How to bake a classic English shepherd's pie. Shepherd's pie - recipes with photos

I love dishes with history, such as shepherd's pie, classic recipe which goes back centuries. The cake is, in fact, potato casserole with minced meat, only with history. Old dish British cuisine is sometimes called English, Irish, Scottish. But in the early cookbooks it was called country or cottage pie. Delicious pastries were made by the poor living in small rural houses (cottages), mostly shepherds.

The pies were baked from pieces of meat left over after dinner. After potatoes were introduced as a staple food for the poor in 1791, baked goods were made with mashed potatoes.

Nowadays, the food of the shepherds is to the liking of people of all classes. Recipes from Jamie Oliver and Gordon Ramsay are especially popular. Both recipes claim to be classic, since the principle of cooking has been preserved from ancient times, when vegetables are stewed with meat, then covered with a layer of mashed potatoes and baked. Both authors include celery, onions, carrots in the ingredients, which also corresponds to the tradition.

Classic Shepherd's Pie Recipe

Here is a recipe from Gordon Ramsay.

You will need:

  • Potatoes - a kilogram.
  • Large onion.
  • Large carrots.
  • Garlic - a couple of cloves.
  • Tomato paste - a tablespoon.
  • Worcester sauce - 2 tbsp spoons (replacement with soy is possible).

Step-by-step recipe for making a cake

  1. Boil potatoes, mash with milk. Pepper the mass. Some recipes mention nutmeg. If you want - put in mashed potatoes.
  2. Enter the yolks, 2 tablespoons of grated cheese. Stir the mass.
  3. At the same time, start filling the pie. Heat oil in a frying pan, add minced meat, fry. Add coarsely grated carrots and chopped onion cubes to the meat. Continue to fry, stirring constantly.
  4. Pour in Worcestershire sauce, red wine, tomato, chopped rosemary, celery and thyme.
  5. Make the fire less powerful. Continue braising the contents of the pan until the wine has evaporated.

Cooking instructions

5 hours 30 minutes Print

    1. Preheat the oven to 170 C. Rub a shoulder of lamb with butter, a pinch of salt and pepper. Transfer to a narrow baking dish, add a little hot water and bake for 2-3 hours, until the meat begins to fall off the bone on its own. Tool Oven thermometer How the oven actually heats up, even if you set a specific temperature, can only be understood with experience. It is better to have a small thermometer on hand, which is placed in the oven or simply hung on the grate. And it is better that it shows degrees Celsius and Fahrenheit at the same time and accurately - like a Swiss watch. A thermometer is important when it is necessary to strictly observe the temperature regime: for example, in the case of baking.

  • 2. Remove the lamb from the oven, let it cool slightly in the form. Then take out the lamb, remove the meat and crispy skin from the bone and chop coarsely. Pour the remaining fat after baking into a clean dish, pour into a mold with fried boiling water. Set aside for a while. Tool Silicone forms for baking Silicone molds are more convenient than metal ones: they do not need to be oiled, food does not burn in them and they wash well. Plus, they bend, and therefore it is easier to remove them from the finished cake.

  • 3. For the filling, peel and coarsely chop the carrots, celery and onions. Fry the vegetables in a large saucepan over medium heat, adding 2 tablespoons of the remaining lamb fat. After 5 minutes, add the rosemary leaves and sauté for another 20 minutes, until the vegetables are caramelized. Tool Pasta casserole The main rule of a good pasta pot is to be large. In order to cook just a pound of spaghetti, you need at least five liters of water. Another problem is to drain that much hot water. The problem can be solved by purchasing a saucepan with a special insert that can be removed along with the spaghetti, and all the water will remain in the pan.

  • 4. Add flour, lamb, bones and juice from the baking dish to the vegetables and pour in 1.5 liters of water. Bring to a boil, then cover and simmer for 40 minutes.

  • 5. When the contents have thickened, remove the bones and strain into another saucepan. Set aside vegetables and meat. Boil the sauce to the desired consistency. Traditionally, this sauce is called gravy. Shinua Sieve Tool So that no bones, pulp, peel and other parts that are superfluous in terms of consistency remain in the sauces, it is filtered through a fine sieve. In a cone-shaped one - for its resemblance to a Chinese cap, it is also called shinua, a Chinese one - it is convenient to squeeze the cake out to the last drop, and the filtered sauce flows out of it in a thin stream.

  • 6. For the bottom of the pie, peel and coarsely chop the potatoes. Boil in salted boiling water until soft. Drain, let the potatoes dry, then add butter, grate 50 g of cheese, salt, pepper and knead properly until a tender, homogeneous consistency. Allow to cool completely. Tool Ceramic Knife Japanese ceramic knives are made of zircon oxide, a material that occupies a place in the middle between steel and diamond on the hardness scale. Moreover, they are lighter than metal, do not oxidize products, do not absorb odors and do not require sharpening for at least three years.

  • 7. Preheat oven to 200 C. Grease a baking dish with the remaining lamb fat. Sprinkle the bottom and edges of the mold bread crumbs and rosemary leaves - this will add crunch to the crust. Spreading a little mashed potatoes, form the bottom and sides of the cake, 1 cm thick.

  • 8. Place the filling and a few tablespoons of the gravy sauce. Place remaining puree on top and form a pie lid. How to pinch the edges and make beautiful pattern with a fork. Grate the remaining cheese on top, sprinkle with breadcrumbs and drizzle with olive oil. Bake on the bottom shelf of the oven for 1 hour, until the cake is golden and crispy. Serve with green peas and sauce, for piquancy, you can add a few finely chopped mint leaves to it.

Shepherd's pie is a traditional British dish. Despite the romantic name, it is nothing more than a potato casserole with meat. Shepherd's pie was originally a pie of the poor, once made from the remains of mashed potatoes and fried meat... Today, shepherd's pie is served in best restaurants, but to try it, you don't have to go to England, it's easy to make it yourself.

So, let's prepare mashed potatoes, add grated cheese, egg and flour, put in a mold, placing a layer of minced meat or pieces of any meat, and bake the dish in the oven. Shepherd's pie has excellent taste and aroma, believe me!

Ingredients

  • potatoes 500 g
  • minced pork 200 g
  • onions 2-3 pcs.
  • flour 3 tbsp. l.
  • ketchup 3 tbsp l.
  • vegetable oil 1 tbsp. l.
  • cream 13% 150 ml
  • egg 1 pc.
  • hard cheese 100 g
  • salt, pepper to taste

How to make shepherd's pie

  1. I prepare everything you need. Peel and wash the potatoes and onions.

  2. I cut the potatoes into 4 parts, fill them with water, add a little salt and boil until tender.

  3. At this time I fry in vegetable oil onion until soft, then spread the minced meat. I mix and rub at the same time so that no lumps form. I keep it on the fire for 3-4 minutes, until the meat turns white, there is no need to bring it to readiness.

  4. I add ketchup.

  5. When the potatoes are boiled, I strain them, pour in the cream and use a special nozzle to turn them into a smooth, homogeneous puree.

  6. I break the egg.

  7. I add flour. I mix.

  8. I rub the hard cheese on a fine grater and add it to the puree. I stir with a spoon.

  9. Grease the baking dish with vegetable oil and spread half of the potato-cheese mass.

  10. I distribute all the minced meat on top.

  11. Then I cover it again with a layer of puree. I make patterns with a fork. You can put the mass into a pastry syringe and squeeze out in the form of beautiful flowers.

  12. I bake it in the oven at 180 degrees for 40-50 minutes, the top of the pie should be golden brown.

  13. Serve slightly cooled, hot shepherd's pie is very problematic to cut and lay out beautifully.

Boil the potatoes until tender in salted water, drain and mash the mashed potatoes with a crush. Add cream (or milk) and butter to the potatoes.

Grate the cheese and add it to the puree (leave a little cheese to sprinkle the top of our "shepherd's pie").

We drive in eggs. Knead mashed potatoes with cheese and eggs with a crush until smooth.

Chop finely peeled onion and garlic.

Heat vegetable oil in a frying pan and fry the onion and garlic, stirring occasionally, until the onion is transparent.

To the onions fried with garlic, add chopped meat(I used minced pork).

Pour the broth into the minced meat with vegetables, add the Worcester sauce, tomato paste(I replace tomato paste with 1 heaped teaspoon of paprika, solely from my family's preferences), salt and pepper to taste.

Simmer the minced meat over low heat until cooked (15-20 minutes), during the stewing, the meat is saturated with the taste of spices and becomes very aromatic.

After 15-20 minutes, the meat will be ready and you can start assembling the English Shepherd's Pie. To do this, line the baking dish with parchment.

Put half of the mashed potatoes on the parchment.

Put the minced meat on top of the mashed potatoes.

Cover the minced meat with the remaining puree.

And sprinkle with the remaining grated cheese on top.

We put our pie in a preheated oven and bake for 30 minutes at 180 degrees (until golden brown).

Delicious, aromatic English shepherd's pie is ready, take it out of the oven and chill it a little so that it cuts well. Serve the cake by sprinkling green onions or greens. The dish goes well with both fresh and pickled vegetables. Try to cook this delicious casserole called "English Shepherd's Pie" and, I am sure, family and friends will appreciate your efforts at its true worth!

Bon appetit, everyone!

The history of this dish is rooted in the past. Even in old Britain and its colonies, housewives actively prepared food. In early cookbooks, the recipe for such a casserole was described in a rather unconventional way, indicating that you need leftover roast meat of any kind from dinner and some mashed potatoes. Indeed, traditional pie made from meat (usually lamb or lamb, but today beef, and chicken, and pork are also used) and mashed potatoes, sometimes vegetables, herbs and spices are added.

Ingredients

  • Potatoes 3 pcs.
  • Nutmeg 1 pinch
  • Coconut milk 2 tbsp. l.
  • Lentils 100 g
  • Bulb onion 1 pc.
  • Garlic 2 pcs.
  • Carrots 1 pc.
  • Sweet bell pepper 2 pcs.
  • Tomatoes in own juice 1 tbsp.
  • Chili pepper 1 pc.
  • Green beans 50 g
  • Parsley 1 sprig
  • Dill 1 sprig
  • Cilantro 1 sprig
  • Edible salt to taste
  • Ground black pepper 1 pinch
  • Olive oil 2 tbsp l.

Preparation

You need to start cooking the pie with the preparation of lentils. The cereal is thoroughly washed, and then poured with water, adhering to a ratio of 1 to 2, that is, for one glass of cereal, two glasses of water are needed. Send the container of lentils to the stove and cook until tender.

At this time, you need to prepare the frying of vegetables. You should take carrots, peel and dry. Onions and garlic are peeled, washed and dried in the same way. Bell pepper need to be washed and freed from seeds and stalks. Now cut all the vegetables into small cubes. Send the pan to the stove, add a little vegetable oil and after heating it, put all the vegetables in a bowl. They need to be fried until a light golden hue appears.

Now ready-made lentils should be sent to the pan. Also salt and pepper the food to taste, using pepper and salt. It takes no more than two minutes to cook all the ingredients together. This will be enough.

After that, pour the tomatoes in their own juice into the pan. You can take tomatoes along with pepper, it's a matter of taste. Stir all ingredients and continue braising for about five minutes.

Now you need to send to the pan green beans... You can also frozen. She prepares very quickly. Stew a dish with beans for no more than one minute. Do not worry, green beans will have time to get ready.

Then you need to prepare the form in which our shepherd's pie will be. Put the prepared lentil-vegetable mass into a mold. Remember to flatten so the casserole is even on top.

Now take the potatoes, peel them, wash and dry. Then boil the potatoes in water (don't forget to salt to taste). When the potatoes are ready, mash them by adding pepper and coconut milk(Optionally, you can replace it with cow or cream if you are not on a plant-based diet). Stir the mashed potatoes thoroughly until smooth.

Now you need to put the mashed potatoes in the dish where you have already sent the lentil-vegetable mixture. Sprinkle a tablespoon on top olive oil. Preheat the oven to a temperature of 180-200 degrees, then send the form with the future pie there and bake the food for about twenty minutes. Watch for readiness for potatoes. It should be browned.

That's it, the mouth-watering classic English Shepherd's Pie is ready. It can be served on the table.

Be sure to serve your food warm to make it flavorful and tasty. It turns out incredibly satisfying and very appetizing, try it and see for yourself. If desired, you can decorate the dish with sprigs of herbs on top or sprinkle with chopped herbs to taste. Bon Appetit!
