlic - 3-4 cloves;
  • table vinegar (apple or wine) - 0.5 cups;
  • olive oil - 3 tbsp l;
  • salt, ground black pepper, chopped or dried dill - to taste.

How to cook:

Dzatziki goes well not only with Greek salad. It is also served with meat or toasted bread. But it is to this salad that dzatziki gives a special freshness and lightness.

With mustard and garlic

Mustard sauces for Greek salad are sweet and savory. It all depends on the type of mustard used.

Ingredients:

  • 2-3 small cloves of garlic;
  • 1 teaspoon dried oregano;
  • 0.5 teaspoon of Dijon mustard;
  • 50 ml red wine vinegar;
  • 100 ml olive oil;
  • salt, pepper and honey to taste.

Cooking steps:

  1. Garlic must be peeled, washed and passed through a garlic press, then put into a deep container and add chopped dried oregano, mix;
  2. Add mustard to the mixture and pour in vinegar, mix well again;
  3. Gently pour in a thin stream, constantly stirring the sauce, olive oil. While stirring, wait for the dressing to become a homogeneous dense mass.

Since not all connoisseurs of Greek salad love the combination of fresh vegetables and honey, the latter is added as desired. Sweet Dijon mustard, if necessary, can be replaced with any spicy mustard. But professional chefs note that the sauce is much tastier with sweet mustard.

With mayonnaise

Mayonnaise with olive oil is best in mayonnaise sauce for Greek salad. But if you wish, you can use any mayonnaise.

What you need to take:

  • olive oil - 50 ml;
  • lemon juice - 50 ml;
  • garlic - 1-2 cloves;
  • liquid honey -1 tbsp. l;
  • mayonnaise - 2 tbsp. l;
  • red wine vinegar - 2 tsp;
  • pepper and salt to taste.

How to do:

  1. Mix crushed garlic with mayonnaise, honey and salt;
  2. Continuously stirring, pour olive oil into the base of the sauce, and then lemon juice;
  3. At the last stage, vinegar is introduced into the mass, after which everything is thoroughly mixed.

The finished sauce is put into the refrigerator for a short time and served chilled.

Filling with two types of oil

For lovers of a particularly fatty sauce, a dressing with two vegetable oils at once was invented.

You will need:

  • wine vinegar - 100 ml;
  • garlic - 1-2 cloves;
  • dried basil - 0.5 tsp;
  • sugar - 1 tbsp. l;
  • sunflower oil - 200 ml;
  • olive oil - 200 ml;
  • pepper and salt to taste.

How to cook:

This dressing is very unusual, tasty and rich in taste. But the salad served with it should be eaten as soon as possible so that the sediment does not have time to stand out.

With balsamic vinegar

Despite the fact that wine or apple cider vinegar is actively used in many recipes for sauces for salads in Greek cuisine, dressing with balsamic vinegar differs from analogues in nuances in the cooking technology. The main thing is to take quality balsamic vinegar... Otherwise, the dish will be spoiled.

For her you will need:

  • olive oil - 150 ml;
  • balsamic vinegar - 50 ml;
  • Brown sugar- 1 tbsp. l;
  • garlic - 1 clove;
  • salt and spices to taste.

Preparation:

  1. Whisk the balsamic vinegar, sugar and crushed garlic;
  2. Add spices;
  3. Pour in the butter, whisking the sauce.

After the dressing is evenly thick, you can pour over the salad.

  1. You need to prepare the sauce in a bowl that is not made of metal. For example, in glass or china;
  2. The best lemon juice for Greek salad is one that has been squeezed on its own. And so that the seeds do not get into the salad, squeeze the lemon into a separate container, and only then pour the resulting juice into the dressing;
  3. Not everyone loves a Greek salad with a sauce that contains garlic. And so that the garlic only transfers its juices to the salad, but at the same time it is not too pronounced, it is chopped as small as possible on a grater, chopped with a knife or crushed in a garlic press;
  4. Dried oregano can be added already chopped, but this seasoning will convey more aroma and taste if you crumble it yourself into a dressing;
  5. For the preparation of sauces for Greek salad, you should always use high-quality extra virgin olive oil;
  6. If the oil is added to a balsamic or vinegar base, then it must be poured in a thin stream, constantly stirring the base;
  7. Despite the fact that it is undesirable to change anything in the recipe, very often during cooking it becomes necessary to take plain white instead of brown sugar. This is possible, but remember that brown sugar is less sweet. Plus, it absorbs much more moisture. Therefore, when replacing sugar, you need to pour less liquid into the sauce and add a little more acidic foods and salt.

In addition to the existing types of dressings for Greek cuisine, you can always come up with your own unique recipe.

Cooking a Spicy Greek Salad Dressing

Traditional Greek Salad Dressing Recipe Video

The video shows the process of making a simple classic spicy salad dressing "Greek".

Now you know, how can you dress a Greek salad at home ... It should be noted that this is not the whole list of possible options for sauces for Greek salad.You can experiment with other ingredients, depending on your preference. Add to the dressing and soy sauce, and mayonnaise, and boiled yolk, and nutmeg, and corn oil.It happens that Greek salad is served without dressing.

By the way, such sauces are suitable not only for this dish, but also for other vegetable salads.If you are interested in lungs vitamin salads, you can cook incredibly healthy, or treat yourself and loved ones great. Or use with sauerkraut or appetizing.

Fresh vegetables this salad requires, in general, the same as always: tomatoes, cucumbers, bell pepper, lettuce, sweet onions and some spicy herbs (dill and parsley). Naturally, all vegetables and greens must be ripe and of good quality. Olives (olives) are best taken of the variety that you previously liked to taste. Additionally (for making salad dressing) you will need extra virgin olive oil, balsamic modena vinegar and ready-made dry seasoning for Greek salad.

Seasonings for Greek salad are produced in this form by many manufacturers, but personally I liked this seasoning from the Polish manufacturer Kotanyi the most.

There is nothing criminal in the composition. And it seems that the composition is simpler than ever. But at home I have never been able to repeat the taste of this seasoning exactly, although I experimented repeatedly. The seasoning is incredibly tasty, it is easy to prepare it (just mix the ingredients), and such a bag costs only 37 rubles. It is sold in any hypermarket. In general, I stopped the experiments, resigned myself and just buy this seasoning.

For Greek salad, you will definitely need salted curd cheese. Anyone will do: even the Greek "Fetaxa" or "Sirtaki", even the usual salted feta cheese (weighed or packaged - no difference). I usually take salty Adyghe cheese... We sell it by weight and is always fresh and lightly salted, as I like most of all.

For Greek salad, I always take a large ceramic dish with rather high sides. I put all the components there. But first, all the ingredients of the salad need to be prepared. Cut the salad from the pot and rinse well with running water.

The washed lettuce leaves should be spread out on a dry kitchen towel and allowed to drain thoroughly. Salad usually dries longer than all other vegetables, so it is logical to start with it.

We clean the bell pepper from seeds, cut in half and rinse well.

Carefully separate the stalks from the tomatoes, wash the tomatoes under the tap.

We clean, as usual, 2 medium-sized sweet onions. I try to take multi-colored ones - it turns out so prettier. Wash the bulbs and cut them into halves lengthwise.

Put all the washed vegetables on a towel to the salad so that they also dry out a little.

Meanwhile, while the vegetables are drying, make a salad dressing. Pour the finished Kotaniy seasoning into a glass.

It looks like dried herbs with powdered dry additives.

According to the instructions on the bag, you need to dilute the contents in 7 tbsp. spoons of water. But I always breed in only 4 tbsp. spoons of cold boiled water. I don't like it when the salad is floating in the dressing. Therefore, empirically, I selected my proportions for the cultivation of dry seasoning.

Seasoning with water looks like this, its color appears immediately. Green.

I add 2 tbsp there. tablespoons of balsamic grape vinegar.

I mix well. The dressing in the glass naturally darkens. But so far everything is mixed fairly uniformly.

Next I pour in 4 tbsp. tablespoons (not 5, as indicated on the package) of delicious olive oil.

I stir it. But the oil still remains on top. This is fine. Just at the moment when I pour the salad, the seasoning will need to be actively mixed.

This is what the finished Kotaniy Greek salad dressing looks like. Maybe not very much. But it tastes ... just divine!

Next, we take lettuce leaves, from which the water is almost completely glass (ideally, the leaves should be completely dry). It is not necessary to cut the salad, you can just tear it with your hands into large pieces. Which I did. Put the salad in a bottom layer on a dish so that it completely covers the entire bottom.

Next, I chop the bell pepper, quite coarsely. You can be guided by cutting in this salad approximately by the size of olives.

Tomatoes (with a greenish core removed, winter is outside) I cut into approximately the same slices. I put them on the pepper. By the way, as for me, there are never too many tomatoes in a Greek salad. As for me, the more the better.

Cut the sweet onion into thin half rings and sprinkle generously with salt on top. To then gently separate it with your fingers into thin rings. More (except for onions), you do not need to salt anything in this salad. The salt is already added to the salad dressing originally.

Transfer the onion, which has let the juice under the influence of salt, onto the tomatoes.

Cut into large bars fresh cucumbers and put them on a layer of salted onions.

On the cucumbers you need to put cubes of salty curd cheese which we have already prepared in advance.

And on top of the cheese, you need to artistically scatter black canned olives. Naturally, beforehand, completely drain all unnecessary liquid from the can.

Personally, I like Spainolli's black olives the most. But, in principle, you can put both black and green in this salad at the same time. And you can only green canned olives.

Sprinkle our salad with finely chopped fresh herbs on top. Then, actively stirring with a spoon in a glass, slowly, spoonfully, add the entire dressing to the salad. We try to distribute it evenly and water it everywhere the same.

I never mix Greek salad. It mixes well by itself. At the time when it is transferred with a spoon to plates.

It turns out something like this. Personally, it seems to me that a Greek salad may well decorate any festive table.

In winter, cooking it, of course, turns out to be a little expensive. But, in my opinion, this is one of the first courses on a hearty festive table which becomes empty very quickly.

After all these New Year's, rather heavy and mayonnaise "Olivier" and "Vikings", Greek salad always flies away with a bang. Therefore, I always prepare it for the table at Christmas to please both guests and my family.

With Kotaniy dressing, Greek salad always tastes perfect. Guests often ask me what I add to my Greek and why I always have it so extraordinarily tasty. Not like everyone else, but this one, special ... But I always answer that I just generously add my good and cheerful mood to the salad. Only my sister knows a little culinary secret with Kotanyi seasoning. And now - all the readers of this recipe too :)
