Cheesecakes with berries, recipe with photo

1. The most main secret dessert lies in the choice good cottage cheese... The most delicious cottage cheese pancakes with berries are obtained from homemade cottage cheese: tender, slightly moist, preferably fatty. If you take a pinch of cottage cheese, it should be easily rubbed between your fingers.

If there is no way to buy a high-quality homemade cottage cheese, it can be made at home from good live (with a short shelf life) kefir. To do this, pour kefir into a glass or metal container and put it on water bath(in a pot of water, for example, in a colander). Cover with a lid and simmer kefir for 20-30 minutes over low heat. It is advisable that the kefir does not boil, otherwise the grains will turn out to be tougher. Then we filter everything through cheesecloth, tie the cheesecloth with the curdled mass into a knot and hang it on a spoon in a deep saucepan so that there is somewhere to drain the whey. There are many devices for weighing cottage cheese: for example, you can put cottage cheese in a sieve with fine holes, or you can cover a colander with gauze. We leave for 3-6 hours. From 1 liter of fatty kefir, about 200 g of cottage cheese is obtained.

Put 200 g of cottage cheese into a bowl for kneading the dough. If you cook cheese cakes for the whole family, increase the proportions of the ingredients. Grind the curd with a fork, grind through a sieve or puree with a submersible blender.

2. Break one large chicken egg into a bowl of cottage cheese and mix thoroughly until homogeneous mass.

3. Add 1.5 tbsp to the curd mass. sugar and a pinch of salt. Condensed milk or honey can be used instead of sugar to taste.

4. Wheat flour sift and add to the rest of the food in a bowl. Pour in 0.5 tsp. baking powder for the dough to make the curd cakes more lush. Add flour 2 tablespoons, mix so that there are no lumps of flour and look at the consistency. If the mass is watery, you can add 1 more tablespoon of flour. We arm ourselves with a grater with small holes and rub the zest of lemon or orange, not reaching the white film. Add a small amount of lemon zest to the bowl with the ingredients. Thanks to the zest, the prepared cheesecakes will be incredibly fragrant. It can be used dried, although in fresh it is more aromatic.

5. We carefully wash the berries of red, black and white currants, cut off the leaves and stalks. We dry it from the liquid in a colander or a napkin, and then add it to the curd mass. Gently mix in juicy berries, trying not to break their integrity.

6. Turn on the oven to preheat 180 degrees. Very beautiful cottage cheese pancakes with berries in the oven are obtained in portions silicone molds... We spread the curd-berry mixture in them with a spoon. We send it to the oven to bake for 30-40 minutes. The baking time is individual for each oven and depends on its power. Focus on your technique.

7. Take out the molds from the oven and check the cheese pancakes for readiness, piercing them in the center with a toothpick or wooden skewer. If there are no liquid traces of cottage cheese left on the stick, the syrniki are ready.

8. Cool slightly and remove the baked goods from the molds. Sprinkle with grated chocolate or powdered sugar through a fine sieve, decorate fresh berries...
