    Recipe Information

    Cooking method: assembly.

    Total cooking time: 30 minutes.

    Servings: 6-7 .

    Ingredients:

    • wafer cakes 30x15 cm - 6 pcs.

    for cream:

    • condensed milk - 200 g
    • butter - 200 g

    for glaze:

    • cocoa powder - 3 tbsp. l.
    • granulated sugar - 3 tbsp. l.
    • milk - 3 tbsp. l.
    • butter - 30 g

    for decoration:

    • coconut flakes - 3 tbsp. l.

    Cooking method

    1. In order to make the cream easier to mix, the butter must be taken out of the refrigerator in advance and left at room temperature... In a softened state, it should be cut into thin slices and added to condensed milk.
    2. Using a mixer, beat the cream slightly. It is necessary to achieve complete homogeneity of the mass so that no lumps of oil remain in it.

    3. Waffle cakes should be generously greased one by one with cream. Evenly distributing the mass over the surface, carefully coat not only the middle, but also the edges of the cakes. You do not need to apply cream on the last cake. Place the soaking cake in the fridge while preparing the frosting.

    4. The cocoa must be sieved. This will help prevent lumps from forming in the glaze.

    5. Then add granulated sugar.

    6. After that, mix the cocoa with sugar thoroughly and pour in warm milk.

    7. The container with glaze should be put on low heat. While stirring constantly, it is necessary to bring the mass to a boil. Then add a small piece of butter and remove the container from the heat. We continue to stir the glaze until the oil is completely dissolved. After that, she should be allowed to cool slightly.

    8. Spread half of the frosting evenly over the surface of the waffle cake.

    9. Put the cake in the refrigerator for another 10 minutes to set the icing. Then brush the waffles with the remaining chocolate mass. Smooth the surface.

    10. Decorate the waffle cake with coconut flakes, carefully sprinkling it around the perimeter of the top crust.
    11. After completing the assembly and decorating the dessert, it must be allowed to brew in the refrigerator for another 1 hour. The unbaked waffle cake can then be sliced and served.

    Note to the hostess:

    • Instead of ordinary condensed milk, you can take boiled milk - the cream will turn out to be even more interesting.
    • If there is a banana in the refrigerator, then cut it into thin circles and put it on one of the cakes somewhere in the middle of the assembly - the taste of the finished cake will only benefit from this.

Homemade waffles differ from purchased ones in friability, they more "gratefully" accept the cream, being completely saturated with it. And of course, when baking homemade wafer cakes, we have no doubts about their quality.

I propose to bake such a handsome man. It contains 30 wafer cakes and the same number of layers of cream. Seems incredibly difficult? I will prove to you that it is not as "scary" as it seems. It is enough to have a couple of hours of free time in stock - this is how much the active time of cake preparation will take (baking cakes and making cream). By the way, about the cream .. I also propose to cook condensed milk ourselves, because the cake is "from scratch". Let's get started?

Let's prepare the ingredients. The very first and longest thing to do before making a cake from homemade wafer cakes and condensed milk is to boil condensed milk.

Buy the milk that is made in accordance with GOST, milk with the TU marking is made with the addition of vegetable oil... I usually boil several cans at once and keep them in the refrigerator until the right moment. My experience with purchased boiled condensed milk was very unsuccessful, so I never bought ready-made "boiled milk" again.

So, we put cans of condensed milk (at room temperature) into a deep saucepan, pour water of the same temperature so that it is several centimeters higher than the cans. We put the pan on the middle burner, turn on the gas and set it to the minimum setting, cover the pan with a lid (not tightly). Let's be patient: so that the cans do not explode from a strong temperature difference, you need to gradually increase the temperature inside the cans. Therefore, let the water slowly heat up over low heat, it will take about an hour, and as soon as the water starts to boil, we time it for 3 hours - this is the time for boiling condensed milk. After three hours, turn off the heat and leave the jars in a saucepan with water, with the lid closed, until they cool completely.

During the cooking process, we make sure that the water does not boil away, does not fall below the level of the cans. If necessary, add hot water.

This is boiled condensed milk the day after boiling, it is tender and soft.

To prepare the cream, we need 2 cans of boiled condensed milk and 200 g of butter, softened at room temperature. If the condensed milk is after the refrigerator, then it must also be taken out in advance so that it becomes the same temperature as the butter, otherwise the cream will not turn out homogeneous.

Please note that in the photo there are two cans of condensed milk of different colors. The darker one stood in the refrigerator for almost a month, the sugar crystallization process begins in it, small sugar grains appeared, and the light one - a day after cooking, it is homogeneous and more tender.

To prepare the cream, beat the butter and condensed milk with a mixer until a fluffy homogeneous cream is obtained. Set aside a few tablespoons of the cream and put it in a cool place - we will need this cream later to finish the finished cake.

For wafer cakes, melt the butter and let it cool a little, mix the sugar with vanilla, sift the flour with soda and add a pinch of salt.

Break eggs into a suitable dish, add sugar and beat everything with a whisk until the sugar dissolves. Lush mass is not needed here, you can do without a mixer.

Add melted butter and milk, mix everything well again.

To bake the cakes, we need a waffle iron for thin waffles.

The amount of dough per cake depends on the diameter of the waffle iron. I took 1 dessert spoon of dough for each cake (it is slightly less than a tablespoon).

If the waffle iron - with non-stick coating, it does not need to be oiled. There are 5 temperature settings in my waffle iron, I bake waffles at the "2" mark. It takes 1-2 minutes to bake each cake.

A continuous, almost conveyor-based process begins. We heat the waffle iron, pour a spoonful of dough, close the machine with a lid and bake the cake until tender.

Remove the finished waffle with a spatula on a board and immediately grease it with cream. Cream consumption for one cake - 1 tsp. with a slide.

The waffles turn out to be very crispy and immediately crumble when they cool, so you need to do everything as quickly as possible: while one cake is baking, grease the finished hot cake with cream, do not forget to coat the edges. Put the next hot cake on a crust greased with cream, lightly press it with your hand over the entire surface so that the cream is evenly distributed between the wafer layers.

Thus, we form a cake from 30 layers and the same layers of cream. From this amount of dough, I got 45 waffles. We will need 4-5 pieces to decorate the sides of the cake. And the rest of the waffles can be rolled up while they are still hot and eaten with a glass of cool milk.

Here's a cake I got. We leave it on the table at room temperature for 1 hour to soak. Then put it in the refrigerator for 2-3 hours to solidify. To make the cake smoother, I place a cutting board on top of it as a weight. But this is not a required step.

For evening tea drinking on a weekday, you can not decorate the cake, but decorate for guests as desired.

I smeared the sides and top of the cake with a thin layer of cream. The set aside 5 waffles are cool enough and can be easily turned into large crumbs using a rolling pin.

The cake is frozen enough, and you can pick it up without fear of damage. We hold the cake in the palm of one hand, and with the other hand we take waffle crumbs and lightly press them against the greased sides of the cake. Spread the remaining cream over the top of the cake, decorate with waffle crumbs, grated chocolate or sugar peas to taste and put the cake back in the refrigerator for 1-2 hours until it solidifies.

Cut the cake into portions and serve.

The cake is cut from homemade wafer cakes and condensed milk, not like a biscuit - the waffle cake is much denser, do not be confused by this fact. After all, there are 30 wafer cakes! But at the same time, the cake is well soaked. The waffles have lost their crunch, taking in the cream.

    Bon Appetit!
