3/4 cup flour
1/3 cup crushed nuts
250 g grated mascarpone cheese
125 ml heavy cream
30 g dark chocolate broken
4 eggs
2 tbsp. tablespoons of warm boiled water
3/4 cup caster sugar
1/4 tbsp. tablespoons of soda
2 tbsp. Frangelico liqueur spoons
1 vanilla pod
white chocolate for decoration
5 tbsp. tablespoons of powdered sugar for sprinkling
ghee for lubricating the mold

How to make Boucher de Noel chocolate-nut roll:

  1. Turn on the oven to heat up to 180 degrees. Prepare parchment paper to line the roll baking dish.
  2. Melt dark chocolate in a water bath, stirring with a metal spoon, until the chocolate mass becomes smooth.
  3. Beat eggs and sugar until fluffy.
  4. Add crushed nuts, water and baking soda to the melted chocolate. Sift flour into egg mass. Combine the chocolate and egg-flour mass, mix well.
  5. Place the dough in a baking dish on paper, greased with ghee. Bake for 12 minutes (check that the roll is ready with a wooden toothpick: the dough should not stick to it).
  6. Remove the finished roll from the oven and roll it up along with the paper on which it was cooked. Put it on a clean sheet of paper, previously sprinkled with powdered sugar. Trim the edges of the roll, wrap it with an outer sheet of paper with powder and leave it in this form for 1 hour with the seam down.
  7. Beat the grated mascarpone, cream, liqueur and vanilla seeds until a thick, homogeneous mass is obtained. Gently unfold the roll, remove the inner sheet of paper, spread with an even layer of vanilla-butter cream, roll up again, sprinkle with powder. Put it in the refrigerator for 1 hour (it can be done for 1 day if the dessert is prepared in advance), before serving, decorate with shavings or "leaves" white chocolate.
  8. To prepare decorative "leaves", the chocolate must be melted in a water bath, put the mass in small circles on parchment paper, give them the shape of leaves with a culinary brush and put in the refrigerator until they solidify. If desired, the finished leaves can be sprinkled with cocoa powder.
  9. The Boucher de Noel chocolate and nut roll is ready.

Pavlova meringue with berries, wine and ice cream

6 egg whites
1 1/2 cups caster sugar
1/2 tbsp. vanilla extract
2 tbsp. tablespoons of cornstarch
1 tbsp. a spoonful of wine vinegar
200 g creamy ice cream
1 glass of red wine
250 g raspberries
150 g red currant
250g strawberries, halved
cardamom, cloves to taste
1 cinnamon stick
1 vanilla pod
3/4 cup icing sugar for berry sauce
fresh mint leaves to taste

How to make Pavlova meringue with berries, wine and ice cream:

  1. Turn on the oven to heat up to 150 degrees. Prepare parchment paper to line the meringue baking dish.
  2. Detach egg yolks from proteins. Beat the whites and powdered sugar in a water bath (the water should not touch the bowl in which the meringue is whipped) until the sugar is completely dissolved. Remove the meringue from the water bath and continue beating with a mixer until a thick, fluffy mass is obtained. Add vanilla, corn starch and vinegar, mix gently.
  3. Place the meringue in small flat cakes on a baking sheet, crushing the center lightly with a spoon to make a depression.
  4. Place the meringue in the oven, reduce the temperature to 120 degrees, and bake for 1 hour. Then turn off the heat and keep the meringue to dry in the oven for another 2-3 hours until it has completely cooled down.
  5. Place the cardamom and cloves in a saucepan, along with the cinnamon, vanilla, wine and powdered sugar. Bring the mixture to a boil over moderate heat, stirring occasionally, and cook for 3-4 minutes, until some of the moisture evaporates and the sauce thickens.
  6. Add to wine sauce fresh or defrosted berries, simmer for 1 minute. Then add 1/3 cup of cold boiled water, stir and simmer for another 2-3 minutes to thicken the sauce. Remove from heat, let cool.
  7. Place the meringues in the bowls, put ice cream on top, pour over the wine and berry sauce, garnish with mint greens.
  8. Pavlova meringue with berries, wine and ice cream is ready.

Parfait with exotic fruits "Christmas in Malibu"

4 kiwi
350 g fresh pineapple pulp
1/2 cup passionfruit pulp
80 ml coconut liqueur
115 g finger-shaped biscuits
1/3 cup coconut flakes

For the cream:
500 g sour cream 25% fat
juice of 1 orange
3 egg whites
30 g gelatin
vanilla sugar to taste
Grated zest to taste

  1. Mix the pulp of kiwi, pineapple and coconut liqueur, grind until smooth.

680 g canned cherries

600 ml heavy cream

How to make Italian Cinnamon Cranberry Soft Ice Cream:

12 oranges
12 carnation umbrellas
1 cinnamon stick
220 g icing sugar
4 plates (or 8 g loose) gelatin

300 ml heavy cream
2 tbsp. tablespoons of powdered sugar
2 tbsp. spoons of Cointreau liqueur

How to make orange jelly with liqueur and buttercream:

  1. Place 1 umbrella of cloves in 4 jelly tins. The pulp of 6 oranges, without skin and white layer, thinly chop and distribute over portioned forms... Collect the juice from slicing oranges in a separate bowl.

Start kneading the dough with dry ingredients. Pour flour, icing sugar, baking powder into a deep bowl, vanilla sugar, ginger and cinnamon. Mix everything well. Stir the butter into the dry mixture. To make it pliable, remove it from the refrigerator in advance and let it stand for half an hour at room temperature.

Break the eggs into a separate bowl, separating the whites from the yolk. So far, only yolks are needed, but you should not pour out the whites. Whisk the egg yolks lightly with a fork and add to the bowl of dry mixture and butter. Send two tablespoons of honey there, preferably liquid.

Then knead the dough with your hands until smooth. Put it in the refrigerator for an hour. After 60 minutes, remove and roll out the dough into a layer no more than a centimeter thick.
