Ingredients:

To prepare boiled chicken sausage, we need:

chicken thigh fillet - 500 g, egg- 1 pc., Milk - 300 g, corn starch - 1 tablespoon, bran (oat, wheat, rye) - 2 tablespoons, garlic - 5-6 cloves, salt, spices to taste.

Preparation:

To make boiled chicken sausage, we need a blender bowl with such knives.

We load all the ingredients into the blender bowl: chicken fillet, garlic, passed through a garlic press, egg, starch, bran (I used a mixture of oat, rye and wheat bran) and milk. Add salt and spices at once. If you are cooking for children, then only salt can be left of the spices; it is also better not to put garlic then.

We close the blender bowl and begin to grind the prepared food. Here it is better not to spare time, the more homogeneous the mixture turns out, the denser the sausage will turn out and it will be more convenient to cut it.

The sausage mixture should be homogeneous without lumps.

We shift the resulting mixture into mugs, pre-lubricated with a small amount vegetable oil... Fill the mugs with the mixture about 3/4 full.

For boiled sausage, it is better to use mugs or glasses with thick walls so that they do not burst during cooking.

We wrap the mugs with the cooked sausage mixture in two layers of cling film so that the water does not get into the mugs during cooking.

We take a saucepan of a suitable size, put a cloth napkin or grate on the bottom, put mugs on it, fill it with water about 2/3, cook the sausage in a mug for 40 minutes over medium heat.

At the end of cooking, we take out the mugs from the pan, remove the film from the mugs, let it cool down a little (just a few minutes, you don't need to leave the sausage to cool in the mug, then it will be difficult to get it).

We turn the mug onto a plate.

Shake it a little, and the sausage easily pops out of the mug.

The sausage is easy to cut into slices. This sausage can be used as cold appetizer, for sandwiches and burgers, for salads.

In addition to the products in the photo, you will need two refractory mugs with a volume of at least 350 ml, I cooked in ceramic mugs 350 and 380 ml. And also a piece of cling film. From this amount of ingredients, 500 g of sausage was obtained.

Rinse the chicken fillet, dry it, cut into pieces and put it in the bowl of a blender or food processor.


Add milk and egg and starch.


Followed by garlic (through a garlic press or fine grater), or dry; freshly ground black pepper, nutmeg, sugar, salt (I added 0.5 teaspoon, but I don't add too much salt).


Break through all ingredients in the chopper until homogeneous mass... The mass comes out of medium density.
At this stage, you can add additives to your taste: greens, diced red bell peppers, maybe cheese, or rings of olives / olives. You can divide the mass in half and do with different additives, or one sausage without additives, and the other with additives.
Also, I know that it is possible to tint the sausage with beet juice for pink color, but I have not tried it yet (then there is no beet, then there is time :)).


Grease the mugs inside with vegetable oil.


Fill with minced meat, tamping with a spoon so that there are no voids, leaving a little space, since the mass of minced meat will increase when heated. Tighten with cling film on top to prevent boiling water from entering.


Place a cloth or cheesecloth on the bottom in a suitable saucepan, put mugs, pour water to the middle of the mugs.


Cover the saucepan with a lid and bring water to a boil over high heat. Then, reduce the heat to a minimum, and cook the sausage covered for 40 minutes. This is how the mass increased, became dense, a little juice was released.


Remove the sausage from the mugs, while it is hot, you just need to shake it a little. Allow to cool. Can be refrigerated.


You can try. The sausage keeps its shape, it is well cut. The taste is delicate, aromatic, due to garlic and seasonings, with light chicken taste, nutritious, at the same time - dietary, can be given to children. I cooked for children, so I have an option without additives, and with additives, I'm sure the taste will only be more interesting!


I keep the sausage in the refrigerator wrapped in foil for 3-5 days.

The foundation:

  • Milk - 400 g
  • Egg - 1 pc.
  • Starch - 40 g (~ 2 tbsp. L. With a large slide)
  • Garlic - 7-8 cloves
  • Salt - 2 tsp
  • Sugar - 0.5 tsp

Preparation:

Cut the fillet into pieces.

Place in the bowl of the food processor and grind, gradually adding all the ingredients in random order. It is better to pour milk in portions, rather than immediately. Pre-crush or chop the garlic so that it is guaranteed to be chopped.

You should get a snow-white homogeneous mass.

Grease the mugs with oil.

For everything to go well, follow two rules: put the mugs in cold or warm, but not hot, water, and do not use family porcelain :)

I used ordinary ceramic cylinder mugs many times and painlessly for them. If you are worried, take metal mugs, enamel or aluminum.

Put the sausage mass on 4/5 of the mug volume.

Wrap each mug with cling film. It is necessary that the film wraps both the top and the bottom a couple of times, so the sausage does not pop out, but it can still tend to escape :)

We put mugs of sausage in a saucepan.

A wire rack or cloth should be placed on the bottom so that the mugs do not directly touch the bottom. Pour water to about half the mugs. We put the pan on fire, cover with a lid.

Bring the water to a boil and count 35 minutes from this moment.

After a lapse of time, turn off the heat and take out the mugs. Carefully!

Look, I was already able to remove the film, that is, the mugs are slightly suspended, but the temperature of the sausage is close to 100 degrees. So do not be afraid, everything boils perfectly.

As soon as it cools down a little, shake the sausage out of the mugs.

It is better to do this while it is still warm, I had a situation when the sausage cooled in a mug stuck to the bottom.

For storage, I put the sausage in bags and put it in the refrigerator.

By the way, I tried adding beet juice to get a pink color, but when cooking it becomes discolored, so I gave up this business.
