The answer is nothing! You can of course use curd cheeses like Philadelphia, but then you will not get Tiramisu, but some other dessert with curd cream... The difference is that the main (and usually the only) ingredient in Mascarpone is cream and tastes creamy, not curd.

The next ingredient that can be problematic is the Savoiardi biscuit - an elongated flat biscuit topped with sugar, also sold as the Savoiardi or Lady Fingers. If you could not find Savoyardi in stores, you can cook it yourself, later I will try to lay out the recipe.

Another important point, because dessert does not lend itself heat treatment, do not forget to wash the chicken eggs in warm water with soap.

As you can see, cognac is not a required ingredient in our recipe. I cooked without cognac and I really like this Tiramisu, but it turns out great with cognac, cognac is in perfect harmony with coffee, so it's up to you to decide.

Preparation

We prepare all the ingredients. Brew a strong espresso and let it cool.

Wash eggs thoroughly in warm water and soap. Separate the whites from the yolks carefully. It is important that not a drop of the yolk gets into the protein, otherwise the whites will not beat up. We put the squirrels in the refrigerator for now, we will need them later.

Add sugar to the yolks.

Beat the yolks with sugar until the mass turns white, this may take a few minutes. You may be left with a little undissolved sugar, if not too much, then do not worry, it will dissolve in sweat. If there is a lot of sugar left, beat the mass more.

Put the whipped yolks with sugar in a large container, add mascarpone there.

Mix the yolks with sugar and mascarpone until smooth, using a mixer at low speed.

Beat the whites with a pinch of salt until stable peaks, this can take about 3-7 minutes, depending on the power of the mixer.

If you have any doubts whether the whites are whipped to the desired state or not, just gently try to turn the container with the whites. If the whites are whipped, even if you turn the container upside down, the whipped whites will remain in the bowl.

We spread the beaten egg whites into a mass with yolks and mascarpone. Now the mixer cannot be used, you need to work carefully, otherwise the cream may lose its airiness. Using a spatula, mix the cream in a circular motion from bottom to top, i.e. raise the cream from the bottom of the dish up. No need to rush, do everything very carefully, we need to keep the air in the whipped egg whites.

We get very airy and delicate cream Tiramisu.

Pour the cooled coffee into a dish with a flat bottom, into which the Savoyardi stick is placed. A small plastic container works very well here. If you make Tiramisu with cognac, then add cognac to coffee.

We immerse each Savoyardi stick in coffee and immediately take it out. I kept it for about 2 seconds, even if at first it seems that the cookies are still dry, then they will be soaked completely and become soft. If you keep cookies in coffee for longer, then as a result, they turn out to be rather wet in the dessert.

Put the soaked coffee sticks on the bottom of the mold. Here you can use a large mold like mine, or you can take small molds or glasses and make desserts in them for one serving at once. I like the second option less, because then the entire refrigerator will be filled with a bunch of molds, but serving them, of course, is easier. By the way, my form measures 17x26 cm, height 5.5 cm.

Put about half of the cream on top of the Savoyardi layer, level it.

Place the second layer of coffee-soaked cookies on top of the cream.

Put the remaining cream on top, level it and put it in the refrigerator for several hours, or better overnight. The longer you keep Tiramisu in the refrigerator, the better the cream will hold its shape. After a few hours, you will not be able to get a neat piece of dessert out of the mold, you can only eat it with a spoon, although this will not affect the taste in any way. After 8-10 hours Tiramisu will keep its shape much better and you can already cut a beautiful piece. My Tiramisu has been waiting in the refrigerator for over 12 hours.

Sprinkle with cocoa dessert before serving. You can replace it with grated chocolate, but I like it better with cocoa.

    Cooking savoyardi cookies for the base of the cake(if you do not want to bake, then buy savoyards in the store - you will need 2 packs of 400 g each).
    We turn on the oven to heat up to 180 degrees. For the dough, take 5 eggs, carefully separate the whites from the yolks. Mix the yolks with vanilla and 20 g of sugar (this is 1 tablespoon). Beat until the sugar crystals dissolve.

    Beat the whites separately into a light foam. Then add the remaining 100 g of sugar in portions and continue to beat with a mixer until firm, stable peaks.

    Mix the whites and yolks with a silicone spatula until smooth.

    Add sifted flour and starch in three steps, knead with a spatula, carefully so as not to sediment the dough.

    We transfer the dough for the Savoyardi into a culinary bag with a round nozzle (there will be a lot of dough, I divided it into three parts) and place the cookies on the parchment - about 7 cm long, at a distance of 2 cm from each other. Sprinkle with icing sugar on top.

    We bake Lady fingers"At a temperature of 180 degrees for 10-15 minutes. Depending on the diameter of the Savoyard nozzle, they can turn out to be of different thicknesses, for me they are small, about 1 cm, baked very quickly (in total, 3 baking sheets turned out, the total amount was more than 100 pieces). If you have a wider nozzle, the cookie will turn out taller and take longer to bake. Savoyardi should dry well over the entire area, while remaining light, soft cream color. Remove it from the parchment and cool it on the wire rack.

    We brew strong coffee for impregnation.
    Ideally, use espresso, but if there is no coffee machine, then brew strong coffee in a Turk: for 2 teaspoons of finely ground coffee - 200 ml of water. We filter the finished drink to get rid of the sediment. We pour a couple of tablespoons of coffee (50 ml) and dilute the gelatin in it, leave it aside to swell.

    Preparing the cream for the Tiramisu cake.
    Put 5 yolks in a bowl, mix with sugar, add vanillin or vanilla essence. After stirring, put in a water bath.

    Vigorously stirring with a whisk, keep the yolk mixture in a "water bath" for about 4-5 minutes (low fire), bring it to a temperature of 40-45 degrees. The sugar crystals should dissolve and the yolks should turn white. In no case should you overheat, otherwise your yolks will cook! The mass only needs to be warmed up so that the sugar dissolves completely and the eggs are thermally processed.

    Remove from the water bath and beat the yolk mass until it cools completely and acquires a dense texture, about 4-5 minutes. Then add mascarpone to a bowl and pour in the gelatin diluted in coffee (preheat so that there are no lumps of gelatin, and cool to room temperature). Stir the mass until smooth - with a mixer at low speeds.

    Whisk the cream separately until thick and add them in small portions, gently stirring with a spatula.

    Let's start assembling the cake.
    Put cookies in one row at the bottom of a split form with a diameter of 25 cm. Pour cognac into the remaining coffee. Grease the cookies coffee impregnation with a brush. It is not necessary to fill the savoyardi with impregnation too generously, otherwise the cookies will become sour.

    Lubricate the top with a thick layer of cream (it must be divided into three parts according to the number of cakes). Then lay out the biscuit layer again, blot the coffee and cover with cream.

    In total, you should get 3 layers of cookies and 3 layers of cream. The last layer should be cream. We put together with the form in the refrigerator for 3-4 hours (you can leave it overnight).

    Decorating the cake.
    Remove the split form and transfer the cake to a large serving dish using a pair of wooden spatulas. Grind 2-3 Savoyardi cookies with 1 tablespoon of cocoa powder in a blender bowl and sprinkle the edges of the cake with the resulting crumb. Decorate the top with cream, whipped with powdered sugar, and generously sprinkle with cocoa sifted through a sieve.

    You can decorate the cake to your liking. If you collected not three layers of cookies, but two, then you can lay out the remaining savoyards along the side and tie them with a decorative ribbon, the cake will turn out to be very elegant. You can apply cocoa powder on top through a stencil with any pattern, and instead of whipped cream, use part of the cream (which was used to assemble the cake).

  • cocoa powder (100 g);
  • white wine ((1 spoon);
  • liqueur, cognac (4 tbsp. l.).

This whole set should be enough for 6-9 servings at once.
