Preparation

1. First you need to boil potatoes and chicken eggs, you can in one pan. Then cool and clean everything.

2. Cut the potatoes into small cubes.

3. Cut the chicken eggs into small cubes as well as potatoes.

4. Place potatoes and eggs in a large bowl. Cut the pickled cucumbers into cubes and send there as well. Peel and dice the red onion. If the onion is bitter, then you can scald it with boiling water. After keeping in boiling water for 5 minutes, gently squeeze the onion and transfer to a bowl.

5. Homemade sausage peel and cut into small pieces if necessary.

6. Wash and core the sweet and sour apple, then cut into small pieces. If the skin is too tough, you can cut it off. If the apple is not large, you can use it whole. Also add canned corn.

German potato salad - a classic recipe

For this recipe need food: 4 small potatoes, 150 g sausages (semi-smoked, smoked, garlic, etc.). We will be using hunting sausages.

Let's take: 3 pickles, 2 tomatoes, onion, vegetable oil for refueling.

We will also prepare: 2 tablespoons not very strong mustard, salt, black and white ground pepper, ground coriander.

Cooking salad with sausages:

Boil the potatoes in their skins. To keep it warm, add 1 tsp of lemon juice or ordinary vinegar to the water, salt the water. When cooked, remove the potatoes from the pan, let cool well. The tubers should be firm, never boiled over. When cool well, peel and cut into neat slices. Place in a salad bowl.

Cut the sausages into slices, fry in vegetable oil until browned. Fry over low heat, stirring occasionally, so that the sausages do not burn, but reveal their full taste and aroma. Remove the fried pieces with a slotted spoon, put on a dish, which is covered with a paper towel.

Cut the cucumbers in half, and then cut each half into small cubes. Cut the onion into thin half rings.

Add cucumbers, onions, cooled sausages to the potatoes. Sprinkle with black and white ground pepper, add a pinch of coriander (you can replace it with ground nutmeg - whatever you like). Salt if necessary, although no salt is usually required.

In a separate bowl, mix vegetable oil with mustard, mix thoroughly, or even better, whisk with a whisk. Pour the dressing over the salad, remove to the cold. Let it sit in the refrigerator for a couple of hours. This will make it tastier. Sprinkle with fresh dill before serving.

Salad with smoked sausages and cucumber can be modified. Vegetable oil can be substituted with mayonnaise. And sausages can be fried with bacon slices. Any of the variants of the German salad turns out to be hearty and very tasty.

Berlin style potato salad with cucumbers

This dish is prepared without sausages, but always with the addition of pickled cucumbers. For this recipe prepare products: 6 small potatoes, 3 pickled cucumbers, 1 small green apple or half of it.

Still need: half onion, a few feathers of green chives (if not, take leeks or regular green onions), 1 tablespoon mustard (whichever you like), a quarter cup of pickled pickle brine, a slice of garlic, ground pepper.

Cooking:

In a separate bowl, combine the vegetable oil, brine, crushed garlic, pepper, and mustard. Onion cut into thin half rings, put in the resulting mixture, leave for half an hour.

Boil, peel and chop the potatoes as described in the previous recipe. Place on a platter. Cut the apple and cucumbers into small thin slices, put on separate plates.

Take a salad bowl, lay the prepared ingredients in layers: potatoes - onions from a bowl of marinade - apple slices - cucumber slices. The last top layer should be potatoes. When the layers are folded, pour the marinade evenly over the salad.

Put away in the cold. The longer it stays in the refrigerator, the tastier it will be. Leave it there for at least a couple of hours, or even better, eight hours. Sprinkle with finely chopped chives before serving.

With potatoes and pickled herring

The composition of this salad also includes products that seem to be absolutely incompatible with each other. However, the finished dish turns out to be very tasty, albeit unusual. But it is definitely worth cooking.

We need food: 6 medium-sized potatoes, a small pickled herring (fillet), 100 g of high-quality non-fatty ham, 2 pickles, a small green apple with a sour taste.

Still need to prepare: small bunch of green onions, finely chopped parsley, 2 tablespoons chopped kernels walnut, 1 tsp ground ginger, 200 g sour cream, salt (if necessary), ground pepper, 1 tablespoon wine or apple cider vinegar.

Cooking:

Boil the potatoes, cut them, as we said earlier. Place in a salad bowl.

Now let's prepare the dressing: put sour cream, vinegar, finely chopped green onions in a blender bowl. Season with salt and pepper, add chopped nuts and ground ginger. Beat everything with a blender until smooth.

Cut the ham, pickles and herring into small cubes. Place in a salad bowl with potatoes. Peel the apple, cut into thin slices. Put it in a salad bowl too, stir.

Pour the dressing over the salad, refrigerate for several hours. Sprinkle with parsley before serving.
