Today we are cooking super quick pies, which will take exactly 15 minutes, and they will be ready.

Today I cooked pies with frozen apricots, but depending on the season, you can take and fresh fruits, not only apricots, such as cherries, currants, raspberries. Or you can make savory pies - with potatoes, cabbage ... If you use a fruit, sweet filling, then you can sprinkle the pies with powdered sugar before serving.

Ingredients

  • 500 ml of kefir or yogurt
  • 1 chicken egg
  • 2 tbsp granulated sugar
  • 1 incomplete tsp salt
  • 1 tsp baking soda
  • how much flour will the dough take (for a start, 5 glasses)

Recipe for fried pies without yeast in kefir in a pan

  1. So, the countdown has begun. In the first 5 minutes, we will make a yeast-free pie dough. It cooks extremely quickly and can be done in less than 5 minutes (just mix all the ingredients, adding flour). Let's cook it. To do this, pour kefir (or yogurt) into a container, drive in an egg, add salt and sugar.
  2. Lastly, add the baking soda and stir all the ingredients to make a soft dough.
  3. If necessary, add flour as much as the dough will take.
  4. You need to work with yeast-free dough immediately after kneading. So we will do it. Now the next 5 minutes - during this time we have to mold the pies. I have an express version of sculpting pies. Divide the dough into 2 parts and roll each of them into a flat cake up to 1 cm thick. It is better not to roll out thinner than 1 cm, and it is not necessary to roll out thicker either. 1 cm is ideal. On the first cake, evenly spread the filling at the same distance from each other.
  5. We cover our blank with a second cake and cut out small circles-pies with a filling inside with a glass. The edges of these patties will stick together during cutting, so the entire prep process takes only a few minutes.
  6. And now the final five minutes. Yeast-free pies we send to fry in a pan, adding enough vegetable oil for frying. Do not spare the oil and warm it up well. We lower the blanks into it. As soon as one barrel turns brown, turn it over to the second. Blushed from the second? You can remove the first batch from the fire and send the second to fry. In order to speed up the process, you can fry in two pans, and then you can do it not in a quarter of an hour, but even faster.

  2. Beat the mixture and gradually add flour into it. The consistency of the dough is like a pancake.

Pie dough without eggs and kefir

  • 0.5 kg of flour;
  • 1 pack (200 g) butter;
  • 2 tbsp. l. vodka;
  • 1 tbsp. l. Sahara;

Simple pie dough

  • 200 g of mayonnaise and sour cream (yogurt);
  • 3 eggs;
  • a glass of flour;
  • 15 g baking powder.

  • 300 g of cottage cheese;
  • 3 eggs;
  • 2 tbsp. l. with a slide of sugar (for sweet pastries);
  • 2 tbsp. l. sour cream;
  • 500-600 g flour;
  • 1 tsp quenched soda;
  • a pinch of salt.
  1. The curd is wiped through a sieve. If not greasy, you can add 30-50 g of butter.
  2. Sour cream with sugar and eggs is added.
  3. The flour is sieved, mixed with salt and quenched soda.
  4. All blanks are combined. The dough is kneaded.
  5. From this base, you can make small cakes and fry on vegetable oil or make one dish and bake in the oven.

Choux Moldovan dough

  • 1 glass of water;
  • 600 g flour;
  • 100 g of vegetable oil;
  • 1 teaspoon of salt and sugar.

  2. The liquid heats up, but is not brought to a boil. Boiling water can be used to speed up the process.
  3. The sifted flour is mixed with salt and sugar.
  4. The dough is kneaded first with a fork or spoon, and when it cools down - with your hands. The result should not be cool, but soft.
  5. The workpiece is rolled thinly, a part of the filling is placed in the middle with a strip, covered with one half, on which the rest of the filling is placed on top.
  6. It is baked in the oven until golden brown.

All recipes are universal: the dough goes well with both vegetable, meat, mushroom, fish and sweet filling. In the latter case, you need to increase the amount of sugar or add this component.

Several options for pie filling

  • Potatoes and cabbage. The cabbage is fried until dark brown and mixed with the puree.

  • Wheat flour - about 4.5 cups (this is about 600 grams)
  • Margarine (better "Creamy", you can generally replace with butter) - 300 grams
  • Cold boiled water - half a glass, about 4/5 cup (about 180 grams / ml)
  • Chicken egg - 1 piece
  • Baking powder - 10 grams (about 1 teaspoon), can be replaced with 0.5 teaspoon of baking soda, "quenched" in 1 tablespoon of vinegar (comment "for dummies": put the right amount soda in a tablespoon and pour vinegar - foam forms, then shake the contents of the spoon into a bowl with the future dough).

Preparation:

Cut margarine (or butter) with a knife into small pieces in a large bowl (in the one in which we will make the dough). We put the bowl on the stove on the minimum heating level and, always stirring constantly and not allowing it to boil, melt the margarine until it is liquid, and then remove the bowl from the stove.

Add to a bowl of melted margarine cold water and an egg (preliminarily "loosening", mixing the egg white with the yolk in a cup), then pour in the baking powder OR add the soda "quenched" with vinegar and stir (a certain amount of foam is formed). Mix everything until smooth.

After vigorous stirring, the foam will quickly disappear.

Gradually add flour to the bowl (we admit, we usually don't sift it!).

First stir the dough with a spoon, while it is still relatively liquid and "sticky".

Then knead the dough with your hands (do not forget to lightly dust your hands with flour before starting this process so that the dough does not stick to your hands so much). We knead until the dough begins to peel off from the hands and from the sides of the bowl (do not be alarmed, this whole process takes literally a few minutes). We form two lumps from the dough: one larger for the base of the pie, the second smaller for the top layer - the “lid” of the pie, sprinkle them with flour a little so that they do not stick together ( watch our recipe video!), put in the same bowl.

Cover the bowl with the dough with a lid or plate and put it in the refrigerator for 40-45 minutes. After this time, our quick yeast-free is ready to roll. By the way, if more time passes and the dough is supercooled, it will be difficult to roll it out. If this does happen, let the dough lie on the table at room temperature for 5-7 minutes, and then roll it out.
