Preparation

To cook a quick yeast-free dough for pies, first sift all the flour into a bowl.

Add salt, sugar and baking powder to the flour. Stir the mixture with a spatula or spoon. You can replace the baking powder with regular baking soda if desired, but be prepared for the finished dough to take on a slightly grayish tint.

Crack one egg and start hand kneading the dough right in the bowl.

Now leave the dough on the table, covered with cling film, for a quarter of an hour. During this time, the stickiness of the flour will manifest itself - the lump will become more elastic and viscous. This quality will help to mold even and identical blanks for pies.
