Soften the butter a little, leaving it for 30-40 minutes at room temperature, then grind it with regular sugar. Add vanilla sugar, then add eggs and beat until frothy. Mix flour with baking powder and lemon zest, combine the oil and flour mixture, mix thoroughly.

Put the dough on a baking sheet covered with parchment, form the sides. Lay out the washed and pitted cherries on top. Grate the frozen butter, or grind in a blender, mix with nuts, sugar and flour, then pour the resulting mixture over the cherries. Place the dish in a preheated oven and bake for 40 minutes until fully cooked at a temperature of 180º.

As you already understood, I often make shortcrust pastry pies with berries, especially in season. But it turns out very tasty with frozen berries, which are perfectly stored all winter in the freezer. As an example, I will introduce you to one of my favorite recipes with a photo - a shortbread cherry pie. The pleasant sourness of the berries goes well with tender dough and together they create a very successful flavor composition.

Ingredients:

- 300 grams of flour;
- 40 grams of sugar;
- 130 grams of butter;
- 2 tbsp. cold water;

For filling:
- 300 gr pitted cherries;
- 50 grams of sugar;
- 2 tbsp. starch.

Sift the flour and pour it into a container in which we will then form the dough. The container should be high enough to mix the ingredients comfortably.





We need butter at a room temperature, so you should get it out of the refrigerator in advance. If you have not done this, and time is already running out and it is time to do the cake dough, then you can heat the oil in microwave oven... But do not overdo it - the butter should not melt, it only needs to heat up.





Add butter to flour.





We also send sugar there.







Now we need to mix flour, butter and sugar. This can be done in two ways. The first is just with your hands. Yes, you read everything right, with your hands. This is fast enough and not difficult at all (provided that you still brought the oil to room temperature). The second way is to use a mixer for mixing. It will turn out even faster, but you will have to wash the whisks. So choose the method that is closer to you. In both the first and second cases, you should end up with fat crumbs.





Put 4-5 tablespoons in a separate container. spoons of these same crumbs, we will need them later, to decorate the cake. And from the rest of the bulk, we will make the dough.

We peel the cherries and let the juice drain. Place the cherries in a deep bowl.





Add sugar and starch to the cherries.

We send the dough to the oven, preheated to 220 degrees, for 7 minutes. During this time, it will slightly change its appearance, but, of course, it will not be completely ready yet.





We put the cherries in a mold, level them so that they lie flat.





Pour fat crumbs on top of the cherries, which we set aside before adding water to the dough.





And we send the form with the dough to the oven, which, as you remember, is preheated to 220 degrees. The baking time of the cake is 25-30 minutes. The top should be browned, and the dough should be completely cooked. The filling will remain liquid at this point, but do not worry, this is only as long as the pie is hot. When it cools down, the filling will harden.





We take out the cake pan from the oven, cool it for 5-10 minutes, and then remove the cake from the mold and cool it to room temperature.
