Veal liver cake

  • Veal liver - 600 g
  • Eggs - 4 pcs.
  • Milk (2.5%) - 500 ml
  • Flour (fried) - 200-250 g

  • Sunflower oil- 80 ml
  • Homemade mayonnaise - 500 ml
  • Adyghe salt - 30 g

Put the veal liver in hot water for 3-5 minutes. Then we remove the thin top film from it.

We cut the liver into several pieces and remove the veins. We pass the liver through a meat grinder twice. After the first time, add a little sunflower oil to the minced meat so that it is as homogeneous as possible.

Mix eggs, milk and melted vegetable-cream mixture. Gradually add minced meat and flour fried in a dry pan. We bring the liver dough to the state of sour cream. Season with Adyghe salt.


Pour the liver dough with a ladle into a skillet preheated with oil. Fry over medium heat until a crust appears - about 3-5 minutes. After that, turn over and fry the liver cake for about 2-3 minutes until fully cooked. We also bake 9 more cakes.

Preparing the filling for the cake. Dice the onion and fry until soft. Rub the carrots on a coarse grater and add to the onion along with two tablespoons of boiled water. Simmer vegetables together for another 8-10 minutes. Transfer the onions and carrots to a colander so that they cool down, and also so that the glass has excess oil.

On each cake, evenly distribute the mayonnaise first (leave 1 cm from the edge), and then the carrot-onion filling.

Lubricate the top cake with mayonnaise.

Decorate with grated hard-boiled yolk and sprigs of herbs.

Chicken Liver Cupcake

  • Chicken liver - 200 g
  • Onions - 2 pcs.
  • Hard cheese - 100 g
  • Parsley - 50 g
  • Carrots - 1 pc.

  • Milk (2.5%) - 125 ml
  • Eggs - 3 pcs.
  • Flour - 180 g
  • Baking powder - 10 g
  • Sugar - 10 g

Cut the onions and carrots into small cubes and fry in the vegetable-cream mixture until golden brown. Add the chicken liver, cut into small pieces, and fry everything together for another 5 minutes, stirring constantly.

Salt and pepper to taste. Add sugar, mix.

We rub the cheese on a coarse grater. Chop the parsley.

Mix eggs, milk and sunflower oil. Add grated cheese and flour with baking powder. Stir in cooled vegetables with chicken liver into the dough.

Pour the dough into a parchment-lined mold and place in an oven preheated to 180 ° C for 45-50 minutes.

Homemade mayonnaise

  • Eggs - 2 pcs.
  • Salt - 10 g
  • Sugar - 25 g
  • Boiled water - 50 ml
  • Mustard - 5 ml
  • Lemon juice - 15 ml
  • Sunflower oil - 300 ml

Mix eggs, salt, sugar, cold boiled water, table mustard and lemon juice.

Beat with a mixer or hand blender. Add the sunflower oil to the mass in a thin stream, continuing to beat until smooth.

Adyghe salt

  • Garlic - 2 cloves
  • Ground red pepper - 2-3 g
  • Ground black pepper - 2-3 g
  • Coriander - 2 g
  • Hops-suneli - 1 g
  • Salt - 10 g

vinegar (6%) - 20 ml
water - 200 ml
salt - 5 g
ground black pepper - 3 g
cumin - 2 g

Soak the fat mesh in water and vinegar, then rinse, dry and cut into rectangles 30 × 10 cm.

Rinse and boil the rice until half cooked. Slice up the liver. Chop and sauté the onion. Chop the cabbage. Combine the liver with rice, cabbage and sautéed onions. Add salt, pepper and cumin.

Soak gelatin in water. Cut the pumpkin into pieces, place on a baking sheet, sprinkle with salt, rosemary and garlic. Bake at 180 ° C for 25 minutes.

Mix flour with baking powder. Beat the eggs, add sour cream, sugar, salt, turmeric, chili and baking powder. Mix until smooth.

Pour the dough into three identical tins and bake the cakes for 20 minutes at 200 ° C.

For jam - soak gelatin in water. Peel and slice the apples. Add sugar to the cranberries. Grind the apples and cranberries through a meat grinder. Simmer the puree over low heat for 20 minutes and cool. Add 1 tablespoon steam gelatin. jam.
