  2. Sift most of the flour into a bowl or on a table, forming it in a slide. We make a notch in the center and pour the kefir mixture into it. Knead the dough, gradually adding flour. It should be moderately soft and keep its shape, and not spread.

  3. Fry finely chopped onions. Boil potatoes or take yesterday's mashed potatoes. Mix potatoes with onions and add spices and salt.

  4. Divide the dough into small, equal parts and roll them into koloboks.
  5. From each kolobok we make a cake with our hands or with a rolling pin. Put the filling in the center of the cake and form the cake, pinching the edges tightly.
  6. If you like me like thin pies, then lightly go over each with a rolling pin. Just do it carefully so as not to damage the pie.

  7. Fry the pies in a skillet with butter on both sides until a beautiful color.

  • Warm milk - 250 ml
  • Water - 250 ml
  • Chicken eggs - 2 pcs.
  • Dry yeast - 20 g (two sachets)
  • Salt - 1 tsp
  • Flour - 1 kg

For filling:

  • Potatoes - 500 g
  • Bulb onions - 2 pcs. medium size

How to cook:

We mix milk (250 ml) and water (250 ml) - both liquids should be at a pleasant room temperature.

I resort to this trick: I mix milk from the refrigerator with hot water from a kettle, at the exit we get the liquid we need at the temperature.

Pour two bags of dry yeast into a bowl, pour 1/3 cup of warm water, stir.

With this soaking, we awaken the yeast to action. Ideally, if you put the dough in a draft-free place for 10-15 minutes.

If the dough has risen with a foamy cap, everything goes according to plan, the yeast is active and very active. I like to wait until the dough for the yeast dough is fully ripe - the foam cap will settle and we will see small bubbles on the surface.

Pour the dough into a large bowl, in which it will be convenient to knead the yeast dough.

We drive two eggs into a bowl. Milk diluted with water is also poured into the dough. Add salt.

We put the yeast dough in a warm place without drafts (you can, for example, put it in the turned off oven). After an hour, the dough will rise noticeably. Perfect option when it rises so strongly that it sinks under its weight.

To prepare the filling, we need 0.5 kg. potatoes, which we pre-peel, wash, boil until tender (usually 25-30 minutes). Drain the water, puree the potatoes.

Onions (2 pieces are enough for me) finely chop, fry in butter until golden brown.

So that the oil does not smoke during frying onions, you can add a little vegetable oil to a piece of butter.

Add the fried onions to the potatoes, mix. Add salt, pepper, any spices to taste.


If you have some extra mashed potatoes left over, you can make a great potato.

Put the matched dough on the table, knead it.

Separate small pieces from a large amount of dough for portioned pies. Leave it for 10 minutes, so that the dough "fits" a little, increases in volume.

Press down each piece of dough with your fingers, apply the filling.

We close the pies with potatoes so that there are no holes left.

We heat the oil so that the dropped piece of dough immediately hisses and turns brown. Dip the pies into well-heated oil so that there is no free space in the pan (otherwise, the unused oil will burn and smoke).

As soon as the pies are browned, turn them over with a slotted spoon to the other side. The patties with potatoes should be evenly browned on all sides.

By this time, it is necessary to prepare the filling. You can use ready-made mashed potatoes or, especially for pies, boil 3-4 potatoes and mash. Fry finely chopped in a small amount of vegetable oil onion until soft and add to the puree.


To taste, the filling should be seasoned with salt and pepper.


Then everything should be mixed. The matched yeast dough must be divided into 20 small portions. Each should be about the size of a small chicken egg. To avoid sticking, we grease our hands and work surface with vegetable oil.


Each piece must be flattened into a flat cake with a diameter of 10-12 cm. It should be slightly thicker in the center than at the edges.

Ingredients for 10-12 pieces:

  • water - 300 ml;
  • sugar - 1/2 tsp;
  • dry fast acting yeast- 1 tablespoon;
  • flour - 320g;
  • salt - a pinch;
  • potatoes - 3-4 pcs;
  • onion - 1pc;
  • milk - 0.5 cups;
  • vegetable oil - for frying;
  • ground black pepper - 1 tsp;
  • salt - 0.5 tsp.

How to make fried potato pies:

  1. Boil the potatoes in advance to cool down. To do this, clean it, wash it, cut it into arbitrary pieces, fill it with water, salt (half a teaspoon for 1.5-2 liters of water) and cook until soft. We drain the water from the finished one. If you want to cook at all lean pies- do not drain all the water, leave about half a glass. In other cases, drain everything and pour half a glass of warm milk.
  2. Knead as on a puree and leave aside for now.
  3. Chop the onion finely, in pies it is good when there is a lot of it.
  4. Heat vegetable oil (2 tablespoons) in a frying pan, put onion and fry until golden brown.

  5. Mix with potatoes. We also add black ground pepper there. Such a filling for pies loves him, so do not hesitate, put at least 1 tsp.
  6. Mix everything well and set aside to cool.
  7. Let's take a dough. Pour into a large bowl warm water... We put sugar, yeast and 1 tbsp. flour. We knead the liquid dough. If there are lumps of flour left, it's okay, then they will disperse.

  8. We put in a warm place for about 10 minutes. After this time, the yeast will start working, the dough will begin to breathe, bubble and increase in volume.
  9. Add the remaining flour and a pinch of salt. We mix.

  10. Pour 1 tablespoon into a clean bowl. vegetable oil. We put the dough there, wrinkle it with our hands a little so that it becomes covered with oil, cover it with cling film and put it in heat to rise.


  11. After an hour, the dough will rise well. We crush him. Then we wait another 10-15 minutes to rise again.
  12. Now you can start frying the pies. The potatoes are already cold enough to work with.
  13. Cooking a frying pan. Pour enough oil into it so that it reaches the middle of the pies. We set to heat up.
  14. The dough according to this recipe turns out to be a little sticky, but after frying the pies will become soft, so you don't need to add more flour, even for rolling. Instead, pour a couple of tablespoons of oil directly onto the countertop.
  15. Dip our palms in it and smear a little on the tabletop. Tear off a piece of dough, put it on an oiled table and knead it into a cake with a diameter of about 10-12 centimeters.

I mixed it with kefir, and whey is also suitable. When soda comes into contact with a fermented milk product, a sufficient amount of carbon dioxide will be released to make the dough soft and airy. However, let's do everything step by step.

Ingredients for 5-7 pies:

  • kefir - 1 glass;
  • flour - 2-2.5 cups;
  • soda - 0.5 tsp;
  • salt - 0.5 tsp;
  • sugar - 1 tsp;
  • vegetable oil - 0.5 tbsp;
  • mashed potatoes - 50g;
  • fried mushrooms - 150g.

How to cook fried pies with potatoes on kefir:

  1. Boil the potatoes in advance and make mashed potatoes from them. Don't forget that it should be thicker than usual. Mushrooms of your choice - forest mushrooms, champignons, fry in vegetable oil with onions. I had blue feet.
  2. We mix potatoes and mushrooms. We leave to cool and become warm, then when sculpting pies we will not burn our hands.
  3. Pour kefir from the packaging into a bowl.
  4. Add salt, sugar, soda and vegetable oil. We mix. We are waiting for a few minutes so that the soda is well extinguished and the reaction begins.

  5. Then add flour. First, add 1.5-2 cups.

Another recipe popular with many. You can take any meat for minced meat that is at hand: beef, pork, poultry. You can even boil and grind the liver. I had minced chicken... And this time I made the dough with yeast, in milk. It turned out to be very soft, just downy pies.

Ingredients 5-7 pcs .:

  • milk - 1 glass;
  • wheat flour - 400g;
  • salt - 0.5 tsp;
  • sugar - 0.5 tbsp;
  • sunflower oil - 2 tablespoons;
