Without wasting time, I take a stewpan, put eggs in it, pour water and put it on the fire to cook. Hard-boiled eggs, i.e. 7 - 8 minutes after boiling water. When the eggs are boiled, I drain the hot water from the stewpan, pour them cold water and leave until completely cooled.

After thawing the mackerel, I start cutting it. I cut off the head, tail and fins, which, although small, are best cut off. Then I cut the abdomen, take out the insides and rinse the fish well under running water. At the same time, I must remove the black film from the abdomen so that the fish does not subsequently taste bitter. I cut the chopped mackerel carcass into two parts so that it fits in a saucepan. During this time, the water in the pan has boiled, I put pieces of chopped fish into it, add salt and two bay leaves. You do not need to pour a lot of water, just enough water to cover the fish. Boil mackerel after boiling water for 10 minutes, and remove the pan from heat.

I put the fish to cool in a cold place, without removing it from the broth, so that it is not windy and dry.
