Thalers are very popular biscuits in Germany. Any round cookie can be called that, but more often it has the shape of a coin, that is, a washer.

They can be prepared like regular cut-out cookies using molds, but more often thalers are prepared more in a simple wayready dough folded into a roll (sausage), kept in the refrigerator, then cut into washers 0.5-1 cm thick.

You can use any dough and even the most varied decor, and all this, due to the shape of the cookies, will be called thalers.

By the way, in Germany, unsweetened round pancakes or cutlets made from a mixture of vegetables, cheese and flour are often called thalers, which are baked in the oven or in a frying pan. In this case, the name suggests a round shape.

And of course, there are a lot of options for thalers with nuts. Perhaps the most popular is with almond petals.

Our recipe uses ground, so it requires a blender or coffee grinder. Whole sesame seeds can be used, but the cookie tastes differently and is less crumbly.

You can replace vanilla with other spices or not use it at all, you can prepare it without coffee. But it is coffee with sesame seeds that creates the wonderful taste of the cookies. Yes, and ennobles the taste and aroma.

Ingredients:

  1. Flour - 250 g
  2. Cold butter - 180 g
  3. Powdered sugar - 100 g
  4. Vanilla sugar - 8 g
  5. Instant coffee - 2 teaspoons
  6. Salt - a pinch
  7. Egg - 1 pc.
  8. Cocoa powder - 2 tablespoons - 16 g
  9. Sesame seed - 140 g

Vanilla sugar is optional.

It turned out 36 pieces with a diameter of 6 cm.

In 100 grams ready-made biscuits: 525 kcal

Preparation:

Photos of the process were taken when I was cooking half of the recipe.

1. Dry sesame seeds in a dry frying pan until golden brown and have a characteristic odor. Cool down.

2. Grind the sesame seeds in a blender bowl, icing sugar, vanilla sugar, coffee.

3. Combine flour, salt, cocoa and sesame mixture in a bowl. Stir with a whisk.

4. Add pieces of butter, egg, knead with a fork. Then hands. Can be kneaded with a blender.

I mixed with a blender in two portions. It turns out faster.

5. Put the dough on the table, knead until smooth. After the blender, you just need to put it together. Blind a sausage with a diameter of 5-7 cm, wrap in a transparent film, hermetically. Place in the refrigerator for 2 hours.

I often leave it overnight. By the way, it looks incredibly like sausage, especially when it hardens - someone from the family can be deceived.

6. Take out the dough, cut into washers about 1 cm thick.

7. Place on a lined baking sheet baking paper.

By the way, the cookies can be rolled up slightly with a rolling pin for a flat surface, if it turned out ugly. Not at all necessary.

8. Bake on the middle shelf of the oven at 180 degrees for 10-13 minutes. Such a time in German recipe, I have coincided. You may be able to do it differently.

9. Cool the cookies. Can be decorated with glaze. Glaze made from melted white chocolate... Cookies last a week in a closed tray. Never lay longer.

To make chocolate chip cookies with sesame seeds, you will need:

wheat flour - 120 g;

corn flour - 30 g;

sesame seeds - 2 tbsp. l .;

sugar - 2 tbsp. l .;

cocoa - 2 tbsp. l .;

cognac - 1.5 tbsp. l .;

butter - 70 g;

salt - a pinch.

Cooking steps

Soft butter mix with sugar. Then pour in the brandy, stir.

Sift all the flour and cocoa into the resulting mass.

Stir the dough, add sesame seeds and salt. Knead the dough again.

The dough should not be sticky, but you don't need to clog it with excess flour either. Roll the same balls out of the dough. I got 11 pieces.

Flatten each ball a little, make a lattice with a knife on the surface. Put all the blanks on a baking sheet covered with parchment.

Preheat the oven to 180 degrees and bake homemade cookies with sesame seeds for about 15 minutes. When the chocolate cookies have cooled down, they can be served with a cup of coffee.

The sesame seeds, roasted until golden brown, will give the brownie an amazing aroma and taste.

Fry the seeds until golden brown. Fry in a dry skillet for a couple of minutes.

Free the dates from stones. They will need to be ground in a blender along with sesame seeds and seeds.

Combine seeds, sesame seeds, dates and honey in a blender bowl. Add cocoa and liquid honey. Any fruit syrup will work instead of honey.

Grind. It is not necessary to grind from a homogeneous porridge. The main thing is that the mass, if you take it in your hands, is well molded.

If you want whole grains to come across in your finished brownies, then take a lump of the resulting mixture and knead it in whole seeds and sesame seeds.

Before putting the mixture in the mold, be sure to cover it with baking paper, then the finished brownie will be easy to remove. Put the whole mixture on the paper and smooth it into shape with your fingers. Pour chocolate melted in a water bath or in a microwave oven.

Sprinkle with chopped pistachios or other nuts on top.

Place the mold in the freezer for 25 minutes. And only after that, cut into small squares. Try it! After such a natural and delicious sweetness, you will no longer want to buy store sweets.
