Bon Appetit!

Charlotte with jam turns out to be as tasty as a similar pie using fresh apples... Moreover, you will need much less time to prepare this dessert. After all, you do not have to buy fruits on the market, wash, peel and chop them.

Delicious recipe, simple and quick

The dessert in question is ideal for breakfast and have a nice tea with friends. But to make it, you need a special ingredient - jam. In fact, many culinary experts claim that absolutely any sweetness is suitable for creating such a delicacy - strawberry, strawberry, plum, apricot, etc. However, experienced chefs report that charlotte with jam turns out to be really tasty and tender, but only if, if apple filler was used to prepare it. Moreover, jam and jam are not suitable for this. Fruit jam should have large apple pieces.

So, to bake the dessert in question, we need:

  • sugar beet sand - 2/3 cup or 200 g;
  • apple jam (with pieces of fruit) - 2/3 cup;
  • chicken eggs - 4 medium pieces;
  • soda, previously extinguished with sour sour cream - ½ a small spoon;
  • wheat flour top grade- about 1.2 cups.

Making biscuit dough

Charlotte with jam is prepared using biscuit dough... To knead it, you should carefully separate the whites and yolks into different dishes. Sugar is added to the yolks and rubbed intensively with a large spoon. In this case, a lush and slightly whitish mass should form. Subsequently, add to it and mix well until smooth.

As for the egg whites, they are laid out in a deep bowl and whipped strongly with a blender. As soon as a persistent and lush mass is formed in the container, it is laid out with the yolks with jam and again everything is thoroughly mixed.

To Apple pie turned out to be tender and high, baking soda, previously quenched with sour cream, must be added to the biscuit dough.

At the very end, flour is poured into the base and mix well. At the exit, a viscous cream-colored dough is obtained. It should be baked immediately after kneading, otherwise the cake will turn out to be low and dull.

Dessert formation process

How is a charlotte with jam formed? To do this, use a deep form. It is slightly warmed up in the oven, after which it is greased. vegetable oil(1-2 dessert spoons). Next, the entire base is laid out in the prepared container.

Heat treatment in the oven

The cake in question should be baked in a strong preheated oven (up to about 200 degrees). A completed form is placed in it and the door is immediately closed, which is not opened for exactly 50 minutes. Over time, the readiness of the dessert is checked with a match. If the wooden object is dry, remove the cake. If the dough is stuck on it, then the charlotte is left in the oven for another 10 minutes.

The finished and fully baked dessert is a fluffy, tall and ruddy biscuit with a pleasant apple jam aroma.

How to present for tea?

Charlotte with jam, the photo of which is presented in this article, should be served only chilled. If you cut this dessert immediately after baking, then you run the risk of severe burns.

You can use this delicacy with tea, as well as coffee or hot chocolate. If you wish, you can sprinkle the charlotte with powder, chopped cinnamon or glaze before serving it. These additives will not only make your cake tasty, but also give it a festive look.

without baking soda and baking powder!

I know that many people know how to bake charlotte, but still, for many, it does not work out airy and lush! I myself always make it "by eye", but the recipe for classic charlotte measured for those who cannot understand why charlotte then it comes out with a pancake, then it is not baked, then it burns 🙂 Recipe but this charlottes with jam is no different from the classic one, we just replace some of the sugar with jam. I never add baking soda and baking powder to charlotte. Somehow it has become a tradition since labor lessons at school 🙂 Those who are about my age of 30+ still remember labor lessons 🙂

So, the recipe for charlotte with jam!

Recipe:

  1. Flour - 300 gr.
  2. Sugar - 200 gr. (for classic 270 g sugar without jam)
  3. Any jam - 3 full tablespoons * I have strawberries
  4. Eggs - 5 pcs.
  5. Apples - 3 large

Ingredients optional: * I have raisins and vanilla

  1. Citric acid - 1/2 tsp
  2. Raisins - a handful
  3. Vanilla to taste

Small digression:

* Jam can be added to any part relative to sugar up to a glass. For me a glass of jam is too much, but 3-4 tbsp. spoons are the best option.

**IN finished form because of the jam, the charlotte turns out to be a little with a different crumb. Not as airy as in the classics, but still very soft. It just crumbles and crumbles less 🙂 Well, the color “walks” depending on the jam 🙂

*** A glass of sugar DOESN'T equal the weight of a glass of flour, so I write in grams.

****If you do not add sugar, you will have a very clear thick crust on top(means a lot of eggs for this amount of sugar), if pour sugar, then the top will break delicious crust , which after a day / two, if you did not have time to eat, becomes soft) In all cases, charlotte is edible, of course 🙂

***** I have standard eggs, if you have small or large homemade eggs, the amount of flour and sugar may differ from the recipe. (well, this is in very extreme cases, if you have homemade eggs or very small ones)

Preparation:

  1. Grease the form with butter, pour the raisins with boiling water, cut the apples into squares / slices / triangles
  2. Beat eggs + sugar (+ vanilla + citric acid) so so that it rises 3 times! At this stage, we follow the kneading, if the proportions work out, then the dough rises instantly, 2-3 minutes are enough for beating, the dough becomes like foam!
  3. Add flour, mix our foam with flour
  4. Add jam
  5. Beat well again
  6. Pour in apples and raisins, mix * In general, I always put apples on the bottom of the mold and pour the dough on top, but today I baked it for the first time in a mold with a hole and decided to mix everything before pouring it into the mold
  7. Oven for 170-180 gr. and bake until a beautiful crust. (30 minutes +) Pierce with a toothpick. If it's dry, the charlotte is ready!

Cool and eat! * Of course, my family guarded the charlotte already in the process of photographing, so they ate it warm 🙂
