American rice flour pancakes are quite possible to surprise your family. They turn out to be very appetizing, with golden crust and a light, porous crumb. Overseas treats are fried in a dry frying pan, melted is added to the dough butter... This gives it tenderness and a special taste. The absence of gluten in the composition allows the dessert to be included in the diet.

Ingredients:

  1. rice flour - 160 g;
  2. milk - 250 ml;
  3. chicken egg - 1 pc.;
  4. sugar - 20 g;
  5. soda - 0.5 tsp;
  6. salt - 1/3 tsp;
  7. vinegar 9% - 1 tbsp. l;
  8. butter - 30 g;
  9. vegetable oil - 1 tbsp. l.

PP Rice Flour Pancakes - Recipe

In a bowl, combine egg, salt, granulated sugar. If the egg is large, then one category C1 or C0 is enough. If it is small, then you need to take two eggs of the C2 category.

The amount of sugar is adjusted according to your tastes.

Beat the egg with sugar, add milk. You can use kefir or even sour cream.

We extinguish the soda with vinegar and send it to the kefir-egg mixture.

Add rice flour. It can be purchased or homemade from washed and dried rice. In the second case, you need to sift it.

Mix everything and add melted butter. It must be melted in any convenient way and cooled before use.

Mix everything until smooth.


We heat the frying pan, which is greased with vegetable oil, and spread out a portion of the dough, distribute it so as to get a thick pancake with a diameter of 15 centimeters. Fry for a minute, until the bottom turns golden.

Real pancakes, as mentioned, are fried in a dry skillet. But I like it with butter.


Turn the pancake over with a spatula and fry for another minute or less. The time depends on the heating power and the thickness of the product.


Put the finished rice flour pancakes in a stack.

I really liked these pancakes on rice flour, their texture is completely different, unlike ordinary pancakes. They are snow-white inside, and because they are fried practically without oil, they have no fat at all, which is also very important! This type of pancake is very suitable for those who follow a gluten-free diet, but if you do not need dietary nutrition, I still advise you to try to bake them, they are really delicious.

So, for rice flour pancakes, let's take necessary products by the list. As I already said, you can take any fermented milk product, you can even take stale sour cream, most importantly, not very fatty.

Weigh required amount fermented milk product from which you will bake pancakes.

Then we break a chicken egg here, add salt and sugar.

Using a whisk, we bring everything to homogeneity.

We measure out the required amount of rice flour.

Sift it through a sieve along with soda.

Pour some of the flour into a bowl with fermented baked milk and mix gently so that there are no lumps.

Stir in the rest of the flour into the dough, making sure that no flour lumps remain in the dough.

This is how the dough should turn out after mixing.

Set it aside for 10 minutes. Then put the pan on fire and grease it with a little vegetable oil using a silicone brush.

Put the dough in a preheated pan with a spoon and fry the pancakes in rice flour, first on one side.

Then turn over and fry on the other side.

This will fry all the pancakes and place them on a serving plate.

Rice pancakes can be served immediately. You can also serve sour cream, honey or jam with them. I had dogwood jam, it was delicious!

  • oat flakes - 1 tbsp.
  • milk 1% - 1 tbsp.
  • whole grain flour - 1 tbsp. l.
  • eggs - 1 pc.
  • slaked soda - 1 tsp.
  • sweetener to taste.

Preparation:

We mix oatmeal with 1/3 cup milk. Knock down the remaining milk with an egg (until frothy), add a sweetener, beat. Beat the oatmeal with milk well, add milk, beaten with eggs and sweetener, a tablespoon of flour and beat everything again, then add slaked soda... Leave it for at least 40 minutes.
Then mix with a large spoon from bottom to top until smooth. Fry in a preheated frying pan (grease the frying pan with oil for the first time, fry the rest without oil.
Fry until bubbles appear, turn over and fry for another 8-10 seconds.

Ingredients:

  • eggs - 1 pc.
  • kefir 1% - 100 ml.
  • flour - 1, 5 tbsp. l (we have rice).
  • poppy - 1 tsp
  • sweetener to taste.

  • banana - 2 pcs.
  • kefir 1% - 250 g.
  • whole grain flour - 1 tbsp.

  • baking powder - 1/2 tsp.
  • vanillin to taste.

Preparation:
To begin with, puree the bananas with the addition of eggs. Add sweetener, baking powder and vanillin to the resulting mixture. Mix thoroughly. Then add flour in portions and mix. We need to achieve the consistency of thick sour cream. Preheat the pan and cook our pancakes. We fry them without oil.

Ingredients:

  • natural yogurt - 300 g
  • whole grain flour - 160 g.
  • egg - 1 pc.
  • vegetable oil - 1, 5 tbsp. l.
  • lemon juice - 1 tsp.
  • soda - 1 tsp.
  • salt to taste.
  • sweetener to taste.

Preparation:
These pancakes can also be called pancakes, since they are prepared with a minimum amount of oil. Put 300 gr in a bowl. Yogurt (12 tablespoons), add a pinch of salt, sweetener and egg. Pour a teaspoon of soda without a slide lemon juice and stir thoroughly. Add to yogurt, pour in a tablespoon of oil and stir with a whisk or fork. Sift 160 g into a bowl. Flour and mix until smooth. Everything! You can start cooking. Turn on medium heat, grease the frying pan with a thin layer of oil before preparing the first pancakes. Put the dough at a distance from each other with a spoon, the shape of future pancakes can be tweaked with the same spoon. For thin pancakes, 1, 5 tablespoons will be enough, if you want more magnificent - you can spread 2-3 tablespoons of dough for one pancake. Cook for about two minutes until golden brown, until bubbles begin to burst on the surface of the dough. Gently turn the pancakes over with the Spatula, reduce heat and cook for another 1-2 minutes on the other side. So prepare the whole batch (no more oil is needed.

Ingredients:

  • carrots - 1 pc.
  • kefir 1% - 150 g.
  • oat flour - 250 g.
  • egg - 1 pc * soda - 2 g

You need to fry oat pancakes in a dry preheated pan, and it is desirable that it has a non-stick coating. To make the pancakes even, it is better to gently spread the dough with a spoon, forming a circle.

First, the cake is fried on one side for 2-3 minutes before bubbles appear on its surface, then it is turned over to the other side, covered with a lid and fried for another 1 minute. Typically, the entire cooking process takes 20-30 minutes. Diet oat pancakes can be served with strawberries, raisins and honey. They go well with tea, coffee or milk.

Carrot Diet Pancakes

To make carrot cakes, you must:

  • Sweet and juicy carrots;
  • Low-fat kefir;
  • Oat flour;
  • Soda;
  • Egg.

As usual, beat the egg and add the finely grated carrots. Pour in warm kefir and mix well, add soda, add oatmeal, knead the dough thoroughly. We do not add sugar, because the carrots are already sweet. Serve carrot pancakes with light sour cream or yogurt.

Very often my family asks me to make pancakes for breakfast. I myself, I confess, love them with all my heart, so I bake with pleasure not only on weekends, but also on weekdays. Due to the fact that there is very little time before work, I try to cook according to the already proven, simple and easy recipes... And the first on the list are the so-called pancakes. These are thick pancakes, which are popular for breakfast in America, and even here they have taken root quite well. I used to always cook pancakes for classic recipe, and recently began to experiment. This is how the recipe for corn pancakes was born, which the whole family loved very much. It turns out that using corn flour instead of wheat it makes pancakes more lush, airy, and how attracts their golden color ... Real sun on the plate! Corn pancakes recipe

  • 1. Break the egg into a bowl, add sugar and salt. Beat with a whisk until foam appears.
  • 2. Now add kefir to the egg mass and mix well. I like using kefir with a low percentage of fat, I noticed that it tastes better with pancakes.
  • 3. Add corn and rice flour and baking powder. We are faced with the task of thoroughly mixing all the contents of the bowl so that the mass turns out to be rather thick, smooth, without lumps.
  • 4. Last of all, add sunflower oil and again quickly mix the pancake dough. We leave it to stand for just 3-5 minutes. This is to ensure that the corn and rice flour are dispersed properly.
  • 5. In a well-heated skillet with non-stick coating fry small pancakes on both sides without oil. You can cover it with a lid to make it even more luxurious.
  • 6. We put the ready-made corn pancakes in a traditional pile, decorate to taste. I like to smear each pancake with honey or chocolate sauce, it turns out a kind of mini-cake. Delicious and effective!

I had a bag of rice flour lying around in my closet. Actually, I bought it to sprinkle the proofing baskets so that the bread doesn't stick. But for a number of reasons I do not bake bread yet, and the flour disappears. I caught sight of a recipe for pancakes with this flour, I decided to try it. And here's what happened.

1 egg
130 g rice flour
220 ml milk
75 g wheat flour
1 tsp baking powder (I put the baking powder according to the weight of the flour in accordance with the instructions on the package, it can be different)
1 tbsp sugar (or to taste)
a pinch of salt

In a bowl, combine rice and wheat flour, sugar, salt, baking powder

Shake eggs and milk separately

Combine flour mixture with liquid mixture, knead the dough. It turns out to be quite thick. Leave for 15-20 minutes.

The recipe did not say anything about butter, but I still poured a tablespoon of vegetable oil into the dough before frying the pancakes.

I bake all the pancakes in cast-iron pans, grease them with a piece of unsalted bacon. The fire is not very big. For 1 pancake, poured 2/3 of a ladle of dough

Pour the dough and wait until the bubbles stop tightening (it was written 1 minute, but it turned out less for me, be guided by your pans)

Turn over and fry until tender. I fried quickly, so I advise you not to go far from the frying pan.

Ready-made pancakes are porous, but dense enough, it may even seem that they are dry. Therefore, I would advise them to serve them with some fairly liquid sauce, in the original it was cherry. I didn't have cherries, I had apples, sour cream and maple syrup boiled with sugar (not included in the photo)

And today I will just share great recipe banana pancakes, which I now cook almost every day)) If you manage to get rice flour, do not hesitate, take it right away! With her such delicious pastries! In combination with corn, it will delight you with a wonderful breakfast, which both adults and children will be happy about)) If there is no such flour, it does not matter, just replace it with the usual one)
And I will also give you a recipe for a cool homemade banana sauce, which is made in just a minute!)) And it will be an excellent replacement for store-bought store-bought sauces with additives! And here, everything is natural, as they say)) soft, sweet, thick ... mm ... you will lick your fingers!

Ingredients:

1 large ripe banana
150 ml milk
110g yogurt without additives (or kefir)
1 tbsp without a slide of cane sugar (optional, but tastier with it))
100g rice flour
100g corn flour
2 eggs
1 pinch baking powder

1) Grind the banana with a blender in mashed potatoes. Add 2 eggs and sugar to it, and once again whine with a blender for about a minute - you get a fluffy thick mass.

2) Add yogurt and milk, whisk until smooth.

3) Add both flour and baking powder, and whisk again until smooth.

4) Heat the pan well, then reduce the heat to medium, and spoon the future pancakes with a spoon. As soon as the bubbles appear, wait a couple more seconds and turn over.

Banana Sauce:

1 ripe banana
2 tbsp with a slide of yogurt without additives
I usually take milk "by eye", but approximately it is about 40g (weighed on a scale))
(optionally add 1 tsp maple syrup or agave syrup or honey)

We put all the ingredients in a blender (I put in a high blender bowl and an immersion blender), whip for about 1 minute until completely homogeneous. Then pour into a gravy boat and serve with pancakes, waffles, well, whatever))
