How to make blueberry patties. Berry filling

Remove the butter from the refrigerator in advance (2-3 hours before preparing the dough) so that it becomes very soft, creamy, or soften it in the microwave just before cooking. Also, about 1 hour before cooking, put out of the refrigerator the amount of sour cream and eggs required according to the recipe so that they also get warm.

Wash the lemon (orange) with hot soapy water and pour over boiling water to remove the layer of preservatives from its surface.

Immediately before kneading the dough, turn on the oven and heat it to 3.2 (180 ° C) (so that you can put the dough on it if there is no other warm place, for example, a heating battery, for it). In different containers measure out the amount required for the dough recipe. wheat flour with salt and granulated sugar.

Heat the milk in a saucepan or aluminum bowl over low heat until warm (38-40 ° C). Add 1 tsp to it. with a small slide of sugar (from the total amount for the dough), stir to dissolve, and crush fresh or dry yeast into it. Place the bowl / saucepan in a warm place for 5-10 minutes so that the yeast gets wet and swollen.

In a large dough mixing bowl (about 3.5 L), beat the eggs with the remaining dough sugar with a mixer and regular whisk until fluffy.

Add the swollen yeast to them, mix everything and add, sifting through a fine sieve, 200 g of wheat flour for the dough, stir in.

Put softened butter, sour cream and zest of half a lemon (or orange) grated on a fine grater into the dough, mix.

Add about 120 g more from the remaining flour into the dough (also sifting and stirring with a mixer) to thicken the dough. And then (in 2-3 steps) add the rest of the flour and knead the dough with your hands until it becomes homogeneous and elastic and does not well lag behind the hands and the walls of the dishes. As a result, the dough should be soft and pleasant to the touch.

Form from finished dough ball and put back in the bowl, then cover it with plastic wrap and place in a warm place for 40-60 minutes so that the volume of the dough increases by about 2-3 times.

During this time, wash and sort through the blueberries for the berry filling. Leave the washed berries on the table in an open dish to dry a little.

When the dough comes up, turn on the oven and heat it up to 3.2 (180 ° C), if you did not have it turned on in advance. Line a large baking sheet (28 × 38 cm) or any other one you have of the same or larger area with non-stick baking paper (rims are optional).

Wrap the dough that has come up with your hands and divide, preferably with a scale, into 25 identical pieces, rolling each into a ball and placing it on the table. Roll each ball in turn (starting with those that were made first) (if necessary, lightly sprinkle the table with flour) using a rolling pin into a circle of Ø 10 cm, put on it ⅓ teaspoon of starch, lightly smearing with a strip in the middle of the circle, berries ( about 2 teaspoons with a medium slide) and sprinkle them on top with ¼-⅓ teaspoons of granulated sugar. Form a pie blank by folding the stuffed flatbread in half and pinching its edge first in the middle, and then in turn from each end to the center (do this carefully so that berry juice does not leak out of the pie during baking). After this, the "scallop" of the dough must be wrapped with "pinches" on its side, moving from one end of the pie to the other, so that in the end a beautiful "pigtail" is obtained from the seam. Transfer the formed pie to the prepared baking sheet. Do the same with the remaining balls of dough and filling, laying them out on a baking sheet at some distance from each other (so that they do not stick together, increasing when baking). If all the blanks do not fit on the baking sheet (I have about 12 pieces on a baking sheet of the indicated area), leave the ones that do not fit on the table at room temperature wait your turn in the oven.

Cover the future pies with a paper napkin (both those on the baking sheet and those on the table, if any) and put the baking sheet with the blanks in a warm place, allowing them to come up there so that they increase in volume.

When the blanks fit, beat a small egg in a separate container with a hand whisk or fork, take a silicone brush and lightly grease the surface of the blanks with it. Place the baking sheet in the oven and bake the pies at 3.2 (180 ° C) until golden brown, about 25 minutes. or as recommended in the instructions for your yeast dough oven. You can turn the baking sheet over 15 minutes after the start of baking so that the pieces brown evenly.

Ready pies remove from oven, cover with paper towel on top and let cool completely at room temperature or until warm. Then serve.

Store the remnants of completely cooled blueberry pies in an open container under a paper napkin for no more than 12 hours at room temperature, and then it is better to put them in the refrigerator in a sealed plastic bag. There, at a temperature of 0-6 ° C, they can be stored for up to 2-3 days.

Video recipe for blueberry pie

The video below will teach you how to quickly make a frozen blueberry pie filling for your baked goods to astonish and delight in appearance.

  • If using frozen blueberries, do not thaw them, just rinse them. cold water and put in the filling.
  • Butter can be safely replaced with quality margarine.
  • I advise you to grind the chilled butter on a coarse grater, so the baked goods will turn out to be more fluffy.
  • If the dough is too sticky, add 15-30 g flour to it. If, on the contrary, the crumbs are collected in a hard lump, pour in a little sour cream.
  • Pass the starch through a fine sieve, so you get rid of unnecessary lumps, and the filling will turn out to be more tender.

Other blueberry pie recipes

Shortcrust pastry is best for making berry pies. You already have one recipe, but you simply have to pamper your loved ones with incredibly fragrant and incredibly appetizing, prepared in a different way.

I can not help but offer you a recipe that is very useful, especially for children and expectant mothers. The amazingly tender and delicate delicacy will surprise even the most fastidious sweet tooth with its taste. Kids will be delighted with this cake and will gladly absorb a product made from cottage cheese, which they usually refuse to eat.

The berry season is not only jam jars, fruit drinks and compotes. Berries are an excellent filling for pies, large pies and a variety of pies. But the filling is capricious, because it is very juicy. Pies with berries very often unravel, and the filling flows out. How to avoid and do it perfect pies with berries, says Elena Nikiforova, chef of the Shinok restaurant:

- For pies, you can use different berries: raw or poached. The latter are made with a small amount of sugar, under its action the berries give juice and are slightly boiled in their own sweet juice.

If you want to make pies with raw berries, then blueberries, raspberries, cloudberries, blackberries are best suited. But it is undesirable to put fresh cherries, it is better to let it go. I advise you to simmer the cherries with the addition of raspberries, then the aroma of the berries is further enhanced.

To prevent the filling from spreading in the dough, add a little bread crumbs from white bread or a little starch. And, of course, sugar is added to the berry filling (in the case of both poached and fresh berries).

Making a pie with a berry is undoubtedly more difficult than, for example, with cabbage or rice. It will not work to make the filling more than the dough, as many people like. Vice versa, good pies will turn out if we take 2 parts of the dough for 1 part of the berries. There is one more trick so that the filling does not flow out of the pies: add dry pectin to the berries. It is now sold in almost every store. Pectin gelates berry juice, and the filling will definitely not spread with it.

3. Pie dough. There are no specific options, since any dough is suitable for the berry: yeast, puff and shortbread. You can make the dough yourself or purchase a ready-made mass in the store. When laying out the dough in a mold, you need to pay attention to the thickness of the sides and bottom. The bottom of the cake should be at least 0.5 centimeters, otherwise the cake will get damp, and the sides should not be too thick.

4. Serving the cake. It is best to serve the cake when it has cooled down and stood in the refrigerator for a while. The filling will harden and the cake will cut well. Top the pie can be garnished with fresh blueberries or mint leaves. Serving a cake with a scoop of ice cream will look great.
