While the mass is being laid out in tins, the oven heats up to 190 degrees. We send the completed form to it and wait 20-25 minutes until the muffins are baked. With the filling, baking takes a little longer.

This pastry can be made not only with milk, but also with kefir. The dough also turns out to be very airy, light, tender. We will change the filling in the recipe, then we will get muffins with chicken and cheese with original taste... And if you add mushrooms as a filling, because such ingredients are perfectly combined with each other, then the cupcakes will become fragrant, even more appetizing.

Cooking method

Everything the right products we spread it on the table so that it is at hand. Next, we act in this order:

  1. Break eggs into a cup, add salt and pour in kefir. We mix everything.
  2. Add soda to the kefir-egg mass, beat with a broom. The mixture should foam a little.
  3. Pour in flour, knead a homogeneous dough without lumps. The consistency will turn out like for pancakes - thickish.
  4. The cheese is grated.
  5. The fillet is cut into small pieces.
  6. The greens are crushed.
  7. If mushrooms are selected, they are cut into small slices, and if garlic, the cloves are passed through a garlic press.
  8. Add chopped stuffing products to the dough and mix everything gently.
  9. We take a large spoon, fill the oiled molds with the resulting mass.
  10. Preheat the oven to 180 degrees, bake for 20-25 minutes.

The readiness of the cupcakes can be determined by golden brown... Or, piercing the product with a dry toothpick - the dough should not stick to it. Chicken muffins are served both hot and cold.

muffins with cheese and herbs

The third simple and light snack for New Year's table- cheese muffins with herbs.

It is also a very tasty and easy-to-prepare appetizer, very democratic - suitable for almost any alcohol. It does not require special skill and a lot of time, but it looks great on the table and smells very fragrant, moreover, if you use some aromatic herbs in the preparation - parsley, basil or a little tarragon. And also - salty spicy cheese. Absolutely a win-win snack option, try it!

I use for these muffins:

  • Butter, melted - 100 g
  • Flour - 250-300 g
  • Soda - 1/2 teaspoon
  • Baking powder - 2 teaspoons
  • Sugar - 50 g
  • A pinch of salt
  • Kefir - 200 ml
  • Egg - 2
  • 100 grams of spicy salty spicy cheese - Parmesan or hard ricotta, but in general any
  • half a teaspoon of turmeric or curry

From this I get about 16-18 muffins, which is quite enough even for a large company.

In muffins, the whole point is that dry ingredients and "wet" ingredients are mixed separately, and then add wet to dry. So: I mix flour, baking powder, salt, soda and sugar in a large bowl. Many people advise to sift flour thoroughly, but I sometimes neglect it. After that, I add finely chopped parsley (30 grams) and cheese - 100 grams, finely grated to the dry ingredients. Options: instead of parsley - dill or basil (green), sometimes I add a little cilantro and a crushed head of garlic to the parsley (such muffins go with a bang to beer and wine). In another bowl I mix melted butter, kefir and eggs. Then I pour the liquid into the dry one and mix everything slightly. In my opinion, there should be lumps (I always have them, and the muffins are great). The dough should be thick and keep its shape, as they say.

Second stage: I take either a standard muffin mold (this):

I put special corrugated pieces of paper for muffin muffins in the forms. And fill the holes in the form by 3/4.

I bake in an oven preheated to 180-200 degrees. I bake for 20 minutes.

Separate silicone molds for cupcakes / muffins. They are more convenient, well, for me in any case - they do not need to be lined with paper molds.

You can also bake muffins in a double or triple paper form - then it is better to fill it halfway so that the muffins do not deform during baking.

In general, muffins are such a thing that you can experiment with every time: when making berry muffins, I add a little to the dry ingredients - literally 1/4 teaspoon of ginger or turmeric powder. I add a tablespoon of cinnamon to the apple muffins in dry ingredients, and in ready dough- I add 2-3 large apples, finely chopped (cubes about 1 cm by 1 cm). You can also add finely chopped pear. If you are tired of sweet muffins, then you need to put less sugar in the dough itself (50 grams), and the filling can be any - from finely chopped ham-sausages to the chicken breast left over from yesterday.

In muffins, the main thing is to understand the cooking method - dry separately, wet separately, then mix slightly, and the filling can be completely varied, where your imagination takes you. Just as I said, you can add some spices to dry ingredients - turmeric, parsley, ginger, ground red bell pepper.

  1. We take utensils convenient for you to knead the dough. We break the egg, pour in the vegetable or olive oil, stir.
  2. Then pour in kefir. Sour milk is also fine, as well as buttermilk left over from whipping homemade butter.

  3. We rub the Adyghe cheese on a coarse grater or grind it with our hands into crumbs. Other types of cheese are also suitable - Cheddar, Parmesan, Gruyere, Russian, as well as ordinary village feta cheese. You can find recipes cheese muffins, for the preparation of which is used processed cheese(for example, "Druzhba", "Creamy", "Russian"), and sour cream is taken instead of kefir.

  4. Add shredded cheese to a bowl. Stir the dough.

  5. Add salt, black pepper to taste, add soda. You can also add some spices to taste. Vinegar or citric acid you do not need to extinguish soda. It will be enough that it mixes with kefir, which contains acid.

  6. Peel and grind the garlic with a press.

  7. Finely chop fresh dill.

  8. Add chopped herbs, garlic and sesame seeds to the dough. Sometimes, for a change, I replace sesame with caraway seeds. The result is a spicy taste.

  9. Stir the dough well with a spatula or whisk.

  10. Add carefully sifted wheat flour, mix. The next time you are doing culinary art, you can put half of wheat flour and half of corn. Ready baked goods on the cut will have a beautiful yellow tint.

  11. Put the finished dough in a muffin tin. Fill the molds by 2/3 parts, because our delicacy will increase in size when baked. I prefer to use modern Silicone forms from which the baked goods can be easily taken out without sticking. Old-style metal molds can also be used, but they must first be greased. vegetable oil with a whisk.

  12. Cheese muffins are baked on kefir at 180-190 degrees, about half an hour.
