Japanese cuisine restaurant with names. Expert: Emilia Arie

5 new points on your map - Japanese bars-restaurants "with character": from "classics of the genre" to high-profile discoveries.

Totoro

Chef: Jonathan Curtis

“Some time ago it was difficult to find quality sushi in Moscow due to the low availability of fresh fish. Now the situation has changed: a new wave of popularity has again introduced fashion to Japanese cuisine. I have devoted many years to studying Japanese food and the main rules that I always adhere to are originality of taste, knife technique and preservation of textures. "

Totoro atmosphere

A new project by Alexander Rappoport, which opened this year, is entirely devoted to Japanese themes. Moreover, not just Japanese, but Anime: the name "Totoro" is borrowed from the name of the protagonist of the comics of the same name. Laconic interiors of the main hall with a predominance of wood and bamboo, a long table "European-style" with high bar stools and "floating in the air" decor in the Japanese spirit, pictures of greenery and a long fish showcase. The flowing adjacent hall is much smaller, but the anime theme in it is revealed even more, especially if you look into the private room with bright drawings from comics on the walls. The restaurant is perfect for family celebrations - after all, there is a separate animation program for children, naturally in the spirit of Totoro.

Totoro's kitchen

Totoro's menu is large and varied, but it is here that you will find the largest number of different types of tuna (from northern to southern), as well as rare varieties of Japanese fish. In addition to the exceptional freshness of seafood, Totoro boasts the largest sake card - 78 types, and a special sommelier will tell you about each of them. Impressive, isn't it?

EATWEEK Top Choice

Sashimi rolls- one of the main inventions of Totoro, and in particular, of Alexander Rappoport himself. Perhaps this is the only place where you can taste the most delicate and unusually light rolls without rice - only fish and vegetables. We recommend starting with the main favorites: "tuna" and "hamachi" - 800 rubles. and 820 p.

Sashimi- seemingly just pieces of raw fish? But here the finely cut slices of fish so contaminate with their impeccably pure taste and beautiful presentation that a couple of drops of soy sauce with yuzu are enough, and you can fly into space. - 120-440 rubles / piece

Sashimi salad with tataki tuna and onion confit- what could be better for an easy start? Microgreens, juicy tuna and a sweet-spicy dressing. - 580 p.

Chopped salmon sashimi with uni sauce- sounds strange, but this is nothing more than the original performance of salmon tar-tar with caviar sea urchin(uni). For fans of its unusual taste, the dish will become an indisputable favorite. - 580 p.

Rolls- in Totoro, all rolls, without exception, are striking: both in size and original performance... However, such extraordinary variations as rolls with scallops, truffle salsa and carrot chips or Lakedra with hamachi, mango salsa and lychee are in great demand - a real kaleidoscope of tastes. - 640 RUB / 880 RUB

Stewed shrimps with Grand Marnier sauce and yuzu zest- shrimp in a dessert way - why not? Large, juicy and glazed with a subtle citrus scent original filing on algal crisp. In this version, you can safely take them instead of dessert. - 580 p.

Sake- for every taste and color. Serving traditionally in masu - special wooden coasters for a glass. It is customary to pour sake until it starts pouring out of the edges - this is a symbol of Japanese generosity and hospitality.

BUBA by Sumosan

Chef: Stanislav Kim

“At BUBA, as in all restaurants in our chain, recipes are developed collectively. Sumosan today is a school led by Bubker Belkhit, from where we draw technology and learn impeccable quality. The most important thing in Japanese cuisine is a balanced combination of flavors. We want our guests to come not just to eat, but to enjoy these combinations. The same applies to the ratio of fish and rice in rolls - we reduce the content of the second to a minimum, which is why it is enough to just slightly dip the roll in soy sauce to highlight its taste. "

Atmosphere BUBA by Sumosan

Small but cozy restaurants BUBA, of which there are 4, are located in the center of Moscow. Each of them has its own atmosphere, however, this time the pastel-pacifying tones of the bar on Tsvetnoy took over. A traditional long bar along the bar, panoramic windows, dotted graceful decor on the ceiling and walls. A quiet place for philosophical reflection and one-on-one meetings.

Kitchen BUBA by Sumosan

A clear, harmonious and not too large menu, at first glance gives a clear idea of the cuisine: there are various Japanese snacks, and traditionally several types of sashimi and sushi, soups, Japanese oysters, famous rolls, and, of course, hot dishes, noodles, etc. desserts.

EATWEEK Top Choice

Roll with seabass / Roll special BUBA- with this word there is an association that today they are prepared everywhere. The only question is how. However, BUBA by Sumosan is included in that small percentage of establishments where they strictly adhere to the traditional recipe and, achieving excellence in this, come up with new bright combinations. Delicate, with a truffle aroma or bright and spicy with tobiko wasabi - it's up to you. - 470 rubles / 450 rubles

Hand rolls with eel / "spicy tuna"- incredibly juicy, with a clear predominance of filling and delicate sauces that emphasize the taste, are eaten in one go. Even without soy sauce - 280 rubles / 320 rubles.

Crispy crab bags- tender crab meat, dressed in a masterfully executed paper-thin crunch and drops sweet and sour sauce- it remains to crunch and enjoy - 450 p.

Tiradito set: assorted 4 types of fresh, thinly sliced fish- salmon, perch, scallop and tuna - with ponzu sauce - immortal Japanese classics - 550 rub.

Steamed buns with crab: Remember when the famous steamed buns suddenly came into fashion? Here you will find an even lighter and more airy interpretation, with fresh crab filling and tobiko eggs. What is not an alternative to a meat burger?

Wasabi shrimp: another dish that has managed to gain universal recognition is a bright dish in which the main role occupied moderately sweet and juicy shrimp with contrasting, slightly spicy notes of Japanese horseradish wasabi. - 480 p.

Cheesecake " green tea» : The name of a mousse cake is more suitable for this dessert - it is extremely light, with a delicate taste of green tea and a sweet and sour note of raspberries in a thin layer of jelly on top. - 280 p.

Cutfish

Chef: Glen Ballis

“The Cutfish kitchen is a mix of tradition and our vision. In my opinion, traditional Japanese products have an original taste, and interesting combinations are born with them. The main principle that we use in the cuisine of restaurants is the emphasis on the product itself. The highest quality, the most delicious. And then we find a way of cooking, which will emphasize the taste, and not "hammer" it. "

Cutfish atmosphere

The red door of the new Cutfish on Petrovka immediately attracts attention, which is difficult to pass by. The concept of "sushi bistro" for Moscow was quite innovative in 2016, although in Japan itself such "Izakaya" (the so-called sushi pubs where you can sit, drink sake or beer and eat at the same time) are quite popular for meeting friends ...

Cutfish Kitchen

Brand chef Glen Ballis focuses on Russian favorite snacks - sashimi, sushi, rolls. The new Cutfish attracts the open kitchen-island, intriguing diners.

In many ways, the food concept of the menu is built around the Japanese robata grill. Its three-level design allows food to be cooked at different temperatures. Fish and seafood for sushi are brought exclusively from Japan, so the ingredients are no worse than at the fish market in Yokohama.

EATWEEK Top Choice:

Crispy tuna, truffle dressing- this crunch awakens the best gastronomic emotions in you. Sweet tuna meat, tobiko, aromatic sauce with truffle served on a wheat chip. - 990 p.

Salmon tartar- in this dish, the quality of the fish is most important, and here it is at its best. In Cutfish, tartar is served on a "green pillow", so it can easily replace salad, and for those on a diet and main course. - 550 p.

Wagyu beef- the dish must be ordered without fail, especially while the price for it is so democratic. Without getting up, you can meditatively turn the strips of meat with wooden sticks over the cocotte with coals, and achieve exactly the roasting that appeals to you personally. The quality of the meat is really excellent, the most refined variety of marbled beef justifies its cost - 2200 rubles.

Twenty years ago, we associated Japan with animated cartoons, ninjas, samurai, kimonos, etc. Only a few knew about the existence of Japanese cuisine. The clients of the first sushi restaurants were the Japanese themselves, who, by the will of fate, found themselves in Russia at the beginning of the dashing 90s.

Gradually, the fashion for them began to conquer the capital. Each of us can remember the moment when, for the first time in our life, instead of a fork, we took sticks and tried raw fish... And now we have selected the best sushi in Moscow, comparing bars, restaurants and cafes.

Our selection of the best sushi is determined by the following:

  • taste- only the best sushi can be called delicious;
  • service- in the best establishment "the client is always right", and if he is wrong, then this is not his problem;
  • price- expensive does not mean quality at all, so we will select the best sushi in Moscow based on their affordability.

The most demanded dishes on the menu of a bar or restaurant, without which no bill can do, are rolls and sushi. It is with them that we will begin to find out where the best sushi is prepared and served in the city. We determined taste and service empirically, i.e. having tried many different dishes in different places.

Taste is a subjective concept, "there are no comrades." But the service can be unambiguously characterized by such data as: speed of service, behavior and attitude of staff towards guests, cleanliness and convenience.

The average score is an important criterion when choosing sushi. For some, it is important to eat tasty food for a small budget, while for others, a solid bill from the most expensive restaurant in Moscow becomes a reason for pride.

To determine the pricing policy of the selected places, the site team added up the prices from the menu and divided them by the number of positions. As a result, we got the average cost of rolls for several restaurants. We used the same formula to calculate the cost of sushi.

Price comparison of five restaurants

No. 5. Restaurant Two sticks

In the rating "The Best Sushi in Moscow" the "Dve Palochki" chain moved from third to fifth place and, if it goes on like this, it will leave it altogether. The interior of the institution is made in an urban style. The halls are equipped with monitors, which are usually displayed on-line boards of Moscow airports.

Here you can find Japanese, Italian, Pan-Asian, American cuisines. Every year the quality and service of the establishment are decreasing. The Two Wands scenario is very similar to Yaposha's fate. Likewise, the service first fell, and then the quality of the dishes.

By the way, Two Sticks has, to put it mildly, a terribly inconvenient site out of all the participants in the rating. The developers tried their best to complicate the life of their customers. Perhaps this was done so that the user did not notice the markup on the delivery menu.

Service

If earlier the peculiarity of Two Chopsticks could be called a strong difference in service in different establishments (there were places where the service and attitude of the waiters were at a very high level, and there were those where they would accept an order only ten minutes after your arrival and bring an invoice only fifteen minutes later as you asked). Now, most establishments are becoming equally bad.

Taste

The quality and taste of the dishes in most of the Two sticks on the same level is normal. We did not find dishes that tasted so great, for which we would strive exactly in Two Sticks, but these are ordinary, acceptable dishes. Gradually, the quality of food also deteriorates.

Price

On the delivery menu, Two Sticks made a markup of about 20-40 rubles, but delivery is free (although it is free for everyone). There are 23 types of cold rolls, 8 warm and 27 sushi. The average cost of cold rolls is 344 rubles, warm - 384. Cold rolls are the most expensive in the rating. Sushi costs 98 rubles apiece.

California roll (crab meat, avocado, cucumber, tobiko caviar, rice, sesame seeds) - 360 rub
Philadelphia with smoked salmon(hot smoked salmon, cream cheese, rice, cucumber) - 340 r

# 4. Restaurant Tanuki

On the fourth line of the Way2day rating "The best sushi in Moscow" was the chain of restaurants "Tanuki". More than 50 establishments are located throughout Moscow. The pleasant interior of most establishments allows you to dine together or gather friends for a small celebration.

There are solid wooden sofas with soft capes. The tables are separated by decorative partitions, which is very convenient. Not everyone likes to be an unwilling listener to someone else's conversation. Despite the fourth position, "Tanuki" has the most convenient and pleasant site among our participants.

Service

Visitors will find a small present from the establishment - a cup of red hibiscus tea. It is poured from a teapot with a meter-long spout. The drink quenches thirst well and increases appetite. Waiters and hostesses are unobtrusive and unhurried. If you are very late, lunch at Tanuki may disappoint you.

Taste

The dishes have a decent standard taste, no surprises. The rolls are twisted tightly and neatly. Rice is cooked strictly according to the recipe. If you order the most popular items from the menu, then all the products will be fresh. The soy sauce is salty and the ginger is hot.

Price

The menu includes 42 types of cold rolls, 7 warm and 23 types of sushi. Having carefully studied the menu, we calculated that the average price of cold rolls is 302 rubles, warm - 330 rubles and 101 rubles - sushi.

Syake California (with salmon, avocado, cucumber, rice and tobiko caviar) - 360 rub
Philadelphia (with salmon, cucumber, avocado, rice and soft cheese) - 395 rub

No. 3. Restaurant Gin no Taki

Gin no Taki moved up to third place from second in our ranking. One of the oldest Japanese restaurants in Moscow. The interior design is kept in a traditional style. The largest tables for only 6 people. To comfortably accommodate a company of 8 or more people, you need to ask the waiters to move tables of different heights.

Service

Unfortunately, the service in the establishment is not improving, but only getting worse. The waiters are not only not fast, but sometimes completely forget or confuse your order.

Taste

The food as well as the service starts to deteriorate. Some of the dishes do not match the photographs on the menu, but most of them are still truly Japanese and delicious. The fish is fresh. The products are carefully selected. Real pleasure can be obtained from the design of the sets, which can delight even the most demanding visitors. "Gin no Taki" goes down to the third line of the rating "Best sushi in Moscow".

Price

25 types of cold rolls, 9 - warm and 19 - sushi. The average price of cold rolls is 332 rubles, warm - 408 (the most expensive of the rating). Sushi costs about 110 rubles per item, which is also clearly more expensive than all other places in the ranking.

California with salmon (salmon, rice, cucumber) - 375 rub
Philadelphia (salmon, avocado, rice cream cheese) - 449 rub

# 2. Restaurant Niyama

From the first place, Niyama descends to the second. A network of establishments (21) located throughout Moscow and other cities. The restaurant's management works not only on the interior, but also on the entrance lobby, so that guests from the sidewalk to the table are met only with high-class finishes and crystal cleanliness. A sincere hostess welcomes you at the entrance and always offers the best available tables, regardless of the number of guests. Here you can taste the best sushi in town.

All establishments of the chain have a unique designer interior. Waterfalls, live greenery, soft sofas and spaciousness create a light, relaxed atmosphere. The distances between the tables are large and the conversation at one table does not disturb the guests at the other at all.

Service

The waiters take orders quickly and accurately. Any wishes regarding the composition of the products in the dishes are fulfilled unmistakably. With rare exceptions (for 1-2 establishments, where, unfortunately, nothing changes for the better), the administrators are extremely friendly and welcoming.

It's nice that guests are seated at the tables that they like, and not at those where a larger company can be accommodated and the restaurant will receive more profit from them. Unfortunately, there were cases of poor service, and in some places it did not give a damn, but in general, everything is on the level.

Taste

Ready meals and drinks are served in a timely manner: hot - hot, cold - cold. A huge selection of dishes will allow everyone to find their own. Appearance and the taste of the rolls in Niyama is delicious. Only fresh ingredients are used.

They are well-chosen for each roll or sushi. V the right proportions are combined good fish, rice, seaweed and other goodies. It is gratifying to see that soy sauce is not diluted here - it is really thick and not diluted.

We found a dish for which we had chosen Niyama among all the establishments - Syake Sandochi. You can try it both in a regular menu and in a business lunch. In just one establishment, we were faced with the poor quality of the manufacture of these rolls (moreover, on an ongoing basis). But now, we recommend trying a similar dish (Persona Grata) in Yakitoria - it is much better there.

The tempura layer on hot rolls is thin and allows you to enjoy the excellent taste of the filling, not the fried dough. The only drawback is that the rolls are thickly sliced. Not everyone can eat one at a time.

Serving size is impressive, so when ordering a lot, be mindful. And if, nevertheless, something remains, then the waiters are happy to offer themselves to wrap everything with them. This does not prejudice the dignity of the guests, but, on the contrary, emphasizes the quality and taste of dishes that cannot be left.

Unfortunately, some of the chain's establishments provide mediocre food and service on an ongoing basis. Perhaps the reason lies in the savings on ingredients, and maybe in the staff of a separate place. But it is worth considering that in restaurants at the addresses: Moscow, Izmailovskoe sh., 69g, Albatros shopping center and st. Snezhnaya, 16, building 6 ... you need to be extremely vigilant when ordering dishes, stock up on time and not pay attention to the rudeness of the staff.

Price

There are 39 types of cold rolls in Niyama, 9 - warm and 24 - sushi. The average price of cold rolls is 315 rubles, which is almost the lowest price in our five. Warm rolls- the cheapest in our TOP 293 r.

Sushi costs about 89 rubles, and according to this indicator, Niyama, among other things, is at the lowest price bar from our rating. 10% discount is provided for an order made 6 hours before delivery or pickup. Niyama deservedly ranks first in the "Best Sushi in Moscow" rating and we hope that the franchise will not spoil this chain.

Syake California (salmon, tobiko, cucumber, avocado, rice) - 325 rub
Philadelphia (salmon, avocado, cheese and rice) - 395 rub

No. 1. Restaurant Yakitoria

Previously, Yakitoria was ranked 5th in the ranking of the best sushi in Moscow according to the site, but recently the owners have significantly raised the quality of food, assortment and service, and Yakitoria moved to 2nd place. Now, it surpasses all other networks, including in terms of delivery. It is gratifying that regardless of whether you come with discount coupons or not, you will equally receive decent service and food.

Almost 100 establishments in Russia and the CIS. The interior is made in a classic japanese style... If you are going big company, then the tables can be connected and everyone can fit. Both soft sofas and ordinary wooden chairs are available.

Service

In recent months, the service in Yakitoria has increased significantly. It is not known what this is related to, but it's great. If before there was a tangible difference between institutions (somewhere they serve quickly, somewhere very slowly), now you hardly notice it. In most places, the service has risen, but it is worth noting that there are still cases of unsatisfactory service, but there are significantly fewer of them.

Taste

Excellent cuisine and decent taste of the dishes. Here you can have a good meal at a business lunch and have a pleasant evening with your loved ones. The introduction of new dishes to the menu had a positive effect on the impression of Yakitoria. We highly recommend trying the hot roll (if you love them) Persona grata with a special sauce.

Price

The menu includes 37 types of cold rolls, 10 warm and 29 types of sushi. Prices in Yakitoria are reasonable - the average price of rolls is 331 rubles for cold rolls, 310 for warm and 100 rubles for sushi.

When choosing a Japanese restaurant in Moscow, you cannot give preference to one institution. High competition in one of the restaurants has led to the fact that at least 5 restaurants have been competing for the title of the best for several years now. From this variety, everyone will be able to choose for themselves exactly the one that they like.

Peculiarities

There is a real Japanese restaurant in Moscow, and fortunately, it is not alone. It is easy to check the authenticity of the dish, since the cuisine of the Land of the Rising Sun has at least 3 distinctive features:

  • no meat dishes, because since ancient times, cattle have not been raised in Japan;
  • they have special varieties of rice, which is quite difficult to find in ordinary stores and supermarkets;
  • most dishes are served raw or minimally cooked.

The listed rules apply only, but due to the high demand for signature dishes, many chefs slightly violate the list of ingredients and the technological process. This cannot be considered disrespectful or arbitrary, because, in fact, such experiments sometimes give rise to real masterpieces, emphasize the individuality of the restaurant and expand the customer base of the institution.

Making the right choice

Walking around Moscow, you will notice that restaurants and cafes are found on every corner and have long turned into one of the main surroundings of the capital. They are decorated with bright and mouth-watering signs, luring customers by promising them a real feast.

Today restaurants are divided into Asian and European. Each kitchen is divided into many varieties. One of the most visited today is the Japanese restaurant. In Moscow, with a large number of such places, it is difficult to figure out where the authentic food of the Land of the Rising Sun is served. A special feature of the kitchen is the specific cooking technology. A Japanese restaurant is a place where people come for new emotions and taste sensations.

And in order not to be disappointed in Japanese cuisine, you need to choose the right institution. Therefore, we offer you a rating of Japanese restaurants in Moscow.

Top 5

The fifth place was given to the "Tokyo" restaurant. It is located in a convenient place on the corner of the Arbat, so it will not be difficult to find it. The halls are decorated in an oriental style. According to visitors' reviews, the most delicious dishes from the menu - rice noodles and sushi.

The fourth place is occupied by the most fashionable Japanese restaurant in Moscow - "Megu". Distinctive feature The establishment is considered a large selection of sake and rare ingredients of dishes that are difficult to find not only in the capital, but in the world.

The third place belongs to the U-Me restaurant. It is located on Pokrovka and has been pleasing its visitors with traditional cuisine for 12 years, prepared by the hands of a real professional Nogami Takashi.

A Japanese restaurant in Moscow receives silver in the rating, reviews of which from the day of opening to the present day have only been positive. The institution has a beautiful and tender name "Sakura Blossom". Chef Hiroki Arakawa has been demonstrating his skills for several years and amazes guests with a variety of Japanese dishes in line with modern trends in cooking, decoration and serving.

And finally, the first place is rightfully awarded to the Seiji establishment. Even the best Japanese ones cannot be compared with this temple (it is difficult to call it in another way). traditional cuisine The countries of the rising sun.

Dearest

The Seiji restaurant opened 12 years ago and the next year after its opening it was included in the list of the world's best gastronomic establishments, according to Michelin experts - one of the most reputable restaurant guides.

A professional team of the best chefs was able to dispel the prevailing stereotypes in a short time, convince the residents and guests of the capital that the cuisine of Japan is diverse and is not limited to rolls and sushi. Visitors to the restaurant are happy to come to try new dishes that are popular in Japan, but unknown in Russia.

The restaurant belongs to Seiji Kusano, who has been showing the world the gastronomic traditions of his homeland for more than thirty years. Today he owns several restaurants in Europe, but only the Moscow one bears his name.

Japanese restaurants in Moscow. List with addresses

The restaurant "Who Lives Well" (17 Prechinskaya Naberezhnaya) specializes not only in Japanese cuisine, but also in European cuisine. The menu has a large assortment of meat and children's dishes, as well as a good wine list.

The Fumisawa Sushi project (Petrovka 5) belongs to the famous Arkady Novikov. A distinctive feature of the institution is the author's cuisine, as well as a specially designed menu for vegetarians.

"Sushido" is a restaurant located in one of the simplest but cozy establishments in the capital. Located at 22, Lithuanian Boulevard. According to visitors' reviews, good cocktails are served here.

These are not all Japanese restaurants in Moscow. The list can be continued for a long time, but there is one institution in Moscow, which became famous not only for its excellent cuisine, but also for the fact that it attended its opening great amount domestic and foreign celebrities.

The most "star"

On November 10 last year, popular actor Robert De Niro visited the capital for the official opening of the Japanese restaurant Nobu. The discovery was truly stellar. Philip Kirkorov, Toni Braxton, Rudkovskaya Yana, Andrey Malakhov, Glucose, Igor Nikolaev, Sati Kazanova and many others came to congratulate the owner.

Who knows, maybe soon he will be able to take the palm from “Seiji”.
