Today we will cook, we all know from childhood, grandmother's pies with cabbage. All grandmothers know this recipe delicious pies... 😉 It is not difficult to prepare them. This will help my photos and a step-by-step description of all the intricacies of making pies. It is imperative to sculpt such pies from the recipe for which I laid out earlier. It can be prepared in no time and will be perfect for. It only remains to cook delicious filling from cabbage, which we will do after making the dough.

How to make a delicious cabbage filling

First of all, for the filling, fry the chopped onion cubes in oil.

Next, let's deal with cabbage and carrots. Thinly chop the cabbage, and three coarsely grated carrots. Mix the vegetables in a bowl, kneading a little with your hands. Now, you need to salt the cabbage and carrots. This will promote the release of juice.

Transfer the carrots with cabbage to the fried onions, stir and continue to fry the filling for 10 minutes, closing the lid and using a small flame. Then, add butter, tomato and, of course, pepper the filling to the vegetables. We leave on fire for another five minutes and turn off the heat.

Put the cabbage filling on another dish for quick cooling. This is how the finished cabbage looks like.

The stew is delicious, so don't be tempted to try it endlessly - save it for pies too! 🙂 You can only sculpt pies from a completely cooled filling, otherwise the dough may turn out to be sticky on the side of the filling.

We moisten our palms with oil and form balls of dough for pies. Stretch them into flat cakes with our hands, put the filling and sculpt the pies, properly closing the seam. Therefore, shape the pies as you like.

How to fry cabbage pies

When the pies are stuck, you just have to fry them in sunflower oil. Put the pies in butter in a frying pan first with the seam down, and as the underside is browned, turn the pies over and fry them on the second side.

Place the pies sideways on a dish with a napkin. This is necessary so that the excess oil goes into the napkin. As soon as the pies have cooled down a little, you can taste them.

Recipe for pies with cabbage

I add yeast, salt, sugar, vegetable oil and an egg to warm kefir. I stir to dissolve the yeast.

Then I add flour and knead the dough.

I knead the dough so that it stops sticking to my fingers, keeps its shape, and at the same time is soft. It is important not to clog it with flour and not add more than necessary.

To prepare the filling, chop cabbage, grate carrots on a fine grater, just chop the onion, bell pepper cut into small pieces, like tomatoes and chop parsley. I heat the pan, pour in vegetable oil and when it heats up I pour cabbage, onions and carrots into it. First I fry them over high heat, not forgetting to stir.

When the cabbage is half done, add pepper, tomato, parsley, salt and pepper. I mix everything and carcass until tender. The cabbage filling turned out to be very tasty.

After about an hour, the kefir dough for the pies in the pan had grown perfectly in size, so now you can start shaping them.

I spread the dough for fried pies on a floured surface and roll it out thinly with a rolling pin. Then, using a glass, I squeeze out the circles. How large or small your cakes will be depends on their size. From one such layer, I got 10 laps at first. Then I knead the rest of the dough a little more, roll it out again and make 5 more circles. In total, I got 15 blanks.

Then I take one circle, press it down a little more with my hand, and put it in the center cabbage filling for pies.

To form them further is very simple, for this I simply fasten the edges on both sides, then turn them over with the joint down and flatten, giving the desired shape.

In total, I got 15 of them. Immediately fold them on a silicone mat sprinkled with flour.

I put the pan on the fire, pour vegetable oil into it, and when it warms up, put a few pies in it. The amount depends on the size of the pan. Not very much oil is required for frying.

Pies with cabbage from yeast dough fry on both sides, over medium heat, but not very high, so that they have time to bake inside. There is no need to cover the pan with a lid. I fry them until golden brown and cooked inside.

Then I remove them from the heat, transfer them to paper towels to remove the remaining oil and put them on a dish. Now you need them to cool down a little.

Pies with cabbage on kefir turned out great, and I serve them to the table with fresh sour cream. Believe me, this is delicious.   • 25 g sugar;

Step-by-step recipe for classic fried cakes

Measure the prescription amount of water, heat it up, make a dough out of it. Mix sugar with yeast, add 250 grams of flour. It should be a chatterbox. We leave for half an hour.

Introduce a teaspoon of fine salt into the chatter box, stir, add 70 ml of vegetable oil, leave the rest for frying and filling. Add more flour, knead. Keep the dough warm for a couple of hours. It will rise well.

While the dough is standing, you need to not only fry the cabbage, but also cool it. Pour 30 g of oil into a large frying pan, send to heat. Throw in onions with carrots, and then cabbage, chopped into strips. Fry, season with spices. Cool down to room temperature, do not use warm filling in pies.

We take out our dough, divide into pieces of 80 grams, but do not rush to roll it out. If they lie down a little, literally five minutes, it will be much easier to do. If desired, we make larger pies, then divide the dough into 100-120 grams.

We spread cabbage filling on rolled flat cakes, sculpt pies.

  • a full glass of kefir;
  • 400 g flour;
  • 1/3 head of cabbage;
  • bulb;

  • 10 g yeast;
  • 30 g margarine;

How to cook

As soon as the dough begins to peel off from the hands, put it in a warm place. We leave until a good rise and an increase in mass at least twice.

Fry onions and carrots in a skillet in oil, add cabbage. We also fry with it for several minutes, then cover and simmer a little. There is no need to add liquid. At the end, for taste, put a spoonful of pasta, pepper and salt, add herbs.

We take out the risen dough. Due to the addition of kefir, he does not need to stand for a long time. Divide into pieces, sculpt pies.

We put the formed products in heated oil, fry until tender.

If there is no tomato paste, then you can add a little ketchup or another tomato sauce to the cabbage filling.

Option 4: Fried pies with cabbage in a pan (with kefir and soda)

The dough recipe is without yeast, it is kneaded with kefir. You can fry the pies right away if the cabbage is already cooked and cooled down. If there is no filling yet, then the dough will calmly lie down even for several hours and a day, if you put it in the refrigerator.

  • 250 g of kefir;
  • 3.5 tbsp. flour;
  • 1 tsp soda;
  • two eggs;
  • 600 g cabbage;
  • bulb;
  • a spoonful of butter in the dough;
  • frying oil;
  • a spoonful of sugar.

Step by step recipe

We cut the onion, fry it a little in oil, put the chopped white cabbage to the vegetable. We fry together almost until soft, put any spices in the filling at our discretion. Cool it down.

Add a third of a teaspoon of butter to the eggs, sugar, beat, add kefir. Stir and throw in a spoonful of baking soda. It must be extinguished. As soon as the reaction passes, we introduce vegetable oil, mix, add flour. It should take about three and a half glasses if the kefir is of medium consistency. Increase the quantity if necessary.

It is advisable to give the kneaded dough fifteen minutes to rest. Then we divide it into pieces, roll it out with a rolling pin. If the mass starts to stick, then dust the dough with flour. We lay out the cabbage, connect the edges of the cakes. We make all the pies.

Step 4:
We heat the oil, spread and fry the pies with cabbage until golden brown over medium heat.

Can be used for filling sauerkraut... It also needs to be fried in a pan and cooled.

Option 5: Fried pies with cabbage in a puff pastry pan

If you do not want to make friends with the dough, then you can simply buy it in the store. Plus the most simple filling from fried cabbage and you will get wonderful homemade cakes. But it is important to blind them correctly so that nothing will come unstuck.

Ingredients

  • 500 g of dough;
  • fried cabbage (about 500-700 g);
  • frying oil.

How to cook

We unfold the layer of dough, be sure to roll it up with a rolling pin and cut it into 20 squares or rectangles. If you need large pies, then the size can be increased.

We lay out the filling, but only in half. Cover with the empty side so that the edges coincide. We take a fork and press the seams with our cloves on all sides so that the dough sticks together, the juices of the filling do not flow out.

We spread the pies in heated oil, fry. You can cook them in a dry skillet, but then you need to cover it for a few minutes.

Another recipe for the kefir pastry dough, which turns out just like fluff. Additionally, you will need a little sour cream with a fat content of about 20%. Cabbage filling with added minced meat, but you can do just a vegetable version.

  • 250 g of kefir;
  • 3 tablespoons of sour cream;
  • 200 g minced meat;
  • 20 ml butter in the dough;
  • frying oil;
  • 440 g flour;
  • 500 g of cabbage;
  • spices;
  • yolk;
  • 7 g of soda.

How to cook

It is better to start with the filling so that it has time to cool down. Cut a medium-sized onion and sauté a little in oil. We take a large frying pan at once. After a minute, lay out the cabbage. We fry for a few more minutes. As soon as the volume decreases, we spread the minced meat. Cooking the filling for 5-7 minutes, putting in the spices, seasoning if desired tomato paste... We leave to cool, but for now we are doing the dough.

Mix kefir with soda in a large bowl. In a small bowl we send the yolk, sour cream, salt, put a couple of pinches of sugar and stir until dissolved.

We combine all this with kefir, pour a little oil, stir and add flour. Knead soft dough, cover it with a napkin. Let it lie down a little, reach the desired state, 15-20 minutes is enough.

We sculpt ordinary classic pies stuffed with cabbage and minced meat. We make the size at our discretion.

Heat some oil in a wide skillet. We spread the pies taking into account their increase. Fry until tender.

When replacing the soda with a ripper, the amount increases by at least 1.5 times, and it will need to be mixed with flour.

Option 7: Fried pies with cabbage in a pan

Recipe for pies made from yeast dough in milk. The filling for them is prepared from white cabbage, spices can be added to it of absolutely any kind.

  • 350 ml of milk;
  • flour;
  • 0.11 kg of butter;
  • lean oil for frying;
  • 0.5 head of cabbage;
  • 2 tsp yeast;
  • a pair of onions;
  • one carrot;
  • a spoonful of sour cream;
  • 15 g sugar;
  • three eggs;
  • spices.

How to cook

Start with butter... Melt it and let it cool. Combine milk and eggs, add salt and sugar, introduce yeast strictly according to the recipe and add a spoonful of sour cream. Shake everything thoroughly, only then add flour to the dough. We fall asleep as needed until a soft and smooth mass is obtained. We transfer it to a bowl with high sides, let it rise, then lower it and wait for the second time.

The dough will stand for at least two hours. This time will be enough to cook and cool the filling. Shred all the vegetables into strips and simply fry together. We use a large frying pan or cauldron. We add any seasonings and spices.

From the dough that has risen for the second time and the cooled cabbage, we make small pies.

Pour oil into a frying pan, about a centimeter, heat it up and send the pies into it. They shouldn't touch. Fry until tender.

If there is not enough milk, then it can be partially diluted with water, this will not greatly affect the taste of the pies. You can also just add a little milk powder or cream to the water, dilute sour cream, too, everything will work out great.

Option 8: Fried pies with cabbage and chicken in a pan

Another great recipe for yeast dough pies. We will cook them with chicken, fillet is used. The filling turns out to be very satisfying, while it is easy to prepare and quickly.

Ingredients

  • 380 ml of water;
  • 280 ml of oil;
  • 600 g cabbage;
  • 11 g yeast;
  • 300 g chicken fillet;
  • two onions;
  • wheat flour;
  • a spoonful of sugar;
  • spices.

How to cook

We mix water and yeast, granulated sugar, salt. Let it dissolve for about five minutes, and add 50 ml of oil. Can be replaced with melted margarine. Pour flour, knead a simple pie dough. Let it stand for a couple of hours.

Chop the onion, fry in oil. As soon as it becomes transparent, add the cut into small cubes chicken breast... Cooking for another minute, toss in the chopped cabbage. We fry everything until tender, season with pepper, salt. Cool down the filling.

Divide the risen dough into equal pieces, flatten into flat cakes. You can use a rolling pin.

Distribute the cabbage filling between all the cakes. We glue the edges, forming classic patties.

We send the oil that remains to the pan and heat it up. We fry the pies in portions until everything is over.

You do not need to put the pies in poorly heated oil, they will just begin to absorb it. Also, do not overheat the fat, otherwise the products will begin to burn. We make the temperature slightly above average. You can test it with a small piece of dough. If it starts to bubble when it gets into the hot fat, then you can start frying the pies.

I love pies, however, I learned that you can make dough for pies on kefir just a couple of hours ago. Usually in our family, pies are a whole story. After all, it takes a long time to cook yeast dough, and every time you worry whether it will fit or not, it will work out - it will not work. I bought a bread maker a long time ago, and it is she who usually kneads the dough for me.

But, nevertheless, there is always a problem with these pies. While the yeast dough will rise several times, the desire will no longer be engaged in cooking. But the dough, you know, should be cooked only in a special mood. So, as usual, I had been thinking about pies for two weeks already, but I could not muster the strength to cook them. And then on the Internet I came across a curious recipe - a pie dough with kefir. Actually, I don't really trust recipes from the Internet, but then he wanted to try. And you know, I was right! How to make dough for pies on kefir

This is exactly the case when the pies are not only tasty, but also cook very quickly. I think I will use it simple recipe quite often, and try a variety of products with kefir pie dough - mushrooms, berries, meat, minced meat, onions, eggs, liver and much more.

  • Kefir - 150 ml
  • Flour - 300 grams
  • Salt - 0.5 teaspoon
  • Sugar - 1 teaspoon
  • Soda - 1 teaspoon

  1. Warm up the kefir, but only a little. It should be slightly warm so that salt and sugar dissolve more easily.
  2. Add baking soda or baking powder there. Stir and leave - the kefir will bubble slightly, become more fluffy.
  3. Then pour in vegetable oil, mix a little.
  4. Add flour - it can be slightly less than the specified amount, or vice versa, a little more. It all depends on the quality of the flour.
  5. Knead the dough gently, not too long - from long kneading it will be very tough and tasteless. Once all the ingredients are combined, you can simply set it aside while the filling is being prepared. The dough must necessarily rest for at least half an hour, so we started cooking with it. To prevent it from weathering in the process, the bowl is covered with cling film. You can just put the dough in a bag, if that's more convenient for you.
  6. Now it's the turn for the filling. I have regular cabbage stewed in a skillet with a minimum amount of vegetable oil and salt. You can add mushrooms, eggs, green onions or even instead of cabbage, stuff the pies with apple jam.
  7. You need to remove the top leaves of the cabbage, cut into two halves - it will be more convenient to chop - put the half cut down, arm yourself with a knife, and cut thinly, but not long - after all, cabbage will be used for pies, so you should not complicate your task - finely chopped cabbage is much easier to put on the dough, and then pinch.
  8. We grind the cabbage with our hands with salt, and after that it will be possible to heat the vegetable oil in a frying pan and send the cabbage into it. I simmer under the lid - for the first 5 minutes over medium heat, so that the cabbage warms up, and then for a little 20 - 25 minutes. It does not make sense to keep the cabbage on the fire longer, it will go fine in the oven later. I have a late variety cabbage, and everything worked out as it should.
  9. Now it will be necessary to give the filling time to cool down a little. And we ourselves arm ourselves with a rolling pin, a handful of flour, and begin to pinch off pieces of dough. I pinch off the dough a little, divide it into pieces the size of a dumpling.
  10. I roll each piece with a rolling pin up to 3 mm in height - it turns out a cake 12 cm in diameter. A tablespoon with a huge slide of cabbage is laid out on a cake.
  11. Now we pinch the pie, put it seam down on the parchment.
  12. I sculpt until all the products run out. I got 11 fairly large pies from the specified number of products.
  13. Now I dip the brush into a beaten egg and carefully smear the pies over the entire surface - where it is not smeared, the dough will be pale.
  14. I heat the oven to 180 degrees, put the baking sheet higher, and bake for 35 minutes exactly. The dough for pies on kefir rises a little, grows, and it turns out very tenderly - not much different from yeast pies with cabbage, cooked in the oven. Give it a try and share the results!

150 g of kefir;

1/3 head of cabbage;

a pinch of ground allspice;

Add sugar, yeast and 2 tablespoons of sifted flour to warm kefir, mix, cover the resulting dough and put in a warm place for 20 minutes to activate the yeast.

Add sunflower oil, salt and egg to the dough.

Sprinkling the sifted flour in parts, knead an elastic, soft dough. Cover the dough and place in a warm place. The dough should double in size (this can take from half an hour to two hours).

To prepare the filling, put chopped cabbage and grated carrots in a pan heated with a small amount of sunflower oil, cover with a lid. Simmer cabbage until soft over low heat, not forgetting to stir occasionally. Then remove the lid, pepper the vegetables, salt and fry until golden brown.

The filling for the pies is ready.

The dough came up too. Make a hole in the dough that comes up, pour in 1 tablespoon of sunflower oil and knead well again. The addition of oil will allow you to work with the dough without flour in the future (you will not need to add flour to the dough and the table).

Roll the kneaded dough into a roller and cut into 10 equal parts (you can cut into more or fewer parts, the size of the pie will depend on this).

Roll each piece with a rolling pin into a layer (you can not roll it out with a rolling pin, but simply press it with your palm).

Put the cabbage and carrot filling in the center of the tortillas.

Pinch the edges of the dough, forming patties, and then press a little on top with your palm. Cover with a napkin and leave for 15-20 minutes.

Put the cabbage pies in a pan with preheated vegetable oil and fry on both sides.
